  • Saute onions in butter.
  • add cut up cabbage and vinegar.
  • cover and simmer for about 20 to 25 minutes.
  • add just enough sugar to make it sweet and sour tasting.
  • add apples and reheat.

⅓ cup apple cider vinegar

  • Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

3 tablespoons cider vinegar
¼ cup brown sugar
½ teaspoon salt, or to taste
¼ cup onion, minced
½ cup grated peeled apple
2 pounds red cabbage, thinly sliced
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter. Add apple cider vinegar, brown sugar, and salt. Stir to combine. Mix in onion, grated apple, and red cabbage until well combined. Close and lock the lid. Select Steam function. Set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Mix in ground cloves and allspice.

2 1/2 ounces bacon (either American or German Bauchspeck, chopped)
1/2 cup onion (diced)
4 cups red cabbage (shredded, about 1 pound)
1/2 cup dry red wine
1/2 cup apple juice
1 tablespoon sugar (or agave nectar or honey)
1 whole bay leaf
4 whole cloves
Dash ground black pepper
1 apple (peeled, cored and quartered)

Steps:

  • Brown 2 1/2 ounces bacon in a Dutch oven . Add 1/2 cup diced onion and sauté for 5 minutes. Add 4 cups shredded red cabbage and cook for 2 to 3 minutes.
  • Pour in 1/2 cup red wine and 1/2 cup apple juice to deglaze, add the 1 tablespoon sugar or agave nectar or honey, 1 whole bay leaf, 4 whole cloves, ground black pepper to taste and 1 peeled, cored and quartered apple.
  • Simmer on stove top for 2 to 3 hours, stirring occasionally. Keep the liquids one finger width (1/2 inch) deep, adding apple juice or water. Adjust seasonings. Serve hot.

1 onion (or a quarter of a huge onion, you need about 125g)
1 tablespoons coconut oil (can be substituted with water if you cook oil free)
1 big red cabbage (or several small 1250g)
5 apples (500g)
1 teaspoon salt (or to taste)
5 cloves
¼ - ½ cup sugar, or 2 TB -1/3 cup honey (depending on taste).
¼ cup apple cider vinegar

Steps:

  • Sautee chopped onions in oil or water
  • Add chopped cabbage, cook till it cooks down (ca. 10 minutes)
  • Season
  • Add apples
  • Cover, turn down the heat to medium to low, and let simmer for 20 - 30 minutes
  • Stir occasionally
  • Taste, season some more if needed
  • Enjoy

1/2 teaspoon whole peppercorns
2 bay leaves
2 whole cloves
2 medium onions, chopped
1/4 cup butter, cubed
1 garlic clove, minced
1 cup dry red wine or grape juice
1 medium head red cabbage, shredded
3 medium apples, chopped
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons red wine vinegar

Steps:

  • Place the peppercorns, bay leaves and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. , In a Dutch oven, saute onions in butter until tender. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Add the cabbage, apples, salt, pepper and spice bag., Bring to a boil. Reduce heat; cover and simmer, for 30-35 minutes or until cabbage is tender, stirring occasionally. Stir in vinegar. Discard spice bag. Serve with a slotted spoon.

1 red cabbage, coarsely shredded
1 tablespoon butter
1 lb apple, sliced (about 2 large)
1/2 lb onion, sliced (about 2 small to medium)
2 garlic cloves
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon thyme
1/4 teaspoon caraway seed
salt and pepper
2 tablespoons brown sugar
2 cups wine, plus a little more
2 tablespoons wine vinegar

Steps:

  • Cook cabbage in the butter, while covered, for 5 minutes.
  • Place into a crock pot.
  • Add sliced onions and apples.
  • Add everything else.
  • Cook on low 6-7 hours, until done to your liking. Enjoy!

  • Remove outer wilted and dry leaves from the red cabbage. Shred the cabbage as thin as possible. You can use a mandoline slicer if you have one.
  • Place the shredded cabbage into a large bowl. Salt the cabbage and pour the apple cider vinegar over it. Massage the cabbage with your hands for about 1 minute. The cabbage will change the color and slightly reduce in volume. Keep in mind that red cabbage juice can stain your hands and nails, so wear gloves if needed. Set the red cabbage aside for about 5 minutes.
  • In the meantime, heat the olive oil over medium heat. Add the onion and cook, stirring occasionally for about 3 to 4 minutes or until the onion starts to caramelize.
