BEAN RECIPES: PINTO BEAN CHILI
This easy chili recipe is one of our favorite bean recipes! It's quick to make and it freezes well.

Steps:
- Heat the oil in a large pot over medium heat. Add the onion, a few pinches of salt and pepper, and stir. Cook until the onion is translucent, 5 minutes, then add the garlic and red pepper. Stir and cook until soft, 5 to 8 minutes, turning the heat down as needed.
- Add the tomatoes, beans, water, chipotles, adobo sauce, corn, salt, and a few grinds of pepper. Cover, reduce the heat to low, and simmer for 25 minutes, stirring occasionally, until the chili has thickened.
- Stir in the lime juice and season to taste. Serve with desired toppings.
NO FAIL BEAN PIE
This is a traditional Muslim bean pie that most people have never had and even more have never made. Made with navy beans, it is surprisingly a wonderful dessert. Once you've had it, you'll love making it. There are only a few recipes for this pie and it took me years of tweaking other recipes to come up with one that actually makes an edible bean pie. This recipe you can trust to make an awesome dessert.

- Preheat oven to 450 degrees F (230 degrees C). Place pie crusts into 9-inch pie dishes.
- In a food processor, place the navy beans, evaporated milk, melted butter, cinnamon, nutmeg, flour, sugar, vanilla extract, eggs, and egg yolks; pulse the mixture a few times, then process until smooth, about 1 minute. Pour the filling into the prepared pie crusts.
- Bake at 450 degrees F (230 degrees C) for 15 minutes, then reduce heat to 350 degrees F (175 degrees C) and bake until the filling is set and the crust is golden brown, an additional 35 minutes. Cool before slicing. Eat warm or cold. Refrigerate leftovers.

RED AND BLACK BEAN PIES
No pie crusts needed, just prepared polenta slices.

- Preheat oven to 400 degrees. In a large saucepan, heat 1 tablespoon oil over medium; add white part of scallions and garlic. Season with salt and pepper. Cook until softened, stirring constantly, 2 to 3 minutes. Add beans, tomatoes with juice, and 1/2 cup water. As you bring to a boil, mash about 1/4 of the beans with the back of a spoon against side of pan to release starch. Reduce to a simmer; cook until mixture has thickened, 10 to 15 minutes.
- Meanwhile, brush eight 10- to 12-ounce ramekins or custard cups with remaining oil. Slice polenta crosswise into 8 rounds; place 1 round in each ramekin.
- Remove bean mixture from heat. Stir in green part of scallions, cilantro, and hot sauce; season with salt and pepper. Spoon bean mixture into ramekins; top each with cheese. Bake at 400 degrees for 15 to 20 minutes. Let stand 10 minutes before serving. If desired, garnish with cilantro, and serve with salsa.
AUTHENTIC LOUISIANA RED BEANS AND RICE
Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

- Rinse beans, and then soak in a large pot of water overnight.
- In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
- Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
- Stir sausage into beans, and continue to simmer for 30 minutes.
- Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

SWEET RED BEAN PIE

- Preheat oven to 425F and place the pie crust on a rimmed baking sheet.
- Puree the beans, butter, sugar, vanilla, milk and eggs in a food processor until smooth.
- Add the allspice, nutmeg, cinnamon, tapioca starch and rolled oats and process until smooth and the oats are finely minced. Mixture will be fluid.
- Pour into the pie shell.
- Sprinkle with pecans, if using.
- Place the pie in the oven and bake on the middle rack for 12 minutes.
- Reduce the temperature to 350F and move the pie to the lowest rack of the oven.
- Bake for 30 minutes, covering the pie with foil after 20 minutes if it's browning too much.
- When done, the filling will be completely set.
- Cool completely to room temperature, then chill overnight before serving.

VEGAN SAVORY PIE WITH VEGETABLES AND RED BEAN PUREE

- Make the dough: Transfer the flours, the salt and the baking powder to a bowl and stir with a fork. Add the olive oil and stir until the mixture is crumbly. Add the water and the vinegar and mix with the fork until the dough comes together. Don't over mix. Let the dough rest in the bowl.
- Make the filling: Heat a large pan over high heat until very hot and add the mushrooms and the olive oil. Cook the mushrooms until browned, about 5-6 minutes.Reduce heat to medium/high and add the onion, the garlic, the thyme, the bell peppers, the bay leaf, the salt, and the pepper. Stir until vegetables are soft, about 5 minutes and turn off the heat.
- Transfer the potatoes, red beans, olives, parsley, tomato, cumin, green onions, and olive oil to a food processor and process until everything is mixed (you can also skip the food processor and mash everything with a fork for a more "rustic" texture). Mix the red bean mixture with the vegetables.
- Preheat your oven to 390°F (200°C)
- Take two-thirds of the dough and roll it out forming a circle large enough to cover the bottom and sides of a 9-10 inches (25 cm) pie pan. Use some extra flour if needed.Lightly oil the pan and cover with the dough. Fill the pie with the filling and roll out the rest of the dough in a circle large enough to cover the surface of the pie.Brush the sides of the pie with some water and cover with the second circle. Trim the edges and use the trimmings to make some decorations (optional).
- Bake for 50 minutes or until golden brown. For better serving let the pie cool for 20 minutes before cutting it.
- Eat!
SWEET AZUKI BEAN PIE
If you are familiar with Chinese steamed buns filled with red bean paste, you will delight in this pie. During my time learning to speak Chinese in school, I worked in a Asian food mart/Chinese restaurant. That is where I fell in love with it. This is an American rendition of an Asian favorite.

MUSLIM BEAN PIE
This recipe was given to me by a friend of my wife. It is the best bean pie I have tried, and I've tried quite a few. I use a convection oven so I'm a little lenient with the bake time. My oven bakes a little faster than regular ovens. I am working on a chocolate version, a low fat version and a sugar free version of this pie. I'll post these recipes as soon as I perfect them.

- In a food processor add all ingredients.
- Mix on low speed for 1 minute or more, until smooth and no lumps remain.
- Pour into pie crust.
- Bake in a 350 degree preheated oven for 45 to 60 minutes.
