I found this on Gone Raw. I had been dreaming about making it for sometime and finally decided to treat myself on Memorial Day. Very good, a much healthier version of a classic cookie! (Cook time is dehydrator time) More recipes like this one at: www.bellaraw.blogspot.com

Steps:
- For the Cookie: Blend the ingredients in a blender until it becomes dough-like and sticks together. Flatten out dough and cut out round shapes. You may want to coat your hands or whatever cookie cutter you are using in some nut flour to prevent it from sticking. Place cookies in dehydrator and dehydrate at 105 degrees until crispy, about 4-5 hours.
- For the Filling: Blend ingredients in a small bowl. Spread on half of the cookies, cover with the remaining cookies, and place in the fridge to harden, about 10-15 minutes. Serve with almond milk. YUM!

- First, prepare coconut butter and add vanilla and sweetener to taste (optional). Remove from food processor and set aside.
- Add nuts to the food processor and pulse until small bits remain. Then add dates, coconut oil, maple syrup (optional), cocoa powder, and salt and mix again until well incorporated (see photo). At the end, you should have a doughy texture that stays together when pressed between your fingers.
- Taste and adjust flavor as needed, adding more cocoa powder for chocolate flavor, dates (or maple syrup) for sweetness, or salt for saltiness.
- Line a flat surface or large cutting board with parchment or wax paper and place the dough in the center. Form into a 1-inch disc with hands and then top with another piece of parchment or wax paper.

- For 4 hours, or overnight, remove the pits from your dates and soak them in a bowl with just enough water to cover them completely.
- Once your dates are soft, combine all the dry ingredients together(almond flour, cocoa, and sea salt) in a large bowl. Add in the maple syrup and vanilla extract, and combine.
- Taking your dates directly from the bowl they were soaking in, don’t drain them too much (the excess water is not bad) break them apart with your hands inside of the dry ingredients. The dates should be soft enough to distribute easily throughout the almond flour to create a consistent dough. If not, throw everything into a food processor and pulse until it forms a dough.
- On a clean surface, roll out the dough to about ¼ in thickness. Cut the dough with a 2 in cookie cutter. Place the cookies on a cookie rack and freeze for about 15 minutes while you prepare the double stuffed filling.
