- Sprinkle a pinch of baking soda into a 64-ounce, heat-proof, glass pitcher. Pour in boiling water, and add tea bags. Cover, and allow to steep for 15 minutes.
- Remove tea bags, and discard; stir in sugar until dissolved. Pour in cool water, then refrigerate until cold.

SOUTHERN STYLE SWEET TEA
Every Southern family has a sweet tea recipe, and this one is ours. It's as Southern as a biscuit, great with any dish from apple pie to baked ziti, and should always be available in the fridge.

- In a pot, bring 8 cups of water to a boil; remove from heat Add tea bags and allow to steep for 3-5 minutes depending on the strength of tea you prefer. Remove tea bags and stir sugar into warm tea; continue to stir until completely dissolved. Pour concentrated tea into pitcher and mix in remaining 8 cups water. Allow to cool to room temperature. Pour into glasses packed with ice cubes, garnish and serve. For best flavor, refrigerate and use within 48 hours.
SOUTHERN SWEET ICED TEA
This is how my Granny made sweet tea and it is some kind of sweet. Know that and beware. Pa-Paw used to down 2-3 glasses after working in the garden all day. Back off the sugar if you can't handle it. This one is for true southerners only ;)

- In a large glass measuring cup, place the tea bags and add the baking soda.
- Pour the boiling water over the tea bags.
- Cover and steep for 15 minutes.
- Take out the tea bags and do not squeeze them.
- Pour the tea mixture into a 2-quart pitcher; add the sugar.
- Stir until the sugar is dissolved.
- Add in the cold water.
- Let cool; chill in the refrigerator and serve over ice.

- In a saucepan, heat water to boiling. Add tea bags and steep for 8 minutes. Remove tea bags, and whlie water is sitll hot, add sugar and whisk to dissolve. This is optional, but you can add 1/2 teaspoon of baking soda to remove the bitter taste of the tea.
- Allow tea to cool the transfer to a pitcher and refrigerate.

- Pour the boiling water into a large glass or heatproof pitcher. Add the tea bags and baking soda; gently stir to combine. Let the tea steep, uncovered, 15 minutes. Remove tea bags and discard. Stir in sugar until dissolved. Pour in ice water and stir to combine.
- Chill tea in the refrigerator at least 1 hour before serving. Garnish each glass with a lemon wedge and a mint sprig. If desired, add a shot of bourbon. Serves 4 to 6.

REAL SOUTHERN SWEET TEA
You will need the following: 1 gallon drink pitcher 3qt sauce pan (I use a stainless steel pan so I can see the color.) My family, for every family get-together, begs me to make my tea and bring it with me. They always tell me it's the best tea they've ever tasted, so I thought I'd post it here. NOTE: This tea is NOT diabetic friendly!

- In the sauce pan, put the tea bags and fill it up with water, almost to the top.
- Put your eye on 7 (about 1/2 way between med and med-high) Put the sugar into the pitcher.
- Stand over the pot and watch it simmer until it's very very dark, ALMOST the color of coffee.. should take 15-20 minutes. Then once it reaches the right color, turn the eye up to high and allow it to come to a rolling boil. Let it boil for around 4 minutes.
- Remove the pot from the heat and spoon out the tea bags with a slotted spoon. Throw them away. Pour the hot tea (I call it tea concentrate) into the pitcher and stir until the sugar is dissolved. Run cold water into the pot and fill the pitcher up to almost the top. Stir.
- Put the pitcher into the refrigerator and allow it to sit in there at least 24 hours before it's served.
- Pour over ice in a glass and enjoy!

- Bring 1 quart of water room-temperature to a boil in a saucepan. Pour the boiling water into a pitcher or large bowl, add the loose tea, and let steep for 5 to 10 minutes.
- In the meantime, fill a large pitcher (large enough to hold at least 2 quarts of liquid) with the remaining 1 quart room-temperature water.
- Strain the brewed tea into the pitcher containing the room-temperature water. Discard the tea leaves. Set the pitcher aside.
- In a small nonreactive pot, combine the sugar and cold water. Bring to a boil over medium heat, stirring to dissolve the sugar. Add the lemons and remove from the heat. Allow to cool for 10 minutes. Strain the lemon-sugar syrup into the pitcher. Discard the lemon slices. Refrigerate the sweet tea until serving time.
