Another quick and easy dessert for oatmeal lovers. These raspberry oatmeal bars are crispy on the outside and soft on the inside. You can prepare this recipe with fresh or frozen raspberries. And the most important part: to make these delicious raspberry oatmeal squares you need only few basic ingredients.

1 cup (125g) All-purpose flour
1½ cups (135g) Rolled oats
1/2 cup (100g) Light brown sugar
1/2 teaspoon Baking soda
1/2 teaspoon Cinnamon *optional
1/4 teaspoon Salt
1/2 cup (115g) Butter, softened
300g (10.5oz) Raspberries, fresh or frozen
1 teaspoon Lemon zest
2 tablespoons (25g) Sugar
2 tablespoons (15g) Cornstarch
1 teaspoon Vanilla extract

Steps:

  • 1. Preheat oven to 350F (175C). Line a 8-inch (20cm) square baking pan with a strip of parchment paper. Set aside.2. Make the crumble: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.3. Make the filling: in a large bowl mix raspberries, lemon zest, sugar, cornstarch and vanilla extract. Set aside.4. Press 2/3 of the crumble mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.5. Bake for 35 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.

One of my favorite cookie bar recipes.

½ cup packed light brown sugar
1 cup all-purpose flour
¼ teaspoon baking soda
⅛ teaspoon salt
1 cup rolled oats
½ cup butter, softened
¾ cup seedless raspberry jam

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
  • Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
  • Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

170g Unsalted butter (softened)
0.5 tsp Salt
1 tsp Nielsen-Massey Vanilla Extract
65g Truvia baking blend
440g Raspberries (fresh or frozen)
65g Truvia baking blend
2 tsp Juice of one whole lemon
45g Cornflour
200g Porridge oats
230g Allinson's plain white flour
1 tsp Cinnamon (ground)
170g Unsalted butter (softened)
0.5 tsp Salt
1 tsp Nielsen-Massey Vanilla Extract
65g Truvia baking blend
440g Raspberries (fresh or frozen)
65g Truvia baking blend
2 tsp Juice of one whole lemon
45g Cornflour

Steps:

  • Step 1:Preheat the oven to 160°C, gas mark 2 and grease and line a 13" x 9" baking tin.Step 2:Place the oats, flour, cinnamon, butter, salt, vanilla and Truvía into a bowl, and using a free standing or hand held mixer, mix on low speed for about 1 minute.Step 3:Scrape the sides of the bowl and mix on a medium speed for approximately 2 minutes.Step 4:Place 2/3 of the oat mixture into the prepared baking tin; set aside the remaining 1/3 for the topping.Step 5:Press the oat mixture into bottom of tin to form crust.Step 6:For the filling: blend the raspberries, Truvía, lemon juice and cornflour until evenly mixed. Spread over the oat mixture.Step 7:Top with the remaining oatmeal mixture. Then place in the oven for 35-40 minutes until golden brown.Step 8:Cut into squares whilst still warm, then leave to cool completely.

1/3 cup Truvia® Baking Blend
4 cups raspberries (fresh or frozen)
1/3 cup Truvia® Baking Blend
2 teaspoons lemon juice
1/3 cup cornstarch

Steps:

  • Preheat oven to 325 degrees F.
  • Place oats, flour, cinnamon, butter, salt, vanilla and Truvia® Baking Blend in mixing bowl, mix on low speed for 1 minute.
  • Scrape sides of bowl, mix on medium speed for 2 minutes.
  • Place 2/3 of oat mixture into greased 13-by-9-inch baking pan; set aside remaining 1/3 of mixture for topping.
  • Press oat mixture into bottom of pan to form crust.
  • For filling: blend raspberries, Truvia® Baking Blend, lemon juice and cornstarch until uniform. Spread over pressed oat mixture.
  • For topping, add remaining oatmeal mixture.
  • Bake at 325 degrees F for 35 to 40 minutes until golden brown.

2 cups all-purpose flour, sifted
3/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees F.
  • Combine Truvia® Baking Blend, peanut butter, shortening, butter, egg and vanilla in a large bowl and mix on low speed until combined.
  • In a second, smaller bowl, whisk together flour, baking soda and salt. Add slowly to the larger bowl and mix until combined.
  • Shape dough into 1-1/4-inch balls, flattening slightly on the top and bottom.
  • Place cookies 3 inches apart on a parchment-lined or ungreased cookie sheet.
  • Using a fork, press a crisscross pattern in each cookie.
  • Bake 12 to 14 minutes or until lightly browned.
  • Allow to rest 5 minutes on pan, then place cookies on a wire rack to cool completely.

  • In the 2-quart bowl, toss the raspberries with the Truvía® Baking Blend, lemon juice, vanilla extract, and corn starch. Spread the raspberry mixture evenly over the oatmeal crust. Sprinkle the remaining oatmeal mixture over the raspberry filling.
