DEVIL'S STEAK SAUCE
A brilliant steak sauce that really brings out the flavor of any type of grilled steak. It's best with eye fillet or Scotch steaks. Raspberry jam is the wildly inventive twist that really makes this sauce unique.

- In a saucepan over high heat, blend raspberry jam, brown sugar, Worcestershire sauce, tomato sauce, malt vinegar, hot pepper sauce, salt, and pepper. Bring to a boil over high heat, reduce heat to low, and simmer 10 minutes, or until thickened.

LONDON BROIL WITH RASPBERRY-BALSAMIC SAUCE
This came from Kroger's meat department, the Classic Comforts collection. I wanted to get them all saved as I find it difficult to hang on to little recipe cards. Steps:
- 1. In a small bowl, combine 1/4 cup of the wine, 1/2 cup of the vinegar, half the minced garlic, half the minced shallots and 2 tablespoons of the oil. Pour into a large resealable plastic bag. Add steak, seal bag, and turn to coat. Refrigerate at least 8 hours, turning occasionally.
- 2. Heat a large grill pan over medium-high heat. Remove steak from marinade, discard marinade. Pat steak dry with paper towels. Brush steak with 1 tbsp oil, and season with salt and pepper to taste. Place steak in grill pan. Cook 8 minutes per side. Reduce heat to medium-low; cook 4-5 minutes more or until an instant-read thermometer registers 125°F. Transfer to a cutting board and let stand 10 minutes.
- 3. Meanwhile, for the sauce, in a small saucepan heat remaining 1 tbsp oil over medium-high heat. Add remaining minced shallots; sauté until soft. Add remaining garlic, cook 1 minute. Reduce heat to medium; add remaining 1/4 cup wine, remaining 1/2 cup vinegar, and raspberry preserves. Cook, stirring, 5 minutes or just until thickened. Season with salt and pepper to taste.
- 4. Thinly slice steak across the grain. Place slices on a warmed serving platter, drizzle with sauce, and serve.
SIRLOIN STEAKS WITH RED WINE BERRY SAUCE
Yep, it's that good. And although it sounds fancy, it is really easy to make. Throw a couple of potatoes in the oven, roast some asparagus and sit down to an incredible meal- candelight optional. From a little recipe card I found at the grocery store.

Steps:
- Cut Sirloin into 2 steaks: season to taste with salt and freshly gournd pepper.
- Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add steaks to skillet and sear well on both sides. Reduce heat and cook for 3 to 5 more minutes on each side or until steaks are cooked to your liking. Remove from skillet and keep warm.
- Add 1 tablespoon butter and shallots to skillet. Saute over medium heat until soft or until soft and lightly browned. Stir in red wine, raspberry jam, dijon, and herbs de Provence. Cook over medium high heat for about 10 minutes, stirring occasionally, until sauce is thick and syrupy and reduced by half. Serve sauce over steaks.
