8 whole fresh beets
1/4 cup sugar
2 teaspoons cornstarch
Dash pepper
1 cup orange juice
1 medium navel orange, halved and sliced, optional
1/2 teaspoon grated orange zest

Steps:

  • Place beets in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 25-30 minutes or until tender. Drain and cool slightly. Peel and slice; place in a serving bowl and keep warm., In a small saucepan, combine the sugar, cornstarch and pepper; stir in orange juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in orange slices if desired and zest. Pour over beets.

1 bunch beets (about 1 1/2 pounds), scrubbed, peeled, and cut into 1-inch pieces
1 teaspoon extra-virgin olive oil
Coarse salt and ground pepper
2 tablespoons red-wine vinegar
1 teaspoon honey
1/4 cup fresh orange juice
2 teaspoons finely grated orange zest
2 teaspoons fresh thyme leaves

Steps:

  • Preheat oven to 425 degrees. Place beets on a large piece of foil on a baking sheet. Drizzle with olive oil and season with salt and pepper. Fold foil around beets and crimp ends to form a packet. Roast until tender when pierced with a knife, about 45 minutes.
  • Transfer beets to a large bowl and drizzle with vinegar, honey, and orange juice. Top with orange zest and thyme.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Toss the beets, olive oil, and thyme in a bowl until beets are coated, and arrange pieces of beet on baking sheet so that they don't touch. Sprinkle the beets with sea salt.

1 pound golden beets, top and bottom trimmed and greens removed
¼ cup water
2 tablespoons olive oil
3 tablespoons olive oil
3 tablespoons balsamic vinegar
2 tablespoons freshly squeezed orange juice
1 teaspoon honey
½ teaspoon grated orange zest
¼ teaspoon cayenne pepper
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
¼ red onion, thinly sliced
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place golden beets in a shallow baking dish. Stir water and 2 tablespoons olive oil together in a small bowl and pour over beets, tossing them in the liquid to coat completely. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until beets are tender when pierced with a skewer, 45 to 55 minutes. Remove form oven, uncover, and let cool for 10 minutes. Slip skins off beets and cut them crosswise into thin 1/4-inch slices.
  • Whisk 3 tablespoons olive oil and balsamic vinegar together in a small bowl. Add orange juice, honey, orange zest, cayenne pepper, salt, and black pepper and whisk until vinaigrette is well combined.
  • Spread beets onto a plate and drizzle with vinaigrette. Toss gently with sliced red onion and season with parsley.

  • Scrub beets, leaving on root and 1 inch of stem. Place beets in a large pot and cover with water. Bring to a boil, cover and simmer 45 to 60 minutes or until tender. Drain.

Steps:

  • Preheat oven to 350°F
  • Trim & scrub beets leaving root & 1" stem intact. Place on a sheet of foil, drizzle with 1/2 TB olive oil & wrap loosely but tightly(seal edges). Place on a baking sheet. Bake for 1 hour & let cool enough to handle.
  • Remove stems & roots, peel & slice beets. Place in bowl.
  • Combine glaze ingredients in a small saucepan. Bring to a boil for 1 minute. Pour over beets.

6 red baby beets, peeled, with 1 inch of the tops left on
6 yellow baby beets, peeled, with 1 inch of the tops left on

Steps:

  • Zest oranges and place zest in a medium pot. Peel oranges and divide into segments.
  • In a medium saucepan, add 4 cups of water, the oranges, and the honey. Bring the mixture to a boil. Remove from the heat and crush the orange mixture with a wooden spoon. Strain into the pan with the orange zest. Add salt, to taste, and keep the mixture warm over low heat.
  • Add the beets a pot of boiling water. Cook until just tender, about 10 minutes. Remove the beets from the pot, place on a serving dish, and drizzle with the orange honey water.
