CREAMY PASTA WITH BACON AND RED CABBAGE



Creamy Pasta With Bacon and Red Cabbage image

Smoky bacon and cabbage are a classic Eastern European combination, but tossing them with pasta and a bit of cream takes them in a heartier direction. Use a short, curvy shape, such as cavatappi or fusilli, that can catch the silky sauce in its crooks. Red cabbage is called for here, but regular green or Savoy cabbage would also work well. Top any leftovers with a fried egg and, of course, extra grated cheese.

Number Of Ingredients 10

1 pound cavatappi, fusilli or other short, curvy pasta
Kosher salt
2 tablespoons olive oil
8 ounces thick-cut bacon, sliced into 1/4-inch pieces
1 medium red onion, thinly sliced
4 cups thinly sliced red cabbage, from about 1/2 small cabbage, cut into pieces no larger than 3 inches wide
Black pepper
1 cup heavy cream
1/4 cup grated pecorino or Parmesan, plus more for serving
2 tablespoons mixed chopped fresh herbs, such as Italian parsley, thyme or oregano, for garnish (optional)

Steps:

  • Cook the pasta in a large pot of well-salted boiling water (2 heaping tablespoons kosher salt to about 7 quarts water) according to package instructions until it's just short of al dente. Reserve 1 cup pasta water, and drain.
  • Meanwhile, heat the olive oil over medium heat in a 12-inch skillet, preferably with sides. Add the bacon and cook until crisp, about 5 to 6 minutes, then remove with a slotted spoon and set aside on a plate lined with paper towels.
  • Add the onion to the pan, toss to coat in the rendered bacon fat and cook until translucent, about 1 to 2 minutes. Add the cabbage, toss to combine and cook until the cabbage is tender but maintains its vibrant color, about 3 to 5 minutes more. Season with salt and pepper.
  • Turn the heat to low and add the pasta to the skillet along with the bacon, heavy cream and grated cheese tossing to coat until the pasta is glossy with sauce and it thickens slightly, about 1 to 2 minutes. If you want the pasta saucier, add in 1/4 to 1 cup pasta water and toss until the desired consistency is reached. Top with the mixed herbs and pass grated cheese at the table, if desired.

Savoy Cabbage Pie With Bacon, Stilton and Pears image

6 slices bacon, chopped
1 large onion, peeled, halved and thinly sliced
2 small heads Savoy cabbage, cored and shredded
2 teaspoons salt
Freshly ground pepper to taste
3 tablespoons honey
6 tablespoons sherry
1 1/2 teaspoons unsalted butter
6 firm Bosc pears
1/4 pound Stilton, crumbled
1 1/4 cups all-purpose flour
1 teaspoon sugar
1 teaspoon salt
5 tablespoons cold, unsalted butter, cut into small pieces
2 tablespoons cold bacon fat (reserved from filling)
3 tablespoons ice water

Steps:

  • To make the filling, cook the bacon in a large skillet until crisp. Remove the bacon from the skillet with a slotted spoon. Put 2 tablespoons of the bacon fat into a small container and freeze just until solid. Pour half of the remaining fat into another large skillet. Place the onion in one of the skillets and cook over medium-high heat until softened, about 5 minutes.
  • Heat the other skillet and divide the cabbage between the two skillets. Cook over medium heat, tossing frequently, for 20 minutes. Combine the cabbage into 1 skillet. Stir in the salt, pepper, honey and sherry and cook until the cabbage is completely wilted and most of the liquid has evaporated, about 25 minutes more. Set aside.
  • To make the crust, combine the flour, sugar and salt in a bowl. Rub in the butter and the chilled bacon fat until the mixture resembles coarse meal. Gradually stir in the ice water, being careful not to overwork the dough. Form into a ball, flatten into a disk and wrap in plastic. Chill for 30 minutes.
  • Meanwhile, preheat the oven to 350 degrees. Peel, core and thinly slice the pears. Melt the butter in a medium-size skillet over medium heat. Add the pears and saute until brown and soft, about 10 minutes. Set aside. Roll out the dough and fit it into a 9-inch pie plate. Line the dough with a large piece of aluminum foil and fill with pie weights or beans. Bake for 30 minutes. Remove the foil with the weights and bake until the crust is golden brown, about 10 minutes more.
  • Press the cabbage mixture into the bottom of the pie shell. Top with the pear slices. Bake until heated through, about 15 minutes. Sprinkle the Stilton over the pears and bake just until melted, about 2 minutes. Cut into wedges and serve immediately.

1/2 cup cider vinegar
1/4 cup sugar
1/4 cup packed brown sugar
1 medium head red cabbage, shredded (10 cups)
2 bacon strips, diced
1 medium tart apple, peeled and chopped
1/2 cup chopped onion
1/4 cup water
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground cloves

Steps:

  • In a large bowl, stir the cider vinegar and sugars until sugars are dissolved. Add cabbage; toss to coat. Let stand for 5-10 minutes. Meanwhile, in a large skillet cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. , In the drippings, saute apple and onion until tender. Stir in water and cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes. , Stir in the remaining ingredients. Simmer, uncovered, for 5 minutes or until tender. Sprinkle with reserved bacon just before serving.

6 rashers unsmoked bacon , diced
200ml red wine vinegar
2 tbsp light soft brown sugar
1 small red cabbage , shredded
handful sultanas
150g stilton or other hard blue cheese, crumbled

Steps:

  • Cook the bacon in a frying pan until crispy. You shouldn't need any oil as the fat will run from the bacon.
  • Heat the vinegar in a large saucepan until just simmering. Tip in the sugar and stir to dissolve, then add the red cabbage. Cook for a further 3 - 5 minutes, tossing the cabbage through the vinegar.
  • Spoon the cabbage into bowl, stir through the bacon, sultanas and season with black pepper and a little salt. Allow to cool.
  • Toss in the blue cheese to serve.

1 small onion, quartered and thinly sliced

Steps:

  • In a large saucepan, place steamer basket over 1 in. of water. Place cabbage in basket. Bring water to a boil. 5 thick bacon strips, cut into small pieces
1 large onion, chopped
2 cloves garlic, minced, or more to taste
1 medium head cabbage, shredded or chopped
1 teaspoon paprika
1 pinch white sugar
salt to taste
ground black pepper to taste

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
  • Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.
