HEARTS DELIGHT ECLAIR - MADE WITH PUFF PASTRY SHEETS
Originally found in Taste of Home magazine, listed as a "runner up" in one of their contests. Submited by Lorene Milligan of Chemainus, British Columbia. As a surprise for a good friend, it was a part of a carry in meal I prepared for her and her family for her birthday and has been requested over and over by everyone who has tried it since. Today I do not cut into a heart shape but instead leave it as a square (to get it to go as far as I can!) Ready made puff pastry sheets make this a breeze to prepare and the appearance is VERY elegant! A real show-stopper!

Steps:
- On a lightly floured surface, roll each puff pastry sheet into a 12 inch square.
- Place on ungreased cookie sheets.
- (Original recipe calls for: "Using an 11 inch heart pattern, cut each pastry into a heart shape" - either way works well).
- Bake at 400 degrees for 12-15 minutes or until golden brown. (Do not underbake - it's a good idea to check your oven temperature. If underbaked, the pastry will fall.).
- Remove to wire rack to cool.
- Meanwhile, whisk milk and pudding mix until thickened, 1-2 minutes.
- In a mixing bowl, beat cream and 1/2 t vanilla until stiff peaks form. Carefully fold into pudding until consistent color but do not over stir.
- Split puff pastry sheets horizontally with a serrated knife.
- Place one layer on a serving plate and top with 1/3 of the pudding mixture.
- Repeat twice.
- Top with remaining pastry.
- In a small bowl combine confectioners sugar, water, almond extract and remaining vanilla and stir until smooth. (If necessary you can use a few drops more water if you find it difficult to spread but do not thin too much or you lose the white color which adds to its appearance).
- Carefully spread over top of dessert.
- Melt chocolate chips and shortening. Pipe in diagonal lines in one direction over frosting (if you don't have tips for piping, place in a plastic zip lock baggie, seal the bag and cut a small piece off the corner of the baggie to do the piping).
- Refrigerate until set - (remove from fridge about 15-20 minutes before serving to soften the top for easy cutting)
- This holds well overnight but we never seem to have any leftovers to keep any longer than that!

- To begin making the Quick Puff Pastry Recipe Sheet for making puffs, measure all the ingredients and keep them ready.
- Add flour and salt to a large mixing bowl and give a quick stir to combine it. Add the large cubes of butter into the flour mixture.
- Ensure each piece of butter is coated fully into flour. When it is coated in flour it will be less likely to melt and also less likely to melt out of the dough later when we roll to make the sheets.
- This process of covering the butter with flour is called lamination of the butter with flour. If it is not laminated well, the butter will melt out of the dough and you will end up with a puff that is not flaky.
- Next, squish up the cubes of butter coated with flour by pressing between your fingers. Like shown in the image below.
- Once all the pieces are squished, just toss them in flour once again. You need to ensure all the butter pieces are well coated with flour.
- Make a well in the center and add little ice water at a time. Starting with 1/3 cup and then adding more if required a tablespoon at a time. Because every single brand of flour absorbs moisture differently, we need to ensure we add that water little at a time.
- To mix the water in, toss the flour into the water and it helps the water get incorporated to form the dough without kneading. Do not knead the dough, as it can activate too much gluten.
- When it gets to a stage where the puff pastry dough forms large clumps, you can knead a little to understand how much more moisture is needed to bring the dough together without breaking those butter shingles.
- It is important to get the dough to the right hydration level. If it becomes too wet, then the dough will become sticky and might not be the best thing for puff pastry.

- Be a Savvy Shopper. Looking for the best puff pastry brand? There are three main choices: Dufour Classic Puff Pastry, Trader Joe's All Butter Puff Pastry, and Pepperidge Farm Puff Pastry Sheets.
- Prep Your Pastry. Most frozen puff pastry comes in folded sheets. Let the pastry thaw completely, either overnight in the refrigerator or for 45 minutes at room temperature, before using it.
- Keep Cool. Puff pastry is easiest to work with when it's cold, so stow whatever you're not using in the refrigerator, and if the pastry gets too soft while you're rolling or cutting it, simply return it to the fridge or freezer to firm it up.
- Customize Your Puff. If you're blind-baking a pie or tart shell and want to keep the inside from rising as much as the edges, use a fork to prick the surface of the dough (like you would a regular pie crust).
- Finesse Your Fillings. Puff pastry is delicate, so be careful not to weigh it down with excessive toppings or ingredients that could release a lot of liquid and make the pastry soggy.
- Make It Shine. Just before baking, brush your puff pastry with an egg glaze (one large egg lightly beaten with about 1 teaspoon water) to give it an attractive sheen.
- Bake Now or Later. Puff pastry is at its best fresh out of the oven, so if possible, bake it in small batches and serve immediately. If you like to entertain, note that most recipes can be assembled and kept in the fridge for a couple of hours and then baked just before the party.
- Save Your Scraps. If you have any pieces of puff pastry left over, combine them and roll them out to make palmiers or cheese straws. Leftover pastry won't puff up quite as much and it may be a little uneven, but that's less important with smaller shapes.
