¾ cup white sugar
2 teaspoons baking powder
⅛ teaspoon salt
½ cup milk
¼ cup vegetable oil
1 egg
½ teaspoon vanilla extract
1 ½ cups blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix flour, sugar, baking powder, and salt in a large bowl. Stir milk, oil, egg, and vanilla extract into flour mixture until batter is just blended. Gently fold blueberries into batter; pour into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes.

1 cup white granulated sugar
2 cup all purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 large egg
1 cup milk
⅓ cup vegetable oil
1 cup blueberries ((1/2 pint))
3 tablespoons butter (melted)
1½ cups powdered sugar
1 teaspoon vanilla
1½ teaspoons heavy cream (can substitute milk)

Steps:

  • Grease large 1½ pound loaf pan and preheat oven to 350°F.
  • In a large mixing bowl or mixer, combine sugar, flour, baking powder and salt.
  • Beat eggs, milk and oil.
  • Gradually add dry mixture to wet until just moist.
  • Fold in blueberries.
  • Pour batter into pan an inch and a half below to compensate for rise.
  • Optional: sprinkle sugar on top just before baking if you're not topping with glaze.
  • Bake 50-60 minutes. Allow to cool on wire rack 10-15 minutes before removing from loaf pan.

2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup milk
1/2 cup vegetable oil
2 large eggs
6 ounces frozen raspberries, unthawed

Steps:

  • Preheat oven to 350 degrees F. Grease a loaf pan with baking spray.
  • Mix 2 cups of flour, 3/4 cup sugar, baking powder, and salt in one bowl.
  • In a separate bowl combine the sour cream, milk, vegetable oil and eggs.
  • Add the wet ingredients to the dry ingredients. Mix until just combined.
  • Gently toss 1 Tablespoon of flour with the frozen berries. Add them to the batter.
  • Pour the batter into the prepared pan. Bake for 55-60 minutes.

2 cups + 4 tablespoons all-purpose flour, divided
3/4 cup light brown sugar, packed
1/4 cup granulated sugar
1 teaspoon baking soda
pinch salt, optional and to taste
1/4 cup unsalted butter, melted
1 large egg
3/4 cup buttermilk
1/4 cup canola or vegetable oil
2 teaspoons vanilla extract
10 to 12 ounces raspberries, about 2 cups*

Steps:

  • Preheat oven to 350F. Spray one 9×5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside.
  • In a large bowl, add 2 cups + 2 tablespoons flour, sugars, baking soda, optional salt, and whisk to combine; set aside.
  • In a medium microwave-safe bowl or glass measuring cup, melt the butter, about 45 seconds on high power. Allow butter to cool momentarily so you don't scramble the egg.
  • To the butter, add the egg, buttermilk, oil, vanilla, and whisk to combine.
  • Pour wet over dry and stir until just combined; don't overmix. Batter will be somewhat lumpy and don't try to stir the lumps smooth or bread will be tough; set aside.
  • In a medium bowl, add the raspberries, 2 tablespoons flour, and toss lightly to combine (coating berries in flour helps to reduce sinking while baking).
  • Add the raspberries to the batter and fold very lightly to combine.
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula and pushing it into corners and sides as necessary.
  • Bake bread for 45 minutes to an hour. Bread is done when top is set in the middle, slightly domed, springy to the touch, and a toothpick inserted in the center (if you can find a patch without hitting raspberries) comes out clean or with a few moist crumbs, but no batter.**
  • Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving.
  • Bread will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.

5 tablespoons unsalted butter, melted, plus more for greasing the pan
1 cup fresh blueberries
1 1/2 cups plus 2 tablespoons all-purpose flour
1 cup granulated sugar
2 large eggs
1 lemon, zested and juiced (about 3 tablespoons of each)
1 teaspoon baking powder
Kosher salt
1/2 cup milk
1/2 cup chopped pecans
1 lemon, juiced
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 4-by-8-by-2-inch loaf pan.
  • Toss the blueberries in 2 tablespoons of the flour in a medium bowl and set aside.
  • Beat together the butter, granulated sugar, eggs, lemon zest and lemon juice in the bowl of an electric mixer. Sift together the baking powder, 1 teaspoon salt and remaining 1 1/2 cups flour in a medium bowl. Add the flour mixture and milk to the butter mixture in alternating batches, beginning and ending with the flour. Fold in the pecans and blueberries. Pour the batter into the prepared pan and bake until a toothpick inserted in the center of the loaf comes out clean, about 1 hour 10 minutes. Cool for 10 minutes in the pan, then turn out onto a wire rack.
  • For the glaze: Stir together 2 tablespoons lemon juice with the confectioners' sugar in a small bowl until completely smooth. Reserve the remaining lemon juice for another use. Drizzle the glaze over the top of the loaf while it is still warm, allowing it to drip down the sides. Serve the loaf warm or at room temperature.

