This is a super easy granola recipe. It isn't overly sweet and is a real crowd-pleaser. It also makes your house smell fabulous for hours after you bake it. I normally add about 2 Tbsp. wheat germ and a tsp. brewers yeast to my dry ingredients - for nutritional value.

4 cups rolled oats
1/2 teaspoon salt
1 cup almonds (or other nuts, chopped)
1 tablespoon ground cinnamon
2 tablespoons ground flax seeds (optional)
1/3 cup oil (coconut oil works really well)
2/3 cup honey
1 teaspoon vanilla extract

Steps:

  • Heat oven to 300 degrees.
  • Combine oats, nuts, salt, cinnamon and flax in a large bowl and set aside.
  • Combine oil, honey and vanilla in another, smaller bowl.
  • Mix wet ingredients into dry - you may need to use your hands.
  • Then spread the mixture onto two cookie sheets lined with foil or parchment.
  • Bake 10 minutes. Then remove from oven and stir.
  • Bake an additional 10 minutes or until slightly golden.
  • Remove from oven and allow to cool completely.
  • When cooled, transfer into an airtight container for storage.

4 cups old-fashioned rolled oats
1 1/2 cups sliced almonds
1/2 cup light brown sugar
1/2 teaspoon cinnamon
3/4 teaspoon kosher salt
1/4 cup salted butter, (melted)
1/3 cup honey
2 teaspoons vanilla
1 egg white

Steps:

  • Heat oven to 300 degrees F. Prepare a baking sheet by lining with parchment paper. Move the center rack up a level so it's on the second level from the top.
  • Mix the oats, almonds, brown sugar, cinnamon, and salt together in a large mixing bowl until combined. In a small, separate bowl, stir the melted butter, honey, vanilla and egg white together, then drizzle over the oat mixture, stirring together until well-combined.
  • Transfer the granola mixture to the prepared baking sheet and spread it out in an even layer. If you want large chunks of granola, flatten into an even layer with a spatula, adding pressure so the granola is nice and compact. Bake for 30-35 minutes, rotating the pan once halfway through for even toasting, until golden and crispy and the almonds look lightly toasted.
  • Remove from oven and let the granola cool completely before transferring to an airtight container. Keeps for 2 weeks at room temperature.

2-3 tablespoons real maple syrup or honey
2 tablespoons virgin coconut oil (or other healthy cooking oil)
½ teaspoon vanilla extract
1 large pinch of fine sea salt (about 1/8 teaspoon; I use Real Salt)
2 cups whole rolled oats (aka old fashioned oats, preferably organic)
½ cup raw nuts, chopped (or slivered almonds; you don't need to chop them)
¼ cup raw pumpkin seeds
2 tablespoons raw sunflower seeds
½ cup unsweetened dried fruit, chopped (optional; I like unsweetened dried cranberries)

Steps:

  • Preheat the oven to 300º F (177° C). (If your oven runs cool or is older, 325º F also works.)
  • Combine the oil and maple syrup (or honey), vanilla extract, and salt in the bottom of a large bowl (mixing bowl is best) and give it a quick stir. The coconut oil might be solid depending on your climate (it has a melting point of about 75ºF), and that's ok! A rough mix to incorporate the vanilla into the coconut oil and sweetener is all you need to do here.
  • Add the rest of the dry ingredients, use your clean hands to mix well, and toss it to coat. It will be sticky and messy, but that's the fun part. Your hands will warm the oil and melt it into the mixture if it's solid; just be sure to mix it all through the other ingredients, so there aren't any chunks of oil left.
  • Spread the mixture in a thin layer on a rimmed baking sheet or sheet pan lined with parchment paper and bake for 10-12 minutes until very lightly toasted. (To make this recipe completely raw-friendly, dehydrate the mixture 5-6 hours at 115ºF in a food dehydrator instead.)
  • Cool 10-15 minutes before serving or storing.

