a little oil or softened butter , for greasing
400g mixed blackberries, blueberries and raspberries
50g ground almond
2 tbsp plain flour
100g golden caster sugar
2 eggs
2 egg yolks
250ml double cream

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Oil or butter a 23cm flan dish or tin (not loose-bottomed) and scatter the berries over the base.
  • Whizz all the batter ingredients in a blender until smooth, pour it over the fruits and bake for 20-25 mins until risen and golden brown. Serve warm.

½ cup all-purpose flour
¼ cup white sugar
2 tablespoons white sugar
3 eggs
3 tablespoons butter, melted
¼ cup milk
2 tablespoons milk
1 squeeze lemon juice
2 cups fresh raspberries
2 tablespoons confectioners' sugar, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour and 1/4 cup plus 2 tablespoons sugar together in a bowl. Whisk in eggs and butter. Add 1/4 cup plus 2 tablespoons milk and lemon juice; whisk until batter is very smooth, about 3 minutes.
  • Pour batter into a 9-inch oval or round baking dish. Scatter raspberries on top.
  • Bake in the preheated oven until puffy and golden, about 30 minutes. Let cool, about 15 minutes. Dust with confectioners' sugar.

2/3 cup creme fraiche or 2/3 cup sour cream
1/3 cup whole milk
1/2 cup unsalted butter, melted and cooled (divided)
3 large eggs
1/2 teaspoon pure vanilla bean paste or 1/2 teaspoon vanilla extract
3/4 cup cake flour
1/2 cup sugar (divided)
salt, a pinch
1/4 cup sliced unblanched almonds

Steps:

  • Preheat oven to 400°.
  • Butter a 9-inch deep-dish glass pie plate.
  • Place raspberries in the pie plate, and set aside.
  • Combine the creme fraiche, milk, 6 tablespoons of the butter, the eggs, and vanilla in a blender or a food processor and process until smooth.
  • Whisk together the flour, 1/3 cup sugar, and the salt in a bowl.
  • Whisk in the creme fraiche mixture just until blended.
  • Pour the batter over the raspberries.
  • Drizzle with the remaining 2 tablespoons butter, and sprinkle with the almonds and the remaining sugar.
  • Bake for 40 minutes, or until golden brown.
  • Let cool on a wire rack for 10-15 minutes, and serve warm.

Melissa Clark's clafouti recipe is a light and custardy baked dessert (like a baked pancake) with juicy raspberries and a hint of lavender. This elegant dessert is a few steps above your homey cobbler or crisp, but it couldn't be easier to make. Perfect for dessert or brunch!

Unsalted butter (for baking dish)
3 cups (350 grams) raspberries
1/2 cup plus 1 tablespoon granulated sugar (divided)
1 teaspoon dried lavender buds ((optional))
1/2 cup (120 millilitres) whole milk
1/2 cup (114 grams) crème fraiche, more for serving (optional)
4 large eggs
Pinch salt
1/3 cup (43 grams) all-purpose flour
Confectioners' sugar (for serving)

Steps:

  • Heat the oven to 375 degrees F. Butter a 9-inch ceramic baking dish, or a 2-quart gratin dish, or a 9-inch cake pan.
  • In a medium bowl, toss the raspberries with 1 tbsp sugar. Let them sit while you prepare the remaining ingredients
  • In a food processor or blender, combine the remaining ½ cup sugar with the lavender; process until the lavender is mostly ground, about 2 minutes. Then pour the milk, crème fraiche, eggs, and salt, and process to combine. Add the flour and pulse just to combine.
  • Arrange the sugared berries in the prepared baking dish, then pour the egg mixture over them. Bake until the cake is golden and the center springs back when lightly touched, about 35 minutes.
  • Transfer the baking dish to a wire rack and let the cake cook for at least 15 minutes before serving. Then dust it with confectioners' sugar, slice it, and serve it with a dollop of whipped crème fraiche if you like (I used Greek yogurt to serve along).

1 large egg
1/4 cup milk
1/2 teaspoon vanilla extract
1 1/2 Tablespoons maple syrup or honey
1 Tablespoon almond flour
A pinch of cinnamon
A pinch of nutmeg
A pinch of salt
About 3/4 cup fresh raspberries

Steps:

  • Preheat the oven to 350 F. Grease two 3-inch ramekins (or spray with cooking spray).
  • In a small bowl, whisk together the egg, milk and vanilla until the egg is fully incorporated. Add the maple syrup and almond flour, cinnamon and salt. Whisk a bit more.
  • Fill each ramekin about 2/3 of the way with raspberries. Divide the milk mixture amongst the two ramekins.
  • Bake at 350 F. for about 35 minutes or until the custard springs back to the touch. Let cool until warm and enjoy!

1 10-ounce package frozen raspberries in syrup, thawed
1 cup (4 1/2 ounces) whole almonds, toasted
1 1/2 cups sugar
7 large egg whites
3/4 cup all purpose flour
1/4 cup orange juice
1 tablespoon grated orange peel
1 cup (2 sticks) unsalted butter
2 1/2-pint baskets fresh raspberries
Vanilla ice cream (optional)

Steps:

  • Puree frozen raspberries with their syrup in processor until smooth. (Raspberry sauce can be prepared 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 350°F. Finely grind almonds in processor. Transfer almonds to large bowl. Add sugar, egg whites, flour, orange juice and orange peel and whisk to blend well.
  • Melt butter in heavy medium saucepan over medium heat; cook until butter browns, stirring frequently, about 4 minutes. Whisk hot browned butter into almond batter until well blended. Divide batter equally among six 1 1/4-cup custard cups (batter will fill cups only halfway). Drop 8 raspberries into batter in each cup. Bake clafoutis until golden brown and set in center, about 40 minutes. Cool 15 minutes. Serve warm with raspberry sauce and vanilla ice cream, if desired. Garnish clafoutis with any remaining fresh raspberries and serve immediately.
