BACON POPCORN
This is a flavorful popcorn treat that makes your mouth water and disappears fast! If you toss the cooked popcorn in a paper bag, it helps to absorb any extra grease, and keeps kernels from falling to the floor. The leftovers make nice snacks for lunch boxes.

Steps:
- Measure the bacon grease into a 6 quart pot and place over high heat. Add one or two popcorn kernels as testers. When the test kernels pop, add the rest of the popcorn and cover with a lid. As the popcorn starts to pop, shake the pan back and forth constantly to keep the unpopped kernels on the bottom where they can pop. When the popping slows down, remove the pan from the heat and let it finish popping.
- Pour the popcorn into a large bowl or paper sack. Season with half of the seasoned salt and stir. Taste before adding more salt if desired. Toss with bacon bits and shredded Cheddar cheese for an extra special treat. Store leftovers in lunch sacks or sandwich bags.

- Place bacon and vegetable oil in a large, deep pot with a tight-fitting lid over medium heat. Cook and stir bacon until crisp and brown, 8 to 10 minutes. Scatter the popcorn into the pan with the bacon and drippings and cover with the lid. When you hear kernels of popcorn begin to pop, shake the pan vigorously until popping slows to 1 or 2 pops per about 30 seconds.
- Remove lid facing away from you to avoid steam and transfer bacon popcorn to a large serving bowl. Season to taste with salt if desired.

- Arrange bacon side by side on a plate lined with parchment paper. Cover with another sheet of parchment paper or microwave-safe cover and cook on high for 4-6 minutes. Rotate the plate half way through cooking so bacon cooks evenly. Place bacon on a paper towel lined plate to drain, then crumble or slice into small pieces and add to popcorn.
- Add butter to a microwave safe bowl and heat on high for 30 seconds. Rotate and heat for another 15-30 seconds, watching to be sure it doesn’t boil over.
- Pour butter over popcorn then sprinkle with truffle salt. Mix to combine. Then add parmesan cheese and toss to coat. Serve warm or at room temperature.

- Add 3-4 Tablespoons bacon grease* to your Dutch oven along with 3-4 popcorn kernels. Cover with the lid and heat over medium heat for about 2 minutes or until you hear the kernels pop. *(See Note 1)
- When you hear the test kernels pop, you'll know the bacon grease is the right temperature for cooking the popcorn. Add the popcorn to the pan and cover with the lid.
- Cook over medium heat for approximately 2-3 minutes, shaking the pan about every 30-60 seconds to help keep the popcorn from burning. When the pops begin to slow, remove from the heat but leave the lid on for 15-20 seconds because there can be some late bloomers that can pop up and burn you if you're not careful.
- Move the popcorn to a large bowl using a large slotted spoon so you can easily sort out the unpopped kernels.
