Steps:
- Spread preserve onto 2 slices of sourdough bread.
- Sprinkle with pecans and green onions.
- Lay two cheese slices on each of the two bread slices.
- Top with remaining bread slices to make sandwiches.
- Spread butter on the outside of each sandwich.
- Grill on a hot griddle or in a hot skillet for 3-4 minutes on each side or until golden brown.
RASPBERRY, BRIE AND BLUE GRILLED CHEESE
We gave classic grilled cheese a tantalizing grownup taste by using brie, blue cheese and a layer of raspberry preserves.

Steps:
- Spread 1 side of each bread slice with butter. Place 1 slice, buttered side down, in small skillet. On same bread slice, carefully spread Brie (it helps to slice it a bit). Sprinkle with blue cheese. Spread raspberry preserves on unbuttered side of second bread slice. Place slice, buttered side up, on cheese-topped slice.
- Cook over medium heat about 5 minutes or until bottom is golden brown. Carefully turn; press down lightly. Cook 2 to 3 minutes longer or until cheese is melted and bottom is golden brown.

- First thinly slice enough brie to cover each slice of bread. You want to sandwich the raspberries between cheese to hold everything in place. Arrange the brie on one of the slices of bread.
- Then lightly chop the raspberries and spread them out over the cheese. Top the raspberries with another layer of brie and add the second slice of bread.
- Heat a skillet over medium low heat and add 1 teaspoon of butter. Once the butter melts, add the sandwich and cover the skillet. The brioche is so thick that you need to cover the skillet in order for the cheese to melt.
- After about 3 minutes the first side of the grilled cheese should be golden brown. At this point add the remaining butter to the skillet and flip the sandwich. Toast the second side of the bread, slice in half and eat immediately.
