16 ounces proper beer or any brand English golden ale
24 ounces whole milk
4 tablespoons unsalted butter, cut into cubes
1/4 cup bacon fat
1 medium yellow onion, small diced
1 cup all-purpose flour
2 tablespoons whole-grain mustard
1 teaspoon Worcestershire sauce
1 tablespoon white wine vinegar
2 tablespoons thyme leaves, roughly chopped
1 cup grated Irish Cheddar
1 1/2 cups crumbled blue cheese
1 teaspoon kosher salt

Steps:

  • In a large sauce pot, bring the beer and milk to a simmer (180 degrees F).
  • While you are bringing the milk and beer to a simmer, in a separate sauce pot, melt the butter and bacon fat. Once melted, add the onions and sweat until translucent. Add the flour to make the roux, making sure you stir continually so it gets nice and toasty, but doesn't burn to the bottom of the pot. De-glaze the pan with the mustard, Worcestershire sauce, white wine vinegar and thyme. By this time, the milk and beer should be ready to add to the roux. Add slowly, continually stirring to break up chunks and emulsify the mixture. Bring the mixture up to 185 degrees F and remove from the heat. Add the Irish Cheddar, blue cheese and salt and blend with an immersion blender (if you don't have an immersion blender, add the cheese while the mixture is still hot and whisk vigorously with a whisk to fully incorporate).

Smash Burgers with Griddled Onions and Spicy Special Sauce image

Smash burgers are an iconic staple of American diners, with their toasted buns and that mysteriously delicious special sauce. My version amps up the flavor of the special sauce with pickled jalapenos and adds a slight smoky, sweet flavor from griddled onions. The secret to the perfect smash burger is not overworking the meat so that it's tender and juicy but still gets a browned, salty crust with a hit of pepper and melty cheese draped over the top.

1/4 cup mayonnaise
1 to 2 pickled jalapenos, chopped
2 teaspoons pickled jalapeno brine
2 teaspoons Dijon, spicy brown or yellow mustard
1 small garlic clove, finely grated
1 pound ground beef chuck (20% fat)
1/2 pound ground beef brisket and/or short rib (20% fat)
4 tablespoons vegetable oil
1 large onion, halved and thinly sliced
1 large pinch sugar
Kosher salt and freshly ground black pepper
4 thin slices cheese such as Cheddar or Monterey jack
4 seeded hamburger buns or potato rolls, toasted
Lettuce and sliced tomatoes, for serving

Steps:

  • Whisk the mayonnaise, pickled jalapenos, brine, mustard and garlic together in a small bowl. Set aside until ready to serve.
  • Combine the chuck and brisket in a medium bowl and using 2 forks, "pull" the meat apart, breaking up any clumps and combining the two meats together. This will seem counterintuitive but it will blend the meats together without compacting them. Divide into 4 equal portions and form balls (about the size of tennis balls) being careful not to compact or overwork the meat -- do not form patties.
  • Heat 2 tablespoons of the oil in a large cast-iron skillet over medium-high heat. Add the onions and season with salt and pepper; cook, tossing occasionally, until golden browned, 6 to 8 minutes. Sprinkle with the sugar and toss until caramelized, about 1 minute. Transfer to a plate.
  • Increase the heat to high and heat the same skillet until very hot. Add the remaining oil (or 1 tablespoon oil, if working in batches), swirling to coat.
  • Working in batches if necessary, place balls in the skillet and smash flat with a metal spatula using the handle of a wooden spoon to press down on the spatula to form 4-inch patties (you want to see craggy edges). Season liberally with salt and pepper and cook, undisturbed, until the outer edges are brown, 1 to 2 minutes. Flip the patties, season with salt and pepper and top each patty with a slice of cheese. Cook until the cheese droops and the burgers are medium-rare, about 1 minute.
  • Serve the patties on the toasted buns with the spicy special sauce, griddled onions, lettuce and tomatoes.

"ENGLISH" PUB BURGER

1 cup sour cream or creme fraiche
2 round tablespoons prepared horseradish, preferred brand Gold's
2 tablespoons grainy Dijon mustard
1/4 cup finely chopped fresh chives
1/4 cup finely chopped fresh dill
1 clove garlic, grated or pasted
Salt
6 slices bacon, halved across
1 1/2 to 2 pounds (6-to-8-ounce patties) 80-percent ground sirloin
About 3 tablespoons grated onion (from a small white or yellow peeled onion)
Coarse salt and coarse black pepper
2 tablespoons Worcestershire sauce
1 tablespoon neutral oil
8 slices sharp yellow Cheddar cheese
4 sandwich-size English muffins
Melted butter, to brush muffins
Dill pickle slices
Watercress, 2 cups

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat a cast-iron skillet over medium-high heat.
  • For the sauce: Stir up the sour cream, horseradish, mustard, chives, dill and garlic in a small bowl and adjust salt to taste.
  • For the burgers: Arrange the bacon on wire-rack-lined rimmed baking sheet or slotted pan. Bake until very crisp, 12 to 14 minutes.
  • Combine the beef with grated onion, salt and pepper and Worcestershire sauce and score into 4 portions. Form 4 patties of the beef mixture thinner at center than edges for even cooking. Cook patties in a little oil, about 7 minutes, turning occasionally. Then melt 2 slices of cheese on the patties for a minute or so.
  • While the patties cook, toast the English muffins. Lightly butter bottoms and add thinly sliced dill pickle chips.
  • Place burgers on buttered side of muffin and top with 3 half-slices of bacon, watercress and horseradish sauce.

HORSERADISH BURGERS WITH HAVARTI

2 pounds ground chuck
1/4 cup grated fresh or prepared horseradish
1/2 bunch fresh chives, minced
Sea salt and freshly ground black pepper
Canola oil
16 slices havarti cheese
8 large hamburger buns, split
Ketchup, mayonnaise, and mustard, for serving
Cooked bacon, lettuce, sliced tomato, and onion, for serving

Steps:

  • Put the beef in a large mixing bowl. Use a rubber spatula to fold in the horseradish and chives; season with salt and pepper. Hand-form the meat into 8 burgers, cover them, and chill in the fridge while preparing your grill.
  • Place a large grill pan on 2 burners over medium-high heat or preheat a gas or charcoal grill and get it very hot. Burgers stick to a cold grill, so it's important that you give it plenty of time to heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel then carefully and quickly wipe the hot grates of the grill; this will create a non-stick grilling surface. Grill the burgers for 8 minutes per side for medium; 7 minutes if you like your meat rare.
  • When the burgers are just about cooked, put a couple of slices of cheese on top of each and cover the grill for 1 minute to melt the cheese. Remove the burgers to a clean side plate so you have enough room to toast the buns.
  • Rub the grill rack with the same paper towel as before to clean the small charred pieces, then toast the hamburger buns cut-side down for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as bacon, lettuce, sliced tomato, and onion.
