Oatmeal Raspberry Jam Bars are a one bowl recipe, consisting of a simple jam layer sandwiched between two layers of oatmeal crumble. A perfect breakfast bar, snack, or dessert for any time of day!

Time 35m

Number Of Ingredients 9

1 ⅓ cup old fashioned oatmeal
1 ⅓ cup all-purpose flour
½ cup brown sugar
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
9 Tablespoons unsalted butter (- melted)
1 Tablespoon vanilla
⅔ cup raspberry jam (- I use Smucker's Simply Fruit, for less sugar & calories)

Steps:

  • Preheat oven to 350 degrees, and prepare an 8x8 dish with parchment paper. Make sure the paper hangs off the sides so you can remove the bars.
  • Using a medium mixing bowl, combine the dry ingredients - the oatmeal, flour, salt, baking soda, and cinnamon. Mix, and then add the melted butter and vanilla. Using your hands, squeeze the mixture together until it mostly wet. The mixture doesn't have to form a bowl. It can be a bit loose.
  • Reserve about 3/4 cup of the crumble, and press the remaining amount into the prepared dish, spreading it to all sides with your hands.
  • Spread the jam over the crumble. If it's cold, you may need to microwave for about 30 seconds for easier spreading.
  • Sprinkle the reserved crumble over the jam layer.
  • Bake the bars in preheated oven, for approximately 25 minutes. Let them sit about 10 minutes before removing them to a cooling rack. Slice them into 12 bars, and EAT.

EASIEST EVER RASPBERRY JAM BARS

Easiest Ever Raspberry Jam Bars image

My Raspberry Jam Bars are ridiculously easy to make, and faster than most recipes because it uses melted butter rather than creaming it or rubbing it into the flour. These bars have an oatmeal biscuit base and crumbly oatmeal topping with raspberry jam sandwiched in the middle. Use whatever jam you want!

Time 45m

Number Of Ingredients 8

125 g / 1 stick unsalted butter (, melted)
1 1/2 cups / 225g plain flour ((all purpose flour))
1 1/2 cups / 135g rolled oats ((traditional oats, not quick, instant or steel cut))
1/2 cup / 110g brown sugar
1/2 tsp baking powder
Pinch of salt
1 egg
1 cup raspberry jam ((or other flavour of choice))

Steps:

  • Preheat oven to 180C/350 (fan forced). (Note 1)
  • Spray a 20cm/9" square tin with oil and line with baking/parchment paper with overhang (so it can be lifted out once cooked).
  • Mix together butter, flour, oats, sugar, baking powder and salt until you can no longer see white bits of flour. Add egg and mix.
  • Place 2 1/2 cups of the mixture in the tin and press into base. Spread with jam (Note 2), then use your hands to crumble the remaining mixture over the top (Note 3).
  • Bake for 30 - 35 minutes or until the top is deep golden. Remove and allow to cool in the tin before lifting out of the tin using the baking paper.
  • Cut into squares. Serve at room temperature. Store in airtight container.

SUNNY'S RASPBERRY AND OATMEAL LATTICE COOKIE SANDWICHES

Sunny's Raspberry and Oatmeal Lattice Cookie Sandwiches image

These are my favorite cookies to order at a place called Crave in Sherman Oaks, CA. I love nothing more than figuring out how to make something at home that I can't always get. They are super simple to make and will definitely be a hit at any holiday party or cookie swap as they are easy to transport!

Time 2h40m

Yield about 54 sandwiches

Number Of Ingredients 8

2 cups firmly packed light brown sugar
2 sticks (1 cup) salted butter
1/2 teaspoon pumpkin pie spice
2 1/2 cups rolled oats
3 tablespoons all-purpose flour
1/2 teaspoon almond extract
1 large egg, beaten
Heaping 1/2 cup seedless raspberry jam, for the filling

Steps:

  • Position a rack in the center of the oven and preheat the oven to 375 degrees F. Line a large baking sheet with parchment paper or nonstick aluminum foil.
  • Melt the base. In a medium pot on medium heat, add the brown sugar, butter and pumpkin pie spice. Cook, stirring, until the butter melts and the mixture is less gritty.
  • Finish the batter. In a large bowl, add the oats, flour, almond extract and egg and toss. Slowly add the butter mixture from the pot while constantly stirring the oat mixture.
  • Bake and rest. Use a teaspoon to drop the batter on the prepared baking sheet about 3 inches apart to allow spreading. This will take patience and several batches. Also, to avoid a big glob, try to gently press the oats so they aren't in a mound.
  • Bake on the center rack until the edges are caramelized and the centers stop rapidly bubbling, 5 to 6 minutes. Remove and leave on the baking sheet for 5 minutes, then transfer the entire sheet of parchment onto a wire rack. After a few more minutes, transfer the cookies from the parchment to rest directly on the wire rack. Continue until all the batter is cooked and the cookies are fully cool and rigid, 15 to 20 minutes.
  • Fill and serve. Pick 2 cookies with approximately the same size and shape and spread about 1/2 teaspoon of raspberry jam on the bottom/flat side of one cookie, then sandwich the matching cookie's bottom/flat side to the other; repeat until done. Store in an airtight container in a cool place, even the fridge, for up to 1 week. Happy holidays and happy cookie making!

Number Of Ingredients 10

1 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
1 1/4 cups brown sugar, packed
1/2 cup sugar
2 eggs
2 teaspoon vanilla
1 1/2 cup quick oats
1 cup seedless raspberry jam

Steps:

  • 1. Preheat oven to 375F. Prepare cookie sheets with silpat or parchment. In a small bowl, combine the flour, baking soda and salt. Set aside. Using the paddle attachment of your stand mixer, cream together butter and sugars until light and fluffy. Add eggs and vanilla; mix well. Slowly mix in the flour mixture, then stir in the oats by hand. Using a tablespoon of dough per cookie, roll into balls and place on cookie sheets, at least an inch and a half apart (they spread a lot). Bake for a total of 12-15 minutes, rotating the cookie sheets mid-way, until cookies are golden brown. Cool on cookie sheets for 5-8 minutes before removing and letting cool completely on wire racks. Spread a thin layer of jam on the bottom of one cook ie and top with another. Repeat until all cookies are used.
