CLASSIC MATZO BREI



Classic Matzo Brei image

In this matzo brei (rhymes with fry) recipe, the matzo sheets are browned in butter until crisp before being lightly scrambled with eggs. You make this either sweet or savory as you prefer. Add black pepper, plenty of salt and chives for a savory version, or Demerara sugar and maple syrup or honey if you would like something sweeter. It's a fine breakfast or brunch any time of the year, and especially during Passover.

Number Of Ingredients 8

2 sheets matzo
2 to 3 tablespoons unsalted butter
4 large eggs, beaten with 1 tablespoon water
Large pinch fine sea salt, more to taste
Large pinch black pepper
Chopped chives, for serving
1 tablespoon Demerara sugar, more to taste
Honey or maple syrup, for serving

Steps:

  • Under cool running water, rinse matzo sheets until they are quite wet. Set it aside and let sit to soften while you prepare the pan.
  • Place a large, preferably nonstick skillet over medium-high heat and add butter. Once it melts and the foam subsides, break matzo sheets into bite-size pieces and add to pan. Sauté matzo in butter until it browns all over, about 2 minutes.
  • Add eggs, salt and pepper (if you're making the dish savory) to pan and scramble the mixture until it is just set but still light and fluffy, about 1 minute. Sprinkle with sugar (if you're making it sweet) and toss well.
  • Serve matzo brei sprinkled with salt and topped with chives (savory), or with salt, additional sugar and maple syrup (sweet).

1 matzo cracker
1 egg
salt and pepper to taste
1 teaspoon vegetable oil

Steps:

  • Take the matzo and break into small pieces into a bowl. Cover with hot water for a minute. Then squeeze out the water.
  • In a small bowl, beat one egg with salt and pepper to taste and add to matzo. Mix well.
  • Heat frying pan with a little oil. Pour mixture into the pan. Brown one side and turn over.

4 pieces matzo
1/2 cup water
4 eggs
Salt and pepper
2 tablespoons butter
2 tablespoons kosher for Passover vegetable oil

Steps:

  • In a mixing bowl, break the matzo into 1-inch pieces. Bring the water to a boil and pour over the matzos. Quickly toss the matzo, then drain off any excess. In a bowl, beat the eggs with a fork. Mix the eggs, salt and pepper into the matzo. Over high heat, heat the butter and oil in a large saute pan. Add the matzo and fry until crisp. Flip over to fry the other side, breaking into pieces as it cooks. Serve with Maple syrup, or preserves.

1 Matzo board
1 egg
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 teaspoon finely chopped fresh dill
2 teaspoons butter (can sub Ghee or EVOO)

Steps:

  • Break your matzo board into pieces. I prefer larger pieces around 1"-2" square. Place the broken matzo in a bowl and cover with boiling water.
  • Let matzo sit in boiling water for 2 to 3 minutes and drain.
  • In a separate bowl, beat egg with salt, pepper and chopped dill. Toss in drained matzo and mix well.

2 eggs
1 dash salt
1 dash ground cinnamon
1 dash curry powder
1 dash onion powder
1 dash garlic powder
1 dash ground black pepper
¼ cup milk
1 tablespoon olive oil
2 matzo sheets

Steps:

  • Beat eggs in a bowl with a wire whisk. Add salt, cinnamon, curry powder, onion powder, garlic powder, and black pepper. Mix in milk and oil.
  • Rinse matzo under running water until softened, breaking into pieces less than 1 1/2 inches in diameter. Drain and add to the egg mixture; stir carefully to coat.
  • Heat a skillet over medium heat. Add the matzo-egg mixture; cook, stirring constantly, until eggs are firm and slightly browned, 3 to 5 minutes.

4 eggs
Salt and pepper
4 sheets plain matzoh, broken into quarters
3 tablespoons butter

Steps:

  • In a mixing bowl, beat the eggs and add a dash of salt and pepper. In another bowl, soak the matzoh in warm water for about 30 seconds. Remove and set aside. In a large skillet over medium heat, melt the butter. Add the matzoh to the egg mixture, tossing gently to coat (making sure not to break up the matzoh too much), and add this to the hot skillet. Allow the matzoh to cook undisturbed for 2 to 3 minutes, or until the bottom begins to brown. Turn it over, stirring gently to cook through and allow the other side to brown (the matzoh will begin to break up at this point, which is fine). Add salt and pepper to taste. Serve immediately.

  • Break a sheet of matzo into smallish bite-size pieces in a colander set over a bowl to catch any crumbs. Beat the eggs and the milk well in the bowl and set aside. Run the colander of matzo under the sink faucet, soaking the matzo and softening it (but not letting it get mushy). Add the wet matzo and salt to the beaten eggs and toss well to combine.
  • Meanwhile, heat the butter in a frying pan over medium-low heat until melted and foamy. Add the egg-matzo mixture to the frying pan and scramble as you would eggs until the eggs are cooked to your liking, then season with salt and pepper (savory) or cinnamon sugar (sweet) and serve with sour cream and/or applesauce, if you like.
  • Savory: Highly springy—in the seasonal sense of the word. Add ½ teaspoon grated lemon zest to the egg-matzo mixture, along with lots of freshly cracked black pepper. Let all this sit while you melt the butter and saute a handful of thawed frozen peas in it until brightest green. Add the egg-matzo mixture, scramble per usual, and top with grated pecorino and more pepper. Serve over pea shoots if you have them. (If you’re abstaining from kitniyot, swap the peas and pea shoots for another springy vegetable—asparagus, chopped into 2-inch-or-so lengths, would be a good substitute.)
  • Sweet: Coconut macaroon-inspired, just a little sweet. Add a ¼ cup of large flaked unsweetened coconut (or 2 heaping tablespoons of finely shredded coconut) to the egg-matzo mixture, along with ¼ teaspoon almond extract and 1 teaspoon granulated sugar. Let all this sit for a moment while the butter melts in the frying pan. If you like, top with toasted coconut flakes.