1 cup sugar (200g)
1/3 cup sourdough starter (100g)
2 eggs
1 tsp vanilla extract
zest of 1/2 lemon
2 cups bolted all purpose flour (280g)
2 tsp baking powder
½ tsp salt
½ cup milk (120g)
1 cup blueberries (150g)
1 cup raspberries (130g)
3 tsp sugar to sprinkle on the muffins just before baking

Steps:

  • Preheat your oven to 375°F.
  • Line a 12-cup muffin tin or grease it with butter or non-stick spray. You can make 12 tall muffins or about 16 regular ones.
  • In a large bowl or stand mixer bowl with a paddle attachment, beat the softened butter and sugar until it's light and creamy.
  • Beating between each addition, add the sourdough starter, eggs one at a time, vanilla extract, and lemon zest.
  • In another bowl, sift together the flour, baking powder, and salt.
  • Alternately add the milk and the dry ingredients to the creamed mixture in 2-3 rounds, stirring or running the mixer throughout.
  • Gently fold in the berries, the delicate raspberries after the blueberries, and then spoon the batter into the cupcake liners. The batter will be somewhat stiff and be higher than the rim of the liners, but it will settle after about 10 minutes in the oven.
  • Sprinkle sugar over the muffin batter. This will create a crisp top crust on the muffins.
  • Bake for 30-35 minutes. Remove the muffins from the pan and let them cool about a half hour before serving.
  • You can store the muffins uncovered and they won't dry out. I like to invert a big bowl over any muffins that aren't eaten the day they were baked.

RASPBERRY TEA BREAD

From the Loaves and Fishes Cookbook - posted as a treat for British teatime for Zaar World Tour III. This makes a nice moist loaf that was surprisingly mild-tasting. However, I used fresh raspberries rather than frozen in syrup, which may have made a difference in the intensity of raspberry flavoring (I also was a bit shy of 10 oz.) It baked up a nice deep shade of brown rather than reddish. It has a nice texture and is not overly sweet. I sprinkled it with powdered sugar; I think it would be good with a bit of a glaze as well, maybe even white chocolate.

2 eggs
1/2 cup vegetable oil, plus

  • puree the raspberries along with their syrup in your food processor fitted with a metal blade till smooth. Strain and discard the seeds.

  • Mix at medium speed for about 3 minute add the raspberry puree and blend well.
  • Add the flour, cinnamon and baking soda and mix the batter for about 1 min at low speed.
  • Scrape the dough into a buttered 9 by 5 inch loaf pan.
  • Bake till a toothpick inserted in the center comes out clean, about 55 to 60 minutes.
  • Cool for 30 minutes, remove from pan and cool completely on a wire rack.
  • Wrap tightly in plastic wrap.

  • Prep: Preheat your oven to 350 degrees and line a loaf pan with parchment paper and spray with cooking spray (for easy removal of bread loaf later!).
  • Make the batter: Cream the softened butter with electric mixer until well creamed. Add the sugar and cream until completely combined and fluffy. Add the eggs, vanilla, lemon zest, and lemon juice and mix until just combined. Add dry ingredients next - flour, baking powder, and salt. Mix until combined. Then, add the milk and greek yogurt and mix until combined. Your batter will be relatively thick. Gently stir in the raspberries - if you stir them too forcefully or for too long they will start to dye the batter red (not a huge deal, just a heads up).

At about the 45 minute mark, if your bread isn't done but the top is looking pretty browned (especially around the outer edges) you can lay a piece of foil over the bread in the oven to prevent burning while it finishes baking.
  • Make the Glaze: This is optional, but easy! Whisk together the milk and powdered sugar. You'll have a thick but pourable mixture. Add vanilla if desired. (I dyed my glaze pink with a little juice from a blood orange.) Pour over the bread once it's cooled. Add extra lemon zest and fresh raspberries on top, if desired.
