A very quick and easy curry to serve up with rice and a salad.

1 tablespoon olive oil
1 onion, chopped
2 cloves crushed garlic
2 ½ tablespoons curry powder
2 tablespoons tomato paste
1 (14.5 ounce) can diced tomatoes
1 cube vegetable bouillon
1 (10 ounce) package frozen mixed vegetables
1 ½ cups water
salt and pepper to taste
2 tablespoons chopped fresh cilantro

Steps:

  • In a large saucepan over medium-high, heat oil and saute onion, and garlic until golden. Stir in curry powder and tomato paste, cook 2 to 3 minutes.
  • Stir in tomatoes, vegetable bouillon cube, mixed vegetables, water, salt and pepper to taste. Cook approximately 30 minutes until vegetables are well done (not crunchy). Sprinkle with fresh cilantro prior to serving.

This 30 MINUTE Thai Red Curry Chicken with Vegetables is wonderfully coconut creamy, bursting with layers of flavor, incredibly easy and all made in one pot! Definitely a new favorite at our house and better than any restaurant!

Number Of Ingredients 25

1 1/2 tablespoons olive oil or coconut oil
1 pound chicken breasts (sliced into 1/4" slices then 2" pieces**)
1/2 large onion, chopped
2 tablespoons red curry paste
1 red bell pepper, thinly sliced (then chopped into 2" pieces)
1 orange bell pepper thinly sliced ( then chopped into 2" pieces)
1 small zucchini, sliced
2 teaspoons freshly grated ginger
4 garlic cloves, minced
1 13.5 oz. can quality coconut milk ((I like Chaokoh))
1 tablespoon cornstarch
1 tablespoon Asian/Thai Sweet Chili Sauce ((like Mae Ploy))
2 tablespoons less sodium soy sauce
2 tablespoon fish sauce
2 tablespoons lime juice
1 tablespoon brown sugar
1 bay leaf
1 teaspoon dried basil
1/4 teaspoon salt (more or less to taste)
1/4 teaspoon pepper
sriracha to taste/Asian chili sauce ((optional))
lime zest to taste
fresh basil
fresh cilantro
fresh lime juice

Steps:

  • Heat oil over medium high heat in large nonstick skillet. Add chicken, onion and red curry paste and cook just until chicken is no longer pink. Add bell peppers, zucchini, ginger and garlic and saute 1 minute.
  • Add half of the coconut milk. Mix remaining coconut milk with 1 tablespoon cornstarch and add to skillet along with all remaining ingredients (expect Garnishes).
  • Bring to a boil, then reduce to a simmer for 5 minutes or until the sauce thickens and the vegetables reach desired crisp-tenderness. If you would like a thinner sauce, thin with water (I don't do this). Discard bay leaf.
  • Garnish with additional optional fresh basil, cilantro, lime zest, lime juice and Sriracha to taste. Serve with rice.

1/2 tablespoon minced garlic
1/2 medium sweet onion, diced
1 medium red bell pepper, sliced (about 1 cup)
1 medium orange bell pepper, sliced (about 1 cup)
10 ounce package snow peas (or sugar snap peas)
1 ½ cups thinly sliced lacinato kale
1 (13.5 ounce) can coconut milk (full-fat is best but lite also works)
1 cup unsweetened almond or cashew milk
3 tablespoons red curry paste
1/2 teaspoon turmeric
1/4 teaspoon fine sea salt
1/8 teaspoon cayenne, or to taste
brown rice, quinoa or your favorite grain or riced vegetable
cilantro for garnish

Steps:

  • Cook down vegetables: In a large pot on medium heat, add in ghee or coconut oil, minced garlic and diced onion. Stir frequently for about 2 minutes. Add bell peppers, peas, and sliced kale; stir until mixed.
  • Add liquid, seasonings and simmer: Gently pour in canned coconut milk and cashew milk. Then add curry paste, turmeric, salt, and cayenne. Gently stir until evenly combined. Allow mixture to come to a simmer on medium-high heat, then simmer on low for 10-15 minutes, until vegetables have softened.
  • Make grains: While pot is simmering make rice (or quinoa), according to package instructions.
  • Serve: Transfer rice into serving bowls. Use large serving spoon to serve red curry into bowls, garnish with cilantro if desired. Enjoy!

