Boston Baked Beans image

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

10 cups water
2 cups dried navy beans
8 slices crisply cooked bacon, crumbled
½ cup chopped onion
½ cup packed brown sugar
¼ cup molasses
1 teaspoon salt
3 cups water

Steps:

  • Bring 10 cups water and navy beans to a boil in a large pot; cook at a boil for 2 minutes. Stir bacon, onion, brown sugar, molasses, and salt into the water.
  • Carefully pour the mixture into a slow cooker.
  • Cook on High, stirring occasionally, for 4 hours.
  • Stir 3 cups water into the mixture. Continue cooking until beans are tender, about 2 hours 15 minutes more.

Doctored-up "canned beans" are OK if you're in a hurry...I've done it more than once, but for REAL Baked Beans, give these a try! The aroma of them baking in the oven is heavenly!!! A stoneware bean pot is preferred, but you can use a small covered roaster or casserole if need be. My Dad always used lean salt pork, but I prefer to use a good smoked bacon.

1 lb navy beans
2 teaspoons baking soda
water
1/2 cup light molasses
1/2 cup catsup
1/2 cup light brown sugar
2 teaspoons Worcestershire sauce
2 teaspoons seasoning salt, Lawry's preferred
1 teaspoon dry mustard
1 teaspoon black pepper
1/2 cup onion, chopped
1/2 lb thick slab bacon, diced (thick sliced is OK)

Steps:

  • THE NIGHT BEFORE:.
  • Wash & sort beans for any small stones.
  • Place in a large kettle & cover with water, about 3 inches above the beans.
  • Cover & soak overnight.
  • THE NEXT MORNING:.
  • Drain & add 6 cups fresh cold water.
  • Stir in the baking soda (this helps remove the "music" afterwards, but no guarantees. LOL!).
  • Cover & bring to a boil -- WATCH CAREFULLY so as to not boil over!
  • Reduce heat & simmer for 10 minutes.
  • Drain & reserve the bean water.
  • Preheat oven to 300°.
  • Add remaing ingredients plus 2 cups of the reserved bean water.
  • Place everything into the bean pot (or whatever you're using) & cover.
  • (Use double-thick aluminum foil to cover if need to.).
  • Bake for 3 to 4 hours.
  • IMPORTANT: Check every couple of hours, adding more bean water if needed, so the beans don't cook dry.

Old Fashioned recipe for Baked Beans are made from scratch with a sweet and savory maple sauce.

1 1/3 cups dried navy beans (soaked overnnight )
3 slices thick nitrate free bacon (chopped)
1/4 cup onion (chopped)
1/2 cup tomato sauce (or ketchup)
1/4 cup molasses
1/4 cup brown sugar (use up to 1/2 cup if you like REALLY sweet beans)
1/4 cup pure maple syrup
1 teaspoon kosher salt
2 teaspoons dry mustard
1 tablespoon apple cider vinegar
1/2 cup apple juice (or water)
1/2 cup water

Steps:

  • Place dried beans in a container that can be fitted with a lid. Pour fresh water over beans until the water is at least 1 inch above beans. Seal container shut. Soak beans for 8-12 hours.
  • After soaking, drain beans. Add soaked beans to a large stock pan. Cover beans by 1 inch with fresh cold water.
  • Bring water to a rapid boil, and reduce to a simmer. Simmer for 1 hour. Drain cooked beans well.
  • After soaking the beans, you can speed up the process by cooking the soaked beans in the Instant Pot.
  • Preheat oven to 300 degrees.
  • Heat a large skillet over medium-high heat.
  • Add in the sliced bacon. Cook until bacon begins to render fat and then stir in the chopped onion. Saute bacon and onions together until onions begin to soften and bacon is browned and slightly crisp. This should take about 5-6 minutes. Drain off excess fat off bacon.
  • Mix together tomato sauce, brown sugar, molasses, maple syrup, dried mustard, vinegar,apple juice, water, and salt together. Add in bacon and onion mixture and cooked beans and gently stir to combine.
  • Pour bean mixture into a 2-quart oven-safe dish. Beans should be pretty well submerged in liquid and mixture should be relatively loose. If there does not seem to be enough liquid in the baking dish, add up to 1/2 cup additional water or juice. Cover pan with foil or oven-safe lid.
  • Bake covered for 2 hours. Uncover and bake for another 30-40 minutes, until thickened.

  • The night before you plan to cook your beans, take your two cups of beans and put them in a saucepan or pot (after picking through them first quickly just to make sure there aren't any broken or shriveled ones). Pour enough water into the pan to cover the beans and let them sit over night.
  • In the morning, strain the beans and discard the water. (Since it was freezing cold outside, I ignored Fannie's instruction about throwing the water outside instead of in the sink. I'm not quite sure why she said that anyways...)
  • Give the beans a quick rinse in the strainer and then put them back in the saucepan with some fresh water. Let the beans simmer in the water for about 40 minutes. (Note: It's important not to let them go above a simmer or they could end up getting mushy.)
  • Strain the beans again and put them in whatever pot you plan to bake them in. If you want them to look truly authentic and old-fashioned, you can use a baked bean pot, or if you don't have one of those then you can use a casserole dish that will fit at least a quart or larger.
