I got this recipe from a friend in Germany. It's a delicious way to incorporate red currants into baking.

- To Make Dough: In a medium bowl, sift together flour and baking powder. Mix in butter, sugar, egg yolks and lemon zest until mixture forms dough. Let rest in cool place for 30 minutes.
- Preheat oven to 325 degrees F (165 degrees C). Roll out dough and put into a springform pan.
- Bake in oven for 25 minutes, or until golden yellow.
- To Make Filling: In a medium bowl, beat egg whites until stiff. Gradually stir in sugar and cornstarch; beat for 5 minutes. Fold currants into mixture and pour into pie crust.
- Bake in oven for 10 minutes, or until top is lightly browned.

SPICY CURRANT SAUCE FOR HAM
This was handed down through the women in my family. We all love it, but I'm always amazed how many guests beg for the recipe saying that they have never tasted anything like it. The cloves and Worcestershire sauce give it a lovely kick. It keeps really well, so can be made days in advance. It is also a great (and easy) holiday gift.

- Stir brown sugar, dried currants, water, vinegar, Worcestershire sauce, butter, salt, black pepper, cloves, and mace together in a saucepan over medium heat, stirring occasionally until butter melts, about 10 minutes. Bring to a boil.
- Stir currant jelly into sauce and return to a gentle boil; reduce heat to low and simmer until currents are slightly plump, 5 to 10 minutes.

RED CURRANT HAM GLAZE
My replication of the red currant glaze that use to come with Costco's Kirkland Master Carve Ham. This glaze is enough for half ham with a little leftover to use at the table.

- In a small saucepan, add all the ingredients. Stir to combine.
- Put the pan over medium heat. Cook until warm. Set aside.
- When the ham is about 20 minutes from being done or at 120 degrees. Remove the ham from the oven and apply the glaze with a pastry brush.
- Return the ham to the oven and finish cooking. Internal temperature needs to be 140 degrees.
- Save any leftover glaze to be used at the table.
RED CURRANT SAUCE
Recipe I came up with to serve with a chicken dish but I think it would be also suited to other poulty and game meats. I didn't use a great amount of sugar so the sauce retains a bit of tartness from the currants which was what I was after rather than anything too sweet. Note that it's quite a thin sauce rather than a thick one, aimed at things like rice and battered items that will soak it up, but you could always thicken it with cornflour.

CURRANT MUSTARD-GLAZED HAM
Steps:
- If the ham comes with the skin still attached, remove most of it with a sharp knife, leaving a collar of skin around the shank bone and a layer of fat. Trim the fat, leaving a layer about 1/3 inch thick, score the layer remaining into diamonds, and stud the center of each diamond with a clove. Bake the ham on a rack in a roasting pan in a preheated 350°F. oven for 55 minutes.
- In a small saucepan heat the jelly over moderate heat, stirring, until it is melted and smooth, remove the pan from the heat, and stir in the mustard. Spoon the glaze over the ham, spreading it evenly, and bake the ham for 30 to 35 minutes more, or until the glaze is brown and bubbly. Transfer the ham to a platter and let it stand for 15 minutes before carving. If planning to make the ham, spinach, and pasta gratin (page 117), reserve 1 pound of the carved ham, covered and chilled.

- Heat oven to 300 degrees.
- Put ham fat side up on a bed of aluminum foil in a pan just big enough to hold it. Place in oven for 2 1/2 hours.
- Remove from oven, and peel off the outer layer of fat. Score top with a sharp knife at 3/4-inch intervals in a checkerboard pattern, about half an inch deep. Return ham to oven.
- In a saucepan over medium heat, melt the jelly with the red wine and reduce until mixture is slightly syrupy, about 6 minutes. Baste ham lightly with the glaze every 10 minutes or so for 1 1/2 hours.
- Let cool for 30 minutes; then decorate with a thin line of parsley along every third scored line.

- The first thing you need to do is to choose your favorite red currants. You can choose strawberry, raspberry, blueberry, strawberry, etc. , as long as they don't weigh more than half a kilo (1.1 lb) together. This is the ideal quantity so you don't get excess flavour or on the contrary, lack of flavour.
- Now you know which red currants you want, it's time to start making the sauce. Cut the bigger currants, such as strawberries, and heat them in a pan on low heat. Stir with a wooden spoon so they don't stick.
- When the currants have heated up, start adding 1 spoonful of balsamic vinegar for every 2 spoonfuls of water until the currants are covered. If you don't like balsamic vinegar, you can use orange juice, which also gives a delicious taste. Leave it on low heat for 5 minutes approximately, without stirring.
- Now, bring the heat up a touch and add half a glass of red wine to the currant sauce. To scent the sauce, add cinnamon, badian and a laurel leaf. Although these ingredients are not strictly necessary, we recommend using them as they give the best flavour.
