- In a medium bowl, mix together flour, sugar, baking powder, nutmeg and salt. In a separate bowl, beat together eggs and milk. Stir milk mixture into flour mixture until smooth.
- Heat oil to 375 degrees F (190 degrees C) in a deep fryer or heavy bottomed deep pot or skillet.
- Slice apples into 1/2 inch rings. Dip apple slices in batter and fry, a few at a time, turning once, until golden. Drain on paper towels and dust with confectioners' sugar.

- Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
- In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
- Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

EASY HOMEMADE APPLE FRITTERS
These Easy Homemade Apple Fritters are packed full of fresh apples, simple to make, and can be ready in just 30 minutes!

- Dice your apples, place in a bowl and add lemon juice. This will prevent the apples from browning.
- In a large bowl, whisk eggs. Add milk, vanilla, and cooled melted butter (don't add it hot, you'll cook your eggs!) Whisk together with a fork until it is all combined.
- In another medium sized bowl, combine the flour, sugar, baking powder, cinnamon, salt, nutmeg, and ground ginger.
- Add dry ingredients to wet and mix well until a loose dough is formed. Fold in the apples.
- Fill a frying pan or sauce pan with about 3-4 cups of oil or so that you have about 3-4 inches of oil in your pan. Heat oil over medium heat until the oil reaches 375°F with a candy thermometer or an instant read thermometer. If you don't have a thermometer, use the wooden spoon test (see notes).
- Use a measuring cup to drop batter into oil, 1/4 cup or 1/3 cup. Fry until the outside is golden brown. Flip and fry other side until golden brown, for a total of about 4-5 minutes. You'll know they're done if you insert a small knife into the center and it comes clean. If not, fry a little longer so that the center is fully cooked. This time will depend on the size of your fritter.
- Use a slotted spoon to transfer to a paper towel-lined cooling rack and let cool. Repeat with all the batter.

These delicious fritters were made weekly by the school cafeteria cook who, "after hours" let me sample them ...ummmmm so good and easy to make. I never want to lose this recipe! Try them they're nice with a pork dinner .. but my family loves them for dessert...you decide.

- Measure and sift all dry ingredients.
- Beat eggs and milk together; slowly incorporating the dry ingredients.
- Add the chopped apples.
- In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
- Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
- Remove from oil and drain on brown paper.
- Cool and sprinkle with powdered sugar.
- Makes 12 small fritters.
- Eliminate the sugar and serve with pork roast.

- 1. In a large bowl, combine the beaten egg, milk, sugar, cinnamon and sour cream. Mix well and add the flour.
- 2. Heat 2 Tbsp. oil in a large skillet to 375 degrees F. Dip the apples in batter and place in hot oil. Cook for 1 to 2 minutes. Turn and cook another 1 to 2 minutes.

- In a large bowl (or the bowl to a stand mixer), cream the sugar and eggs for 1-2 minutes with a mixer.
- To this, add the flour, baking powder, cinnamon, salt and milk. Mix these ingredients well.
- In a separate bowl, mix the chopped apples with the lemon juice. Using a spoon, add the apple mixture to the batter and stir well, to combine.
- Heat vegetable oil to 375 degrees (use a deep-fry thermometer or use an electric skillet with a temperature control). It is very important to make sure the temperature is hot enough to fry the fritters correctly.
- Once the oil is at 375 degrees, scoop out really large tablespoonfuls of the fritter batter (as big as you can get 'em!) and carefully and gently slide the fritter into the hot oil.
- When they get to a true golden brown color, carefully turn the fritters over to the other side (I used two spoons to carefully flip them) and continue cooking. (This should take approx. 2-3 minutes on each side).
- When the fritters become brown on both sides (you might have to flip them over again to make sure both sides are brown), then you know they will be ready and cooked through.
- Using a slotted spoon, remove the fritters, one at a time, to a paper-towel lined (several thicknesses) plate to drain and cool.
- To make a glaze for the tops of the fritters, mix together the powdered sugar, vanilla and water in a small bowl until you have a nice "paintable" glaze.
- Using a pastry brush, brush this glaze over the entire top of the fritter. Let glaze harden slightly, turn it over and "paint" the glaze on the bottom. Place glazed fritters on wire rack; let glaze harden, then serve.

- Prepare the apples first. Peel them, then use a sharp knife to dice the apples into pea-sized pieces and place the diced apples in a large mixing bowl. If desired, pour a tablespoon of lemon juice over the apples to prevent browning.
- In a separate mixing bowl, combine the milk, eggs, vanilla and sugar and whisk for a minute until the mixture is smooth. In a separate bowl, combine the flour, baking powder, cinnamon, nutmeg and salt. Stir to combine the dry ingredients, then gradually add them to the wet batter. Mix the flour into the batter just until it's incorporated; do not overmix. Fold in the diced apples with a spatula.
- Pour the frying oil into a large pot, attached a thermometer and heat over medium-high heat until the oil reaches 350F/177C. For each fritter, use approximately 1/4 cup of batter for small fritters. Fry the fritters for 5 to 6 minutes, until the donuts are a rich golden color. For larger fritters, reduce to heat to 325F/163C and increase time to 7 to 8 minutes. Remove the fried fritters onto a wire rack lined with paper towels to absorb any excess oil.
- For the glaze, simply whisk together the milk, confectioner's sugar and cinnamon in a medium-sized mixing bowl until the glaze is smooth. The glaze needs to be on the thin side; add more milk if necessary.
- Allow the fritters to cool for 2 to 3 minutes, then gently roll each fritter in the prepared glaze, coating it evenly all over. Place the glazed donuts onto a wire rack and allow the glaze to set and any excess to drip off.

- Heat the vegetable oil in a skillet or Dutch oven to 350 degrees. If a thermometer is not available, follow the test method in Notes below.
- Using a knife or kitchen shears, cut up the apple filling into tiny pieces. Set aside.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Add in the milk and eggs; mix until combined.
- Fold in the apple pie filling with a spatula.
- Drop the batter by ¼ cup full into the hot oil, spread them with a spoon to flatten the fritter out. Do not crowd the skillet or pan. Cook only 1-2 fritters at a time.

- Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla.
