REAL TEXAS CHILI
This chili contains no onions, beans or tomatoes. It is even better the next day. Season to your tastes as it may be too spicy for you. You can also add pinto beans, sour cream and lime juice, if desired.

Steps:
- Heat the oil in a large skillet over medium high heat. Saute the beef cubes in the oil for 2 minutes. Reduce heat to medium and stir in the garlic.
- In a small bowl, combine the chili powder, cumin and flour. Sprinkle over the meat and stir until evenly coated. Crumble the oregano over the meat and pour in 1 1/2 cans of the broth.
- Add the salt and ground black pepper, stir together well, bring to a boil, reduce heat to low and let simmer, partially covered for about 90 minutes. Pour in remaining broth and simmer 30 minutes more, until meat begins to fall apart. Cool, cover and refrigerate to allow the flavors to blend.

AUTHENTIC CHILI RECIPE, A.K.A. BOWL OF RED

Steps:
- Cook four slices of bacon in a large stockpot. Remove bacon and mince.
- Add beef to the pot and cook in the bacon drippings until very well browned.
- Add in 3 cloves of garlic, minced, 1 onion, diced, 1 cup of finely ground chile pods (I used guajillo and ancho). Grind pods in a blender or spice grinder until fine. Add 1 tablespoon cumin, 1 tablespoon salt and enough water to cover the beef.
- Return bacon to the pot.
- Simmer for 3 to 4 hours, stirring frequently, until cooked down and thickened.
REAL DEAL TURKEY CHILI RECIPE

- Heat the oil in a large pot and add the ground turkey, onion and peppers. Cook them down about 10 minutes, or until the turkey is cooked through and the vegetables are softened.
- Add the garlic and cook another minute, stirring.
- If using fresh tomatoes, chop them and add them to the pot. Cook about 10 minutes to let them break down. If using canned fire roasted tomatoes, just add them to the pot and go to the next step.
- Add the remaining ingredients and give it all a good stir.
- Cook the chili on low for at least 1 hour to let the flavors develop, stirring every now and then. Adjust for seasonings if you wish.
- Serve in bowls with your favorite fixins.

- In a large skillet, brown and then drain the fat off of your ground beef. Set aside.
- Run the stewed tomatoes through a food processor and add to a large pot.
- Next, run your diced tomatoes with green chiles and add them.
- Run your celery stalk through the food processor next and add it to the chili.
- Add the ground beef and onion. Stir well.
- Add the tomato paste, vinegar, and spices. Stir well.
- Bring to a low boil and then reduce to a low heat let simmer for about two hours. Stir occasionally.

- First, heat a large stockpot over medium/high heat.
- Add ground beef to the stockpot and let it cook for 1-2 minutes, being sure to break it up into small pieces.
