SHEETPAN SAUSAGE SUPPER

1 pound trimmed whole Brussels sprouts
3 parsnips, cut into 1/4-inch slices
3 sweet potatoes, cut into wedges
2 red onions, cut into quarters
3 tablespoons olive oil
1/2 teaspoon dried sage
Sprinkle of kosher salt
Sprinkle of freshly ground black pepper
12 Italian sausages

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the Brussels sprouts, parsnips, sweet potatoes and onions to a baking sheet. Add the olive oil, sage, salt and pepper and toss. Put the sausages in and around the vegetables.
  • Bake until the sausages are cooked through and the vegetables are tender, 40 to 45 minutes. Serve.

1 tablespoon prepared mustard
3/4 cup shredded cheddar cheese
Sliced green onions and sour cream, optional
7 cups tortilla chips

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the baked beans, corn, barbecue sauce, ketchup and mustard; heat through. Sprinkle with cheese; cook until melted., Garnish with onions and sour cream if desired. Serve with tortilla chips.

2 cups sour cream
1 cup uncooked elbow macaroni

  • In a large skillet, fry sausage until pink color dissappers.
  • Drain.
  • Add onions and green pepper.
  • Cook slowly for 5 minutes.
  • Stir in remaining ingredients.

This is a very good and hearty old-fashioned dish that I think came from Taste of Home. It's almost like a stew or even a soup. I have tried it with keilbasa but it wasn't as good. I like to serve it with rye bread.

2 lbs fully cooked smoked sausage, halved and cut into 3/4 inch slices
1 large onion, cut into eights
1 head cabbage, chopped
1/2 cup water
1 lb carrot, cut into 1/2 inch slices
5 medium potatoes, peeled and cut into 3/4 inch cubes

Steps:

  • In a Dutch oven or soup kettle, cook sausage and onion over medium heat until sausage is lightly browned and onion is tender; drain.
  • Add the cabbage and water.
  • Cover and cook on low for 10 minutes.
  • Stir in carrots and potatoes.
  • Cover and cook for 25 to 30 minutes or until vegetables are tender.

1/4 cup chopped onion
1 tablespoon canola oil
1 pound fully cooked smoked sausage, sliced
2 cups water
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 package (6.8 ounces) Spanish rice and pasta mix
1/4 cup sliced pimiento-stuffed olives
1/8 teaspoon pepper

Steps:

  • In a large skillet, saute the green pepper, celery and onion in oil until tender. Stir in the remaining ingredients. Cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.

1 (1 ounce) package original hidden valley ranch dressing mix (prepared according to package directions)
1 (16 ounce) package Jimmy Dean sausage, browned and drained
1 1/2 cups mexican four cheese blend
1/2 cup green bell peppers or 1/2 cup red bell pepper, chopped
jalapeno peppers or green onion, sliced thin
1 (12 ounce) package wonton wrappers
vegetable oil

Steps:

  • Brown sausage and drain off any grease; set aside.
  • Mix ranch dressing according to package directions. Mix the sausage, prepared dressing, bell pepper, cheese and jalapenos or green onions slices together and chill for 30 minutes. Preheat the oven to 350 degrees.
  • Place one wonton wrapper in a lightly greased standard size muffin tin and lightly brush with oil. Bake 5-7 minutes until lightly golden brown. Watch them carefully so they don't get too brown.
  • Remove from oven and let cool a bit. When cooled add two tablespoon of the sausage mixture. Return to the oven and bake an additional 5-7 minutes until cheese melts. Let cool just a bit and serve.
