RE-BAKED POTATOES

Re-baked Potatoes image

These started out as breakfast for Christmas morning. I added all the goodies that I liked on a baked potato. Another great thing is that this can be made ahead of time. THE BAKED POTATO

The Baked Potato image

Provided by Alton Brown

Categories     side-dish

Time 1h10m

Yield 1 potato per person

Number Of Ingredients 4

1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
Canola oil to coat
Kosher salt
Optional toppings, such as butter, sour cream, shredded Cheddar and/or scallions

Steps:

  • Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
  • Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.

TWICE-BAKED POTATOES

Twice-Baked Potatoes image

Try this recipe for Ree Drummond's classic Twice-Baked Potatoes from Food Network.

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h50m

Yield 12 to 16 servings

Number Of Ingredients 10

8 baking potatoes, washed
3 tablespoons canola oil
2 sticks salted butter
1 cup bacon bits (fry your own!)
1 cup sour cream
1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping
1 cup whole milk
2 teaspoons seasoned salt
3 green onions, sliced
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they're sufficiently cooked through.
  • Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Lower the heat to 350 degrees F.
  • With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into the mixing bowl, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.
  • Smash the potatoes into the butter, bacon and sour cream. Add the cheese, milk, seasoned salt, green onions and black pepper to taste and mix together well. (IMPORTANT: If you plan to freeze the twice-baked potatoes, do NOT add the green onions.)
  • Fill the potato shells with the filling. I like to fill the shells so they look abundant and heaping. Top each potato with a little more grated cheese and pop 'em in the oven until the potato is warmed through, 15 to 20 minutes.

THE ABSOLUTE BEST EVER TWICE BAKED POTATOES

The Absolute Best Ever Twice Baked Potatoes image

The best ever twice baked potatoes recipe! The seasoning salt is what makes these scrumptious!

Provided by Karlynn Johnston

Categories     Appetizer

Time 1h40m

Number Of Ingredients 10

4 large baking potatoes (russet)
6-8 slices bacon
1/4 cup sour cream
1/2 cup of cream cheese
1/2 cup milk
1/2 cup of butter
1/2 teaspoon seasoning salt
1/2 teaspoon pepper
1 cup or so of shredded Cheddar cheese
green onions

Steps:

  • Pierce each potato with the tines of a fork. Bake your potatoes on a baking sheet, bare with no tin foil, in a 400 degree oven until soft - anywhere from 40-50 minutes depending on the size!
  • Start your bacon cooking, chop it into little slices and cook in a pan.
  • Slice the potatoes in half when they are cool enough to handle.
  • Carve out the soft insides, as much as you want, and put it in the bowl. Leave some in the potato to hold the shape. I find then when you eat it, you can literally just carve off bites one at a time, instead of a mushy mess.
  • Add in your butter, sour cream and cream cheese to the potato filling, mixing in completely.
  • Add milk until they are the perfect texture for your palate.
  • Mix in the seasoning salt and pepper.
  • Drain the cooked bacon and add it and half a cup of cheese to the filling, mixing in completely.
  • Add in green onion to taste, start with a 1/4 cup.
  • Stuff the potatoes with the filling and add the rest of the cheese on top.
  • Bake at 350 degrees for 15 minutes.
  • Serve these with sour cream sprinkled with a little seasoning salt.

  • Ghurma Aloo. Cumin and turmeric give this 30-minute vegetarian stew—whose origins are Iranian—its smoky, warming flavor and vibrant color. Mash some of the cubed potatoes if you prefer it thicker.
  • Cabbage Potato Pie. Potatoes and cabbage together make the ultimate comfort food. Adding cheese gilds the lily in a good way. Get This Recipe.

  • Pickle Potato Salad. This pickle brine–inspired dry rub turns potatoes and carrots crispy-creamy with pleasantly sharp vinegary tang. Toss them, still warm, with leftover shredded chicken and crunchy raw celery, onion, and yes, sliced pickles for a double-the-pickle, double-the-fun dinner salad.
  • Spanish Frittata with Herby Yogurt and Greens. The potatoes are what make this the love child of a Spanish tortilla and an Italian frittata. Serve with a crisp green salad.

  • Smoked Trout Croquettes. These bite-size mashed potato croquettes are filled with smoked trout, mozzarella, Parmesan, and chives. Get This Recipe.
  • Carne Asada Cheese Fries. Some say cheese fries, some say nachos. We say: Why choose? These crispy seasoned fries are loaded with skirt steak and silky cheese sauce, and best served with all the fixings: sour cream, salsa, avocado, and the like.
