Ice cream desserts needn't be fussy. This one's a snap, with berries blended with ice cream and sorbet then chilled in a crushed-cookie crust.

2 cups crushed chocolate wafer cookies
1/3 cup melted butter or margarine
1/4 cup sugar
1 cup chocolate fudge sauce, slightly softened
1 quart vanilla ice cream, slightly softened
1 pint raspberry sherbet, slightly softened
1 bag (12 oz) frozen raspberries
1 container (8 oz) Cool Whip frozen whipped topping, thawed

Steps:

  • In medium bowl, mix crust ingredients; reserve 1/4 cup for topping. Press remaining in 13x9-inch pan to make crust. Refrigerate 15 minutes.
  • Spread chocolate fudge sauce over crust. Spoon vanilla ice cream over chocolate. Place spoonfuls of sherbet randomly over ice cream; swirl gently into ice cream. Top with raspberries; press gently into sherbet. Spread whipped topping on top; top with reserved crumbs. Cover; freeze 6 hours or overnight.
  • Let stand at room temperature 10 to 15 minutes before serving.

Easy to make raspberry pie can be made with either fresh or frozen raspberries. This is the perfect dessert - tart, sweet, perfect raspberry pie!

1/2 recipe Perfect Pastry (or enough pastry for one double crust)
5 cups raspberries (fresh or frozen)
3/4 cup granulated sugar
1/3 cup all-purpose flour
1 tablespoon lemon juice
pinch nutmeg
1 large egg
1 tablespoon water

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, gently toss together the raspberries, sugar, flour, lemon juice and nutmeg. Set aside.
  • Roll out half of the pastry and fit it inside a 9 inch pie plate, trimming off the excess pastry.
  • Place the raspberry mixture inside the pie crust.
  • Lightly wet the edge of the crust with a bit of water.
  • Roll out the other half of the pastry and set it over top of the berries, or cut it into one inch strips and weave the strips into a lattice top over the berries.
  • Crimp the edges to seal them. If you are using a full crust, cut slits in the top to vent the pie.
  • Whisk together the egg and water and brush it lightly over top of the pastry.
  • Sprinkle with a bit of extra sugar.
  • Place the pie on a baking sheet in case it bubbles over.
  • Bake for 15 minutes, then REDUCE THE HEAT to 375 degrees F and continue baking for another 35-40 minutes or until the crust is lightly browned and the filling is bubbling.
  • If the pastry is getting too brown and the filling isn't bubbling yet, tent some foil over top to prevent more browning.
  • Allow the pie to cool completely before slicing so that the filling will firm up.

6 graham crackers
1 cup heavy whipping cream
1/2 teaspoon vanilla
2 Tablespoons granulated sugar
5 cups fresh raspberries

Steps:

  • Place graham crackers in a zip top bag. Crush crackers with a rolling pin or the bottom of a pan.
  • Place graham crackers on the bottom of an 8 x 8 square pan. Reserve 2 tablespoons of cracker crumbs for the top.
  • Place heavy whipping cream in a bowl. Whip with an electric mixer until soft peaks are formed. Mix in sugar and vanilla.
  • Gently fold in 4 cups of raspberries.
  • Place whipped cream and raspberries on top of graham crackers.
  • Place remaining berries on top. Sprinkle with remaining graham crackers.
  • Cover and refrigerate for at least 2 hours.

TOPPING:
2 cups boiling water
2 packages (3 ounces each) raspberry gelatin

Steps:

  • Preheat oven to 300° In a large bowl, mix flour and sugar; cut in butter until crumbly. Press onto bottom of an ungreased 13x9-in. pan. Bake until set, 20-25 minutes (crust will not brown). Cool completely on a wire rack., Beat first four filling ingredients until smooth. Fold in whipped topping; spread over crust. , For topping, add boiling water to gelatin; stir 2 minutes to completely dissolve. Add raspberries; stir until blended. 2 cups fiinely crushed pretzels
2 tablespoons sugar
1/3 cup chopped pecans
3/4 cup butter, softened
FILLING:
1 package (8 ounces) cream cheese, softened
3/4 cup sugar
1 carton (8 ounces) frozen whipped topping, thawed
1 package (6 ounces) raspberry gelatin
2 cups boiling water
2 packages (10 ounces each) frozen unsweetened raspberries

Steps:

  • In a large bowl, combine the pretzels, sugar, pecans and butter. Press into an ungreased 13x9-in. baking pan. Bake at 350° for 10 minutes or until lightly browned; cool. , In a large bowl, beat cream cheese and sugar until smooth. Fold in whipped topping; spread over crust. A classic pie that's been around so long the original was handwritten on personalized stationery. This pie is tart enough to take a scoop of sweet ice cream without becoming cloying. I've amended it to include the frozen fruit option.