1/4 cup olive oil*
1 yellow onion, (coarsely chopped)
4 garlic cloves, (thinly sliced)
1 (2-inch) piece fresh ginger, (peeled and thinly sliced)
2 jalapenos, (thinly sliced, with seeds (optional))
2 Tbsp red curry paste
2 Tbsp curry powder
1 Tbsp ground cumin
Salt
1 (14 oz) can can garbanzo beans, (drained and rinsed)
1 head cauliflower, (cut into bite size pieces (mine was nearly 3 lbs))
1 red bell pepper, (seeded and thinly sliced)
3 cups vegetable broth
1 cup tomato sauce
1 (14 oz) can unsweetened coconut milk
Thinly sliced green onions and chopped fresh cilantro, (for garnish)

Steps:

  • Heat 2 Tbsp oil in a large enameled cast iron pot over medium heat. Add onions and saute until nearly softened, about 5 minutes.
  • Add in garlic, ginger and jalapeno and saute until softened, about 5 minutes. Add in the curry paste, curry powder, and cumin. Season with salt to taste and cook 2 minutes, stirring frequently.
  • Stir in 1/4 cup water. Transfer curry mixture to a food processor and puree until smooth, about 2 minutes.
  • Heat remaining 2 Tbsp oil in same pot over medium heat. Add curry mixture and cook 1 minute.
  • Add the garbanzo beans, cauliflower, and bell pepper and toss to coat with curry mixture.
  • Stir in vegetable broth, tomato sauce, and coconut milk. Season with salt to taste and bring to a light boil.
  • Reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally (original recipe lists simmer covered for 30 and uncovered for 15, but I prefer a slightly thicker consistency).
  • Serve warm over basmati rice, topped with green onions and plenty of cilantro.

1tbsp vegetable oil
1tbsp ginger & garlic paste
red curry paste
800ml coconut milk
8 skinless, boneless chicken thighs, cut into large chunks
4 lime leaves (ideally fresh)
2tbsp fish sauce
1tsp brown sugar
Thai basil
basil or coriander, plus extra to serve
1 red chilli, sliced diagonally
thumb-sized piece ginger, cut into matchsticks
cooked jasmine rice, to serve

Steps:

  • Heat 1 tbsp vegetable oil in a large saucepan over a medium heat and fry 1 tbsp ginger and 1 tbsp garlic paste for 2 mins. Add 5-6 tbsp red curry paste, sizzle for a few secs, then pour in 800ml coconut milk.
  • Bring to the boil, reduce to a simmer, stir a little and wait for the oil to rise to the surface.
  • Add 8 skinless, boneless chicken thighs, cut into chunks, and lime leaves, and simmer for 12 mins or until the chicken is cooked through.
  • Add 1 tbsp of the fish sauce and a pinch of brown sugar, then taste - if you like it a little saltier, add more fish sauce; if you like it sweeter, add a little more sugar.
  • Bring to the boil, take off the heat and add ½ small pack Thai basil.
  • Spoon the curry into four bowls and top with 1 red chilli, a thumb-sized piece of ginger and a few extra basil leaves. Serve with jasmine rice.

  • First get that rice cooking according to package instructions. I use my rice cooker. Basmati is usually my rice of choice! If using basmati make sure to rinse it extremely well before using, and your rice will have a much better texture!
  • Mix the sauce ingredients (first 9 ingredients) in a medium bowl -(don't add the oil, onion, garlic, ginger and lime juice)- and set aside. (crumble the seaweed sheets with your fingers into the bowl and it's ok if the coconut milk is lumpy it'll smooth out in the hot pan)
