I hope you like these fudgy little wonders. I made this recipe up a long time ago and thought it was so good I wrote it down and put it into my recipe box so I could make them again. Enjoy!

Number Of Ingredients 7

1 pkg (10 oz) chocolate morsels
1/3 pkg 3.3 oz (scant half cup) butterscotch morsels
1 can(s) eagle brand milk (14 oz)
1 jar(s) (small) marshmallow cream
1/2 c chopped walnuts
1/2 c raisins
1/2 c more chopped walnuts for rolling

Steps:

  • 1. Place the chocolate and butterscotch morsels in double boiler and melt. (Can do in regular pan on very low heat -- do not cook, simply melt.)
  • 2. Add milk and stir till blended
  • 3. add marshmallow creme and stir
  • 4. add 1/2 C chopped walnuts and raisins
  • 5. Form into balls and roll in the other 1/2 C chopped walnuts
  • 6. NOTE: You will need to work quickly as this sets up pretty fast...

RUM BALLS

I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

1 (12 ounce) box vanilla wafer cookies (such as Nilla®)
1 cup semisweet chocolate chips
¼ cup light corn syrup
¾ cup dark rum (such as Meyer's®)
1 cup confectioners' sugar, plus more for dusting

Steps:

  • Place vanilla cookies in a food processor and process into fine crumbs.
  • Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
  • Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
  • Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
  • Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

1 1/2 lb milk chocolate, broken into pieces ( i used dark)
1 c whipping cream
2 c ground walnuts, toasted

Steps:

  • 1. Melt chocolate in a heavy saucepan over low heat, stirring until smooth. Meanwhile, beat whipping cream at medium speed with an electric beater until soft peaks form. Gradually add melted chocolate, and beat 15 minutes. Cover and chill 8 hours.
  • 2. Working quickly, shape half of chocolate mixture into 1-inch balls. Place balls on a wax paper-lined rimmed baking sheet. (Keep remaining half of chocolate mixture chilled.) Repeat procedure with remaining chocolate mixture. Roll balls in walnuts until completely coated. Store in an airtight container in refrigerator.

It was just one of those of days when I had to have chocolate and I came up with this variation on fudge. Cooking time is actually 'chill' time.

1/4 cup butter
2 cups mini marshmallows
1 tablespoon cocoa
1 (12 ounce) package semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk

Steps:

  • Melt the butter in a large pot then add the cocoa and marshmallows. Continue melting over low heat and gradually add the chocolate chips and the milk. Once all the ingredients are blended and smooth, pour into a medium bowl and chill.
  • After chilled, roll the fudge into balls and coat with whatever you like - powdered sugar, coconut, chopped nuts, etc.
  • Keep refrigerated.