1 recipe pie dough, enough for double crust
1 cup granulated sugar
1/4 cup all-purpose flour
2 tablespoons minute tapioca
1/2 lemon, zest and juice
4 cups raspberries, whole (fresh or frozen and unthawed)
1 tablespoon butter

Steps:

  • Preheat oven to 425°F and place a rack on the bottom of the oven. Line a 9-inch pie plate with your favourite pastry. Instead of a top crust, use a small cookie cutter and cut out shapes to be placed on top of the filling before baking.
  • Combine sugar, flour, tapioca and lemon zest in a large bowl. Add the raspberries and toss lightly. Try to not break the fruit up. Spoon the filling into the pie shell. Sprinkle with lemon juice. Dot with butter. Place the pastry cutouts over the filling.
  • Bake the pie on bottom rack of the oven for 40 to 45 minutes. The crust should be golden brown and the filling bubbling.
  • Allow pie to cool. Serve warm or room temperature. Vanilla ice cream is a perfect accompaniment. Eat this pie the day it is made. (Like that's gonna be an issue.)

1 prebaked 9-inch Traditional Pastry Piecrust shell (page 6)
Filling
3/4 cup sugar
3 1/2 tablespoons cornstarch
18 teaspoon salt
2 1/2 cups whole milk
4 large egg yolks
2 tablespoons unsalted butter
2 teaspoons pure vanilla extract
3 ounces chopped unsweetened chocolate
1/2 cup Fudgy Brownies chunks (page 140) or use a store-bought variety
1/8 cup semisweet chocolate chips
1/2 cup Raspberry Jam (page 192)
Topping
2 cups Chocolate Whipped Cream (page 193)
1/2 cup fresh raspberries (washed and dried)

Steps:

  • To prepare the filling, in a medium saucepan, whisk together the sugar, cornstarch, and salt. Whisk in the milk and egg yolks until they are well combined. Place the mixture over medium heat, constantly whisking and scraping the sides of the pan. When the cream starts to bubble and thicken, add the butter, 1 tablespoon at a time. When all the butter is mixed in, add the vanilla. Finally, add the chocolate a little at a time, giving each addition of chocolate the chance to melt into the filling before adding more. When the chocolate has smoothly melted and the cream thickens, remove the saucepan from the heat and allow the filling to cool for 15 minutes. Stir in the brownie chunks and chocolate chips.
  • To assemble the pie, spread the raspberry jam evenly across the bottom of the pie shell. Pour the cream filling over the raspberry jam, covering it thoroughly. Cover the pie tightly with plastic wrap and refrigerate for at least 3 hours.
  • When ready to serve, remove the pie from the refrigerator and remove the plastic wrap. Evenly distribute the chocolate whipped cream across the top of the pie. If you choose, use a pastry bag to pipe the whipped cream or offset spatula to spread it to create a more finished look. Distribute the fresh raspberries across the whipped cream for decoration.
  • Chocolate-Raspberry Delight Pie should be served cold. It can be stored in the refrigerator for up to 3 days.

  • 1. Heat oven to 350F. In large bowl, combine all crust (first three items) ingredient; mix well. Press in bottom of ungreased 13x9-inch pan. Bake at 350F for 8 minutes; cool.
  • 2. In large mixer bowl, combine condensed milk and water; blend well. Add pudding mix; beat 2 minutes. Refrigerate 5 minutes. Fold in whipped topping. Spread on cooled, baked crust. Refrigerate until filling is firm, about 1 hour.
  • 3. Spoon topping over filling. Cover; refrigerate until serving time. Garnish with more whip topping, fresh raspberries and mint leaves, if desired. Store in refrigerator. 16 servings.
