MOM'S SOFT RAISIN COOKIES
With four sons in service during World War II, my mother sent these favorite cookies as a taste from home to "her boys" in different parts of the world. These days, my 11 grandchildren are enjoying them as we did, along with my stories of long ago.- Pearl Cochenour, Williamsport, Ohio

Steps:
- Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 12-14 minutes or until golden brown. Remove to wire racks to cool.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream the shortening and brown sugar. Add eggs, mix well. Sift together the flour, cinnamon and baking soda; stir into the creamed mixture. Finally, stir in the milk and the raisins.
- Drop dough by rounded spoonfuls onto an unprepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Remove from baking sheet to cool on wire racks.

Steps:
- 1. Preheat the oven to 350°F.
- 2. Prepare baking sheet with parchment paper.
- 3. Plump the raisins in hot water in a small bowl for 10 minute.
- 4. Drain well and pat dry with paper towels.
- 5. Mix the flour, baking powder, cinnamon, nutmeg, ans salt in a medium bowl.
- 6. Mix the milk and lemon juice in a small bowl.
- 7. Beat the butter and both sugars in a large bowl with an electric mixer at high speed until creamy.
- 8. Add the eggs, beating until just blended.
- 9. Mix in the dry ingredients, milk mixture, and raisins.
- 10. Drop teaspoons of dough 1 inch apart onto prepared baking sheet.
- 11. Bake until just golden 12-15 minute.
- 12. Transfer to racks to cool.
OLD-FASHIONED RAISIN SUGAR COOKIES

- Preheat the oven to 425°; lightly grease (or line with parchment) two baking sheets.
- In a bowl, beat together the butter, sugar, vanilla, baking powder, and salt.
- When smooth, beat in the egg.
- Add the flour and raisins, stirring until well combined.
- Drop the dough by the tablespoonful onto prepared baking sheets.
- Using the bottom of a glass dipped in sugar, flatted the dough to a scant 1/2 inch thick.
- Bake the cookies for 9 minutes, until they are barely set and just starting to brown around the edges.
- Remove them from the oven, let them rest on the pan until you can move them without them breaking, then transfer to a rack to cool.
- *For crisp cookies, bake in a 350° preheated oven for 13-15 minutes, until the cookies are starting to brown around the edges.
NO SUGAR ADDED OATMEAL AND RAISIN COOKIES
Steps:
- Preheat your oven to 350. Prep a pan for nonstick- I use parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and ground cinnamon. Set this bowl aside.
- Now in a mixing bowl, cream together the granular sugar alternative and the butter. Then add the vanilla and the eggs, gently stirring them into the mixing bowl
- For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Then continue mixing the cookie dough until the ingredients are mixed together.
- Next, stir in the oatmeal and raisins by hand. Bake these cookies for 10-12 minutes or until the edges begin to brown

- 1. Place almonds in food processor. Process until very fine - slightly coarser than flour. You are making almond flour! Will still have a few small chunks, but that's ok.2. Place "almond flour" into large bowl. Add everything else except raisins. Stir with spoon until well combined, resembling cookie dough.3. Add raisins and stir again until will distributed.4. Place bowl in fridge for one hour. Once refrigerated for one hour, mold into cookie shapes. Serve immediately.5. Store leftover cookies in refrigerator. (Cookies are best served right out of fridge, otherwise they will crumble.)

- Position a rack in the center of the oven and preheat to 350 degrees F. Line 2 heavy large baking sheets with parchment paper.
- In a medium bowl combine the flour, oats, cinnamon, baking soda, salt, and allspice. Stir to blend well. In a large bowl combine the sugar, pumpkin puree, oil, syrup and vanilla; whisk to blend. Using a flexible rubber spatula, gradually stir the dry ingredients into the pumpkin mixture. Stir in raisins.
- For each cookie, drop 1 generous tablespoon batter onto the prepared sheet, spacing the mounds about 1 inch apart. (Or use a mini ice cream scoop.) Using moistened fingertips, flatten each to a 2-inch-diameter round. Sprinkle each cookie with a bit more raw sugar.
- Bake the cookies until brown and a bit firm to the touch, 17 to 20 minutes. Using a metal spatula, transfer the cookies to a rack and cool completely.
