RASPBERRY SNOW BARS



Raspberry Snow Bars image

Yield 24 bars

Number Of Ingredients 9

3/4 cup shortening
3/4 cup sugar, divided
1/4 teaspoon salt
1/4 teaspoon almond extract
2 egg yolk
1 1/2 cups all-purpose flour
1 cup raspberry preserves
1 cup flaked coconut
2 egg whites

Steps:

  • Cream the shortening, 1/4 cup sugar, and salt in a mixer bowl until light and fluffy. Beat in the almond extract and egg yolks. Add the flour and mix well. Pat the dough over the bottom of a 9x13-inch pan. Bake at 350° for 15 minutes. Spread the preserves over the hot crust. Top with the coconut. Beat the egg whites in mixer bowl until foamy. Add the remaining 1/2 cup sugar gradually, beating constantly until the egg whites form stiff peaks. Spread over the coconut. Bake for 25 minutes. Cool in the pan on wire rack.

¾ cup butter, softened
½ cup white sugar
½ cup brown sugar
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¾ cup raspberry jam
1 ½ cups rolled oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a medium bowl combine butter, white sugar, brown sugar, flour, baking powder and salt; mix well. Spread 2/3 of mixture into prepared pan.
  • Spread jam over mixture.
  • Combine remaining mixture with oats and walnuts; sprinkle over jam layer.
  • Bake in preheated oven for 30 minutes.

A light, airy raspberry bar cookie that melts in your mouth. (Believe I originally found this recipe on a can of Crisco many years ago.)

3/4 cup Crisco
3/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon almond extract
2 eggs, separated
1 1/2 cups flour
1 cup raspberry preserves
1/2 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees.
  • Cream Crisco, salt and 1/4 cup of the sugar until fluffy.
  • Blend in almond extract, egg yolks.
  • Mix in flour. (Flour should be sifted before measuring.).
  • Pat dough into ungreased 13" x 9" x 2" pan.
  • Bake 15 minutes.
  • Spread hot crust with preserves; top with cocunut.
  • Beat egg whites until foamy; gradually beat in the remaining 1/2 cup of sugar until stiff peaks form.
  • Spread egg-white mixture over coconut.
  • Bake 25 minutes.
  • Cool completely on rack.
  • Cut into 2 dozen bars.
