A comforting breakfast for cold winter mornings- baked oatmeal with almonds and swirls of fruity raspberry jam.

2 cups old-fashioned rolled oats ((200 grams))
⅓ cup packed light or dark brown sugar ((70 grams))
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ cup sliced almonds ((43 grams))
2 cups milk or almond milk ((475 ml))
1 large egg
3 tablespoons unsalted butter (, melted and cooled (42 grams))
¼ teaspoon almond extract
½ cup raspberry jam ((170 grams))
Fresh raspberries (, for garnish (optional))

Steps:

  • Preheat oven to 350°F. Grease an 8-inch square pan or similar sized baking dish.
  • In a large bowl, stir together the rolled oats, brown sugar, baking powder, salt, cinnamon, and almonds. In a separate bowl, whisk together the milk, egg, butter, and almond extract. Add liquids to the oat mixture and stir until combined.
  • Pour mixture into the prepared baking dish. Drop the raspberry jam by small spoonfuls into the oatmeal. Use a knife to gently swirl it throughout.
  • Bake until the edges begin to turn golden brown and mixture is bubbly, about 30-40 minutes. Serve immediately, or chill and reheat at a later time. Store leftovers in the fridge.

1 cup butter, softened
⅔ cup white sugar
½ teaspoon almond extract
2 cups all-purpose flour
½ cup seedless raspberry jam
½ cup confectioners' sugar
¾ teaspoon almond extract
1 teaspoon milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together butter and white sugar until smooth. Mix in 1/2 teaspoon almond extract. Mix in flour until dough comes together. Roll dough into 1 1/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger, and fill the hole with preserves.
  • Bake for 14 to 18 minutes in preheated oven, or until lightly browned. Let cool 1 minute on the cookie sheet.
  • In a medium bowl, mix together the confectioners' sugar, 3/4 teaspoon almond extract, and milk until smooth. Drizzle lightly over warm cookies.

2 ripe bananas , mashed
150g porridge oats
2 tbsp ground almonds
1⁄2 tsp cinnamon
100g raspberries (fresh or frozen)

Steps:

  • Heat the oven to 200C/180C fan/gas 4 and line two baking trays with baking parchment. Mix the banana, oats, almonds, cinnamon and a pinch of salt in a bowl to make a sticky dough. Gently stir through the raspberries, trying not to break them up. Scoop up tablespoons of the mixture and roll into balls, then place on a baking tray and flatten with your hand.
  • Bake for 15 mins until the cookies feel firm around the edges and are golden brown. Leave to cool. Will keep in an airtight container for up to three days.

1 cup dark brown sugar
3/4 cup white sugar
1 cup butter
1/2 cup water
1 teaspoon almond extract
1 teaspoon vanilla
2 eggs
3 cups flour
2 cups oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup coconut
2/3 cup raspberry preserves

Steps:

  • Cream butter, beat in sugars.
  • Beat in water, extracts and eggs.
  • (Will look curdled.)
  • Stir in rest of ingredients well.
  • Drop by Tbls. onto ungreased cookie sheet. Make a small well in centers, fill with a teaspoons of raspberry preserves or jam.
  • Take a tiny piece of dough and kindof half cover the jam down the center over just the jam.
  • Bake for about 9-11 minutes at 400º.
  • Let set on cookie sheet for 1 minute, remove to wire racks to cool.
  • Seems like I got about 3 1/2 dozen -- I didn't get to count them, they were being eaten too fast!

1 cup almonds
1 cup rolled oats
1 cup whole wheat flour
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup maple syrup
1/2 cup light vegetable oil
raspberry jam

Steps:

  • Preheat oven to 350°F
  • Mix the almonds and rolled oats in a food processor or blender and grind until they turn into fine/medium crumbs.
  • In a bowl mix the almond and rolled oat mixture with the flour, cinnamon and salt.
  • In a seperate bowl mix the maple syrup with the oil and then add to dry ingredients.
  • Form walnut sized balls and place on oiled cookie sheet. Press thumb in center and fill each depression with 1/2 tsp raspberry jam.
  • Bake for 10-15 min or until golden brown.

Press remaining dough into the bottom of the prepared pan. Spread preserves on top, avoiding the very edge of dough. Take remaining dough and crumble on top of preserves in an even layer. If desired, sprinkle with turbinado sugar.
  • Bake for 40-50 minutes until slightly golden brown on top. Cool completely before cutting into squares.
