Steps:
- Put the prawns, garlic, ginger, egg white, sugar and soy in a food processor and blitz to a paste. Stir in the spring onion. Scrape into a bowl, cover and chill for 30 mins.
- Brush one side of each piece of bread with sesame oil. Spread the prawn mixture on top, taking it right to the edges of the bread. Brush the beaten egg carefully over the top and sides and sprinkle liberally with sesame seeds so they stick all over.
- Heat 2-3cm oil in a sauté pan or deep frying pan until hot, and cook each piece of bread (it's easier to cook one at a time), unspread-side down for 1½ mins, then carefully turn over and cook for 1-2 mins on the prawn side or until the sesame seeds are golden and the prawn paste cooked through. Cut each piece into four triangles. Serve with soy sauce (or a sweet & sour sauce) for dipping, if you like.

SESAME PRAWN TOAST RECIPE
Crispy prawn toast is infinitely better when it's homemade. Top slices of bread with a simple whizzed up prawn mixture, coat in sesame seeds and fry to golden perfection. You can have these ready in less than 20 minutes!

Steps:
- Add the raw prawns, ginger, garlic, egg white, spring onions, light soy sauce, salt and white pepper to a mini food processor and blitz until you get to a paste.
- Slice the bread with 2 straight cuts across each piece from corner to corner leaving you with 12 triangles of bread (no need to remove the crust).
- Spread the prawn paste evenly across one side of each of the bread triangles. It should be roughly 1 tbsp of paste for each triangle.
- Place the sesame seeds onto a plate or in a shallow bowl.
- Dip each of the triangles, paste side down, into the sesame seeds so you get a nice even covering of sesame seeds on the paste. Place on a plate ready for frying.
- Heat the oil in a wok or deep frying pan over a high heat, until it's hot but not smoking. Pro Tip: You can test this by placing a small chunk of bread into the oil, if it floats and starts to sizzle then the oil is hot enough.
- Working in two to three batches (see *Note 2*), add the triangles into the oil, paste side down and cook for 1-2 minutes, turn, then cook for another 30-60 seconds, until the bread is golden and the prawn paste is cooked through.
- Place on a plate or tray lined with a couple of pieces of kitchen roll to soak up any excess fat.
- Repeat until all you prawn toast is cooked.
- Sprinkle on some fresh, finely chopped, coriander (optional) and serve with the sweet chilli dipping sauce.

PRAWN TOAST TOASTIE
I like to have fun with restaurant favourites, finding ways to recreate the dishes at home. So this is basically a mash-up between the much-loved toasted sarnie and beautiful Chinese-style prawn toasts. I use white bread for this one, because it's soft and spongy, which suits the recipe. Give it a go!

Steps:
- On a large board, trim the spring onions, then finely chop with most of the prawns (save four for later). Peel and finely grate over the ginger, add the soy and the egg yolk (reserving the white), then chop and mix it all together. Divide and spread the filling between two slices of bread, then sandwich the other slices on top.
- Now, you can use a toastie machine or a non-stick frying pan - either way, get it hot. Brush both sides of each sandwich with the egg white, pat on the sesame seeds, then halve the remaining prawns and press into the bread on one side only. Place in your toastie machine for 3 minutes, or put in the pan with 1 teaspoon of olive oil and a weight on top of the sarnie to toast for 2½ minutes on each side, or until golden and cooked through. Slice and serve with sweet chilli sauce for dipping, or you could even brush the sauce over your toastie for added joy.

- Grease a 22cm/9in savarin mould with a little rapeseed oil, then line it with cling film, making sure the cling firm overlaps the edges of the mould all the way around.
- Arrange three-quarters of the cucumber slices in overlapping layers to cover all of the inside of the mould (the effect should resemble fish scales). Set aside.
- Blend the chopped smoked salmon with the lemon juice in a food processor until smooth. Add the cream cheese and blend once more to combine.
- With the motor still running, gradually pour in the double cream until the mixture thickens to a mousse, scraping the sides of the food processor with a spatula halfway through blending.
- Carefully spoon the mousse into a piping bag, then pipe half of it into the bottom of the cucumber-lined mould. Arrange a layer of prawns all over the surface of the mousse, then pipe over the remaining mousse and smooth the top using a palette knife.
- To serve, peel away the cling film, then invert the savarin mould onto a serving plate. Gently lift away the mould and peel off the cling film that was lining the mould.

- Use a little rapeseed oil to oil a shallow 22cm diameter, 4.5cm deep savarin mould, then line with cling film, making sure it overlaps the mould all the way around.
- Layer most of the cucumber into the mould, overlapping the slices as if they were fish scales, so that they cover all of the inside of the mould. Set aside.
- Put the chopped smoked salmon into a food processor with the lemon juice and blitz until smooth. Add the cream cheese and blitz once more, then, with the food processor running, slowly add the double cream until the mixture is thickened and smooth, scraping the mixture down halfway through.
- Carefully spoon the mixture into a piping bag, then pipe half the mixture into the base of the cucumber-lined mould. Top with half the prawns, then cover with the remaining mousse.
- Smooth it flat with a palette knife and cover the top with the remaining cucumber. Pull the cling film up to cover, then place in the fridge for 30 minutes or until ready to serve.
- Peel back the cling film, then place the mould upside down on a serving plate. Gently lift off the mould and peel back the cling film.
- Pile the watercress and remaining prawns in a pile in the centre of the mould. Decorate with the tiger prawns. Serve with wedges of lemon and plenty of melba toast.
