She (and many studies) claim food is healthier this was and retains more nutrients. Well I don't know about the claims, but this sure sounds good!

8 apples, peeled and chopped
1 cup raisins, soaked and drained
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons lemon juice
2 cups walnuts
1 cup pitted dates
1 teaspoon cinnamon
1/8 teaspoon salt

Steps:

  • To make filling, in a food processor, place 2 apples with raisins, cinnamon and nutmeg, process until smooth.
  • In a bowl place remaining chopped apples and toss with lemon juice.
  • Pour pureed filling mixture over top, mix well.
  • Spoon apple mixture into a med sized lasagna pan and set aside.
  • For crumble, in a food processor, pulse walnuts, dates, cinnamon and salt until coarsely ground.
  • Do not over mix.
  • Crumble the mixture over the apples with your hands and press lightly.
  • Serve immediately or let marinate for a few hours for extra flavor.

2 lbs granny smith apples or 2 lbs other green cooking apples, peeled,cored and sliced (16 slices per apple)
1/4 cup apple cider
1/4 cup flour
1/2 cup white sugar
1/2 cup brown sugar
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1 pinch salt
1/2 cup butter or 1/2 cup margarine

Steps:

  • Preheat oven to 350-degrees F.
  • Place apple slices in a 2-quart casserole or baking dish.
  • Pour cider over apples.
  • Combine next ingredients ingredients (flour-salt) in a bowl.
  • Cut in butter or margarine with two knives until mixture is crumbly.
  • Spoon mixture over apples, spreading evenly to cover all the apple slices.
  • Bake for 40-50 minutes or until apples are tender and topping is light brown.

  • Add the mulberries, dates, walnuts, vanilla bean seeds, and cinnamon to a food processor. Pulse the mixture a few times and then process until you have a crumbly, sticky mixture (about 1-2 minutes).
  • After you've peeled and cored the apples, roughly chop two of them. Add them to a food processor along with the medjool dates, cinnamon, and pinch of nutmeg. Pulse the mixture a few times and then process for 3-4 minutes or until a smooth apple-sauce-like texture is reached. You'll need to stop frequently to scrape the mixture down the sides of your food processor.
  • Add the pecans, coconut sugar, coconut oil, and cinnamon to a food processor. Pulse 20-25 times or until you have a coarse crumble.
  • Remove your crust from the freezer. Pour in the apple mixture, and use a spatula to spread it evenly into the crust. Sprinkle the cinnamon-pecan streusel over the apple layer and return the pie to the freezer for one hour to set.

  • Using a fork or spatula, press a little over half of the crumble mix into an 8-inch square pan. Evenly distribute the apples over top. Take the rest of the topping and sprinkle it evenly on top of the apple mixture.
  • Place in the refrigerator and chill for about 1-2 hours. Serve cold, at room temperature or warm.
