CHOCOLATE TORTE WITH WHIPPED CASHEW CREAM



Chocolate Torte with Whipped Cashew Cream image

1/2 cup cashews
1/2 cup pecans
1 tbsp coconut oil
1 tbsp cacao butter (melted)
1 tsp agave
1 tsp lemon juice
1 cup Irish moss (paste)
1 cup cashews
1 1/2 cup cacao powder
3 cups cacao butter (grated or chopped, which has then been melted)
1 cup agave nectar
1/2 cup water
1 tbsp lemon juice
1/2 tsp tamari
1 tsp vanilla extract
1 cup cashews (soaked for 2 hours or more)
1/2 cup water
3 tbsp Irish moss (paste)
1/2 tsp vanilla extract
1/4 cup agave nectar
1 tsp lemon juice
1 pinch salt
1 tbsp macadamia oil (optional)

Steps:

  • Pulse all base ingredients in a food processor until they bind.
  • Press into a 9″spring-form cake pan and place in the fridge to set.
  • Blend all filling ingredients in a high-speed blender until smooth and pour on top of the base.
  • Leave in the fridge to set.
  • Blend all cream toppings ingredients in a high-speed blender until smooth.
  • Serve with chocolate torte and fresh berries.

In the process of making this easy dessert right now. I have the base made and it is delicious. Who knew Raw could be so good!!!! Found the recipe by Alice Cohen The Raw Food Diet. Can't wait to serve it up! Prep time does not include soaking time. Edited to add- I just made this again for my DIL and found it is much prettier with chopped walnuts on top.

Number Of Ingredients 5

2 cups raisins
2 cups walnuts
1 cup dates (pitted and soaked at least one hour and up to overnite)
1/2 lemon (juiced)
1/4 cup walnuts, chopped (optional)

Steps:

  • In a food processor, combine raisins and walnuts and blend until well blended and moist. (This will take a few minutes and you may see it forming a ball. Just make sure the raisins come out looking like a fudgy mixture and are not still grainy).
  • In a food processor, combine dates and lemon juice until smooth and creamy.
  • Spread the frosting on top of the torte.
  • Sprinkle on chopped walnuts (optional).
  • May or may not refrigerate before serving. Firmer for cutting if refrigerated.

  • The first thing we need to do is liquidise the cacao butter and coconut oil, so put them in separate containers and place in a warm dehydrator. If you don’t have a dehydrator, then you can do this on a stove (if you haven’t sold it yet!) but you have to be really careful not to let it get too warm. You can also do it in a glass bowl over another bowl of hot water, you know, like your Mum used to do when she made a cake with chocolate!
  • Next make sure your cashew butter is out of the fridge, as it will be easier to work with at room temp.
  • Process all the dry ingredients in a processor, then add coconut oil and vanilla extract. Be sure not to overprocess nuts, as they will release their oil and become ‘sludge’!
  • Mix the water, cacao powder and avocados in a blender. In a large bowl, add this mixture to the cashew butter and stir well by hand. If you have a Vitamix, you don’t need to mix by hand. You can do this first step and the next step in the Vitamix, but do remember to add the cacao butter last, after everything has been blended.
