MOM'S HOMEMADE BUNS
My Mom's Homemade Buns are the perfect dinner roll for any occasion! Incredibly soft and fluffy, use all purpose or whole wheat flour, make a big batch and freeze for later.

Steps:
- In a small bowl or liquid measuring cup, whisk together the warm water, yeast and sugar.
- Let sit for 10 minutes or until bubbly -- this is how you know your yeast is working. This step is technically not required when using instant yeast, but I do it always anyways, so that I know my buns will be a success.
- In the bowl of a stand mixer (or a very large bowl if you are kneading by hand), whisk together the 2 cups warm water, butter, 1/3 cup sugar and salt.
- Add the bubbly yeast mixture and stir to combine.
- Place the bowl in the stand mixer and put the dough hook on the machine. You can also knead by hand.
- Add the flour, one cup at a time, and mix until nearly combined before adding more. You can use all purpose or whole wheat or a combination. Start with 4-5 cups flour, mixing until each is incorporated.
- The closer you get to your dough being ready, the less flour you will add at once. We want a smooth, soft dough, never stiff, so we need to watch and stop adding flour at just the right moment.
- Add up to 6-7 cups flour total, very gradually at the end, until the dough comes together in a smooth, soft ball and does not stick to the sides of the stand mixer. When you touch it, it should be smooth and slightly tacky but not sticky.
- Place dough in a large lightly greased bowl (you can use the same bowl and grease it), and cover with plastic wrap or a clean kitchen towel.
- Set in a warm spot (I use the oven with the light on -- turn the oven on to preheat for 2-4 minutes before turning off and adding the dough) and let rise until doubled, about 1.5 hours.
- Uncover dough, punch down, and roll out 20-24 rounds -- smoothing the top and pinching the seam in the back to smooth (see video for additional details).
- Place on a parchment lined baking sheet and let rise (you don't have to cover them) in a warm spot for 30 to 90 minutes (instant yeast will be quicker) until doubled.
- Bake at 350 degrees for 15-20 minutes, until light golden brown.

TASTY BUNS
Excellent yeast buns that can be used for hamburgers or just plain dinner rolls. They don't take long to make and have never failed for me!

Steps:
- Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
- Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
- Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.
- Bake in a preheated 400 degrees F (200 degrees C) oven for 12 to 15 minutes.

- In a large bowl, dissolve yeast in warm water. Add oil and sugar; let stand for 5 minutes. ONE-HOUR DINNER ROLLS
Soft and fluffy dinner rolls that are so easy to make and ready in one hour! Soon to be a family favorite!

- Preheat oven to 180 degrees Fahrenheit. In the bowl of an electric stand mixer whisk together 3 3/4 cups flour, sugar, yeast and salt.
- To a medium bowl add water, milk and butter and heat in microwave on HIGH power until it reaches 120 degrees on a thermometer, about 1 minute 15 seconds. Stir to partially melt butter (you just want to make sure it's softened through).
- Pour milk mixture into dry mixture in bowl of electric stand mixer along with lemon juice.
- Set mixer with a hook attachment then set mixer on low speed and gradually increase to medium-low, knead about 3 - 4 minutes until smooth and elastic while adding additional flour as necessary (dough should be lightly sticky but manageable).
- Cover bowl tightly with plastic wrap and rest 5 minutes. Meanwhile butter a 13 by 9-inch baking dish.
- Drop dough onto a lightly floured surface. Shape into an evenly level square, about 9 by 9-inches. Cut into 16 equal portions (don't have to be exact)
- Shape dough into 15 balls, while using excess dough from the 16th portion to add to smaller rounds as needed, and place shaped dough portions into prepared baking dish.
- Dampen hands with water and brush tops of dough with the water (just so they don't dry while rising in oven). Transfer to oven, close oven and turn oven off, allow rolls to rise 20 minutes (don't open oven door).
- Remove from oven and preheat oven to 375 degrees Fahrenheit (this should take about 5 minutes, so just allow rolls to rest on counter while oven preheats).
- Bake in preheated oven 14 - 16 minutes until tops are golden brown. Remove from oven and run the top of a stick of butter along tops of rolls just to coat. Serve warm. Store in an airtight container (I recommend rewarming cool rolls in microwave for best results.

TWO-HOUR BUNS
Another recipe from my dear friend. No doubt an effort to make homemade buns something SHE didn't always have to do FOR me!! (prep time includes kneading; passive/cook time includes rising time)

- Mix yeast well with first 4 cups flour.
- In a large, lightly greased mixing bowl, place flour and yeast and add remaining ingredients, adding approximately another 4 cups of flour to form soft dough.
- Cover and let rise 15 minutes and punch down.
- Let rise again for 10 minutes and then form buns, placing on cookie sheets.
- Let rise in warm place (in the oven with the light on) for 30 minutes.
- Bake 15 minutes at 375°F.
A QUICK AND EASY HOT DOG BUNS RECIPE
These buns are so soft, and they stay soft the next day and the day after, but they are strong enough to hold up under even the thickest of hot dogs and sausages. They are fluffy and delicious.

- Mix the yeast, 1 teaspoon sugar, and warm milk and leave to proof-about 5 minutes.
- Combine two and a half cups of flour, the remaining sugar, and salt. Mix well.
- Add the proofed yeast, one egg, and melted butter, and use a sturdy spoon to mix until everything comes together in a rough, shaggy mass of dough.
- Cover with a plastic wrap or a tight-fitting lid and leave to rest for five minutes.
- Remove the lid, turn the dough to a lightly floured work surface and knead, gradually adding the leftover quarter cup of flour - your dough will still be soft, but don't be tempted to add more flour.
- Return the dough to the bowl and grease the surface with a bit of oil or melted butter, cover with a plastic wrap or a tight-fitting lid, and leave to rest for 30 minutes.
- Punch down the dough to remove any trapped air and transfer it back to a lightly floured work surface.
- Divide the dough into eight pieces, roll each out about 6 inches long, and pinch down the sides and ends.
- Place the buns, seam-side down, on a parchment-lined baking sheet.
- Make the egg wash by whisking one egg, then brush the buns with the egg wash.
- Cover the loaves and leave them to rise for 15minutes. They should become nicely puffy.
- Place in a 350F preheated oven and bake for 12 to 15 minutes.

REA'S 3 HOUR BUNS
Steps:
- Preheat oven to 100 degrees then turn off (this is for the rise) Combine first 5 ingredients in very large bowl. Mix well with fork. Add beaten eggs and mix again. Add enough flour to make dough soft. Pat dough with small amount of oil on hands, cover and let rise in warm oven for 15 minutes Punch down. Repeat this three (3) times. On the fourth rise, make into buns/bread/cinnamon buns (onto greased pans) and let rise 40-45 minutes. Preheat oven to 350 degrees Bake for 15 - 20 minutes, depending on buns/bread until tops golden brown. Upon removal of oven, brush tops with margarine. Makes 2 loafs of bread, 1 cinnamon round and 1/2 dozen buns. Note: to make cinnamon buns: roll out into rectangle, spread with butter, sprinkle generously with brown sugar and end with cinnamon - roll up, slice about 1" thick and put in greased pan. When cool, spread with cream cheese icing or thick mixture of milk & icing sugar - enjoy!
