Chocolate and greens? Yes, chocolate and greens! This was my first experience making a "green" dessert and it did not disappoint. The cacao masks the flavor of the greens and the result is a delicious (and healthy) cheesecake-like pie. I know it sounds a bit strange but give it a try--it's really very good. Number Of Ingredients 8

2 cups finely ground almonds
1/3 cup agave nectar
1 cup water
1/4 cup cashews
1/4 cup coconut oil
1/3 cup Agave
2 tablespoons cacao or 2 tablespoons carob powder
1 tablespoon spirulina (I used a green powder with a variety of greens)

Steps:

  • For the crust, mix almonds and agave in a bowl then press the mixture into the bottom of a 5 inch pie tin.
  • In a blender, combine the remaining ingredients and blend until smooth. Be patient; the cashews take a little extra time to fully grind. If you rush, your filling may be lumpy with pieces of cashews.
  • Pour mixture into pie crust and freeze.
  • Transfer to fridge about 10 minutes before serving. If the pie remains in the fridge for a while, the filling will melt and become runny.

2 tbsp raw cacao powder
2 tsp spirulina powder

  • Add all ingredients to a blender or food processor.
  • Blend on high speed until smooth.
  • Serve.

  • Grind the almonds in a food processor. It doesn't have to be a fine powder - a rustic blend works well for this.
  • Blend until everything starts coming together. If it doesn't come together then the dates may be a touch too dry, in which case you can add a tablespoon of water and blend. It is important NOT to add too much water because it might become too claggy. One tablespoon might be fine, if needed, try two tablespoons. Once the mixture sticks together when pressed between your fingers without crumbling, then you know it is fine.
  • Line a loaf tin (or similar sized container) with parchment paper and then press the base mixture into it evenly and firmly.

  • Process all crust ingredients into a moist sticky crumble in a food processor. Transfer into a small square glass container (I used one that’s 6″ x 4″, but anything of a similar size should work) fully lined with parchment paper and press down firmly into a crust. Freeze while working on the next step.
  • Blend all filling ingredients into a completely smooth and creamy consistency in a power blender. Transfer this mixture into the pan with the prepared crust. Smooth out the top and tap the pan on the counter lightly to even the mixture out. Freeze for 5-6 hours or overnight to set.
  • Once set, remove from pan and cut into slices. Decorate with desired toppings and enjoy! Keep the dessert frozen until serving time.
