BEEF WITH RAMEN NOODLES

I made up this recipe when I was looking for good Chinese food in beautiful Oregon. Each time I make this, I change something slightly. Leftovers heat easily in the microwave or fry pan.

1 tablespoon cornstarch
1 cup beef broth, divided
1/2 pound beef top sirloin steak, cut into thin strips
1 tablespoon vegetable oil
1 tablespoon soy sauce
1 package (3 ounces) beef ramen noodles
1 can (14 ounces) whole baby corn, rinsed and drained
1 cup fresh broccoli florets
1/2 cup diced sweet red pepper
1/2 cup grated carrot
2 green onions, cut into 1-inch pieces
1/4 cup peanuts

Steps:

  • In a small bowl, combine cornstarch and 2 tablespoons broth until smooth; set aside. , In a large skillet, stir-fry beef in oil. Add soy sauce; cook for 3-4 minutes or until liquid has evaporated. Remove beef and keep warm., Set aside seasoning packets from noodles. Cook noodles according to package directions; drain and keep warm., Add the corn, broccoli, red pepper, carrot, onions and remaining broth to the skillet. Sprinkle with contents of reserved seasoning packets. Cook for 4-6 minutes or until vegetables are crisp-tender., Stir reserved cornstarch mixture and add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add reserved beef and noodles to skillet; heat through. Garnish with peanuts.

1 cup thinly sliced shiitake mushrooms
½ cup frozen shelled edamame
1 tablespoon reduced-sodium soy sauce
2 teaspoons Sriracha sauce, or more to taste
1 (4 ounce) beef top sirloin, thinly sliced
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Cook ramen in a saucepan according to package directions, adding mushrooms, edamame, soy sauce, and sriracha in the last 2 minutes of cooking. Add steak in the last minute of cooking. Top servings with cilantro and, if desired, additional Sriracha sauce.

A quick, healthy ramen recipe that you can adapt to whatever you have in your fridge

400ml good quality beef stock
1 star anise
1 clove garlic, crushed
10cm lemongrass, crushed
5cm ginger, sliced
2 tbs soy sauce
Juice of half a lime
1 small red chilli
400ml good quality beef stock
1 star anise

100g ramen noodles
5 shitake mushrooms, chopped
A handful of spinach
1 tsp dried seaweed
1/2 cup chopped broccoli
100g lean beef escalope, finely sliced
A handful of fresh coriander

Steps:

  • To make the broth, place a pot over a medium heat on the stove and add all stock ingredients. Simmer for 15 minutes and taste (balance the flavours if necessary). Remove all hard pieces from the broth.
  • To the pot, add the noodles, broccoli, mushrooms and seaweed then cook for three minutes. Add the spinach and stir through until wilted.
  • To serve, pour all ingredients from the pot into a bowl. Top with the raw beef and coriander. The beef will cook on its own when stirred through the noodles and broth.

1 tsp oil
2 tsp sesame oil ((or more oil) (Note 2))
2 garlic cloves (, minced)
1/2 onion (, sliced)
200g / 7oz beef mince ((ground beef) (Note 3))
1 1/4 cups (315 ml) water, plus more as needed
Big handful bean sprouts
1 tbsp dark soy sauce ((Note 4))
1 tbsp Oyster sauce ((or Hoisin, Note 5))
2 tsp Hoisin sauce ((or more Oyster sauce))
1 tbsp mirin ((Note 6))
Finely sliced green onion / shallots
Sesame seeds

Steps:

  • Mix Sauce.
  • Heat oils in a medium skillet over high heat. Add onion and garlic, cook for 1 1/2 minutes until starting to go golden.
  • Add beef and cook, breaking it up as you go, until it changes from pink to light brown.
  • Add Sauce and cook for 2 to 3 minutes until well caramelised (see video).
  • Push beef to the side to make enough space for the noodles. Add water, place noodles in water.
  • Leave for 45 seconds then turn.
  • Leave for 30 seconds, then untangle the noodles, then toss through the beef.
  • Add beansprouts, toss for 1 minute until sauce reduces to coat the noodles and the noodles are cooked. (Note 7)
  • Serve immediately, garnished with green onions and sesame seeds.

½ cup gluten-free soy sauce (tamari)
1 teaspoon coconut oil
4 cups beef broth
2 teaspoons miso paste

salt and ground black pepper to taste

Steps:

  • Combine steak and soy sauce in a plastic container with a lid. Marinate in the refrigerator for 2 hours.
  • Remove steak from the marinade and shake off excess. Discard the remaining marinade.
  • Heat coconut oil in a skillet over medium-high heat. Add steak and cook until firm and reddish-pink and juicy in the center, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium-rare. Remove from skillet and allow to rest for 10 minutes.
  • While the steak is resting, combine broth, miso paste, garlic, and sesame oil in a saucepan over medium heat; bring to a boil. Once broth is at a slow boil, add ramen noodles. Cook until noodles are soft, about 3 minutes. Season with salt and pepper.
  • Transfer broth and noodles to 2 bowls. Slice steak and place on top.
