RAW APPLE CRUMBLE (NO BAKE)
From March 7th's Ottawa Citizen. The woman featured is a vegan who promotes raw living (raw living consists of no food being cooked at temperatures higher than 46C (115F). She (and many studies) claim food is healthier this was and retains more nutrients. Well I don't know about the claims, but this sure sounds good!

Steps:
- To make filling, in a food processor, place 2 apples with raisins, cinnamon and nutmeg, process until smooth.
- In a bowl place remaining chopped apples and toss with lemon juice.
- Pour pureed filling mixture over top, mix well.
- Spoon apple mixture into a med sized lasagna pan and set aside.
- For crumble, in a food processor, pulse walnuts, dates, cinnamon and salt until coarsely ground.
- Do not over mix.
- Crumble the mixture over the apples with your hands and press lightly.
- Serve immediately or let marinate for a few hours for extra flavor.

- Preheat oven to 350-degrees F.
- Place apple slices in a 2-quart casserole or baking dish.
- Pour cider over apples.
- Combine next ingredients ingredients (flour-salt) in a bowl.
- Cut in butter or margarine with two knives until mixture is crumbly.
- Spoon mixture over apples, spreading evenly to cover all the apple slices.
- Bake for 40-50 minutes or until apples are tender and topping is light brown.

- Add the mulberries, dates, walnuts, vanilla bean seeds, and cinnamon to a food processor. Pulse the mixture a few times and then process until you have a crumbly, sticky mixture (about 1-2 minutes).

- Remove your crust from the freezer. Pour in the apple mixture, and use a spatula to spread it evenly into the crust. Sprinkle the cinnamon-pecan streusel over the apple layer and return the pie to the freezer for one hour to set.

- Peel and thinly slice apples. Place slices in a pan with the rest of the filling ingredients and cook over medium heat, stirring occasionally until tender, about 10-12 minutes.
- While apples are cooking, combine almond flour, coconut flour and salt together in a small bowl and mix with a fork, breaking up any clumps. Add the coconut oil, maple syrup, and vanilla and mix until well combined.
- Using a fork or spatula, press a little over half of the crumble mix into an 8-inch square pan. Evenly distribute the apples over top. Take the rest of the topping and sprinkle it evenly on top of the apple mixture.
- Place in the refrigerator and chill for about 1-2 hours. Serve cold, at room temperature or warm.