1/2 cup crisped rice cereal
1/4 cup wheat germ or milled flax seed

Steps:

  • Preheat the oven to 300 degrees F.
  • In a large bowl, whisk together the cinnamon, ginger, 1/4 teaspoon salt, honey, oil, maple syrup, water, and vanilla together. Add in the oats, pecans, rice cereal, and wheat germ. Toss to coat completely.
  • Spread the granola out on a baking sheet lined with parchment and bake until dry and crisp, but not yet browned, 30 to 35 minutes, stirring once or twice. Allow to cool completely before storing in an airtight container.

  • Pour the honey mixture over the oats mixture and use your hands to combine them: Gather up some of the mixture in each hand and make a fist. Repeat until all of the oats are coated with the honey mixture.
  • Pour the mixture onto the prepared baking sheet. Spread it out evenly, but leave a few clumps here and there for texture.
  • Bake for 10 minutes, then remove from the oven and use a metal spatula to lift and flip the granola. Sprinkle the almonds over the granola and return the baking sheet to the oven.
  • Bake for 5 minutes, then remove from the oven and use a metal spatula to lift and flip the granola. Sprinkle the hazelnuts over the granola and return the baking sheet to the oven.
  • Bake for 10 minutes, then remove from the oven. Let cool completely. Sprinkle the raisins and cherries over the granola and use your hands to transfer it to an airtight container.

This homemade granola recipe is a treat I've made for many years. It's a simple recipe that combines pantry/fridge staples: flaked coconut, rolled oats, warm spices, honey, butter, and nuts. The combination is then baked and cooled for a toasty and crunchy granola.

3 cups old-fashioned rolled oats
1 cup unsweetened coconut flakes
1/4 tsp salt
1 cup raw nuts (or seeds of choice, I like cashews, coarsely chopped)
1 tsp ground cinnamon (increase to 1 1/2 tsp for more flavor)
1/2 tsp ground cardamom
1/2 tsp ground ginger
1/2 cup honey
6 TB butter
2 tsp pure vanilla extract
1/2 cup raisins (or dried cranberries, optional)

Steps:

  • Preheat the oven to 300F.
  • In a large bowl, combine the rolled oats, salt, coconut flakes*, nuts or seeds, and spices. Set aside.
  • In a small saucepan, over medium-high heat, heat the honey and butter. Carefully watch and stir the honey and butter mixture, allowing it to come to a boil. Once boiling, remove the honey and butter from the heat and add the vanilla extract (stand back as the alcohol in the vanilla extract will cause a rapid boil). Pour the honey mixture over the oat mixture, and stir until well combined.
  • Spread the granola over a baking sheet (covered in parchment paper for easy cleaning). Bake the granola for 35-45 minutes on the middle shelf of the oven, until golden brown. Halfway through baking (the 18-20 minute mark), carefully stir the granola so the sides don't burn. Watch the granola carefully towards the end of the cooking time as every oven cooks a bit differently. Granola can quickly turn from golden brown to burnt. Once the granola is golden and has a toasted aroma, it's ready to pull out of the oven. Golden brown and toasted aroma are the key words to remember when making granola!
  • Remove the granola from the oven to cool. If you'd like to add dried fruit to the granola, add the raisins or dried cranberries now and quickly stir them into the warm granola. As the granola cools, the granola will harden creating a crispy granola that's perfect for yogurt or snacking. Store the cooled granola in an air-tight container on the counter for a few days (I let my granola sit for about 7 days) or in the freezer for several months.

Steps:

  • Mix oatmeal, almonds and dried cranberries in a large bowl
  • Mix olive oil, honey, water, vanilla, cinnamon and brown sugar in a medium bowl
  • Microwave for 2 minutes
  • Pour over oatmeal and stir
  • Lightly grease two pans with cooking spray
  • Spread the granola mixture on pans evenly
  • Bake at 250* for 2 hours, stirring occasionally
