- Add the potatoes to a saucepan.
- Add water to cover.
- Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain.
- Place drained potatoes into a greased 13x9 inch baking dish.
- In a bowl, mix together the soup, milk, salad dressing mix, 1 cup cheese, salt and pepper to taste; pour over potatoes.
- Sprinkle crumbled bacon and the remaining cheese over the top.
- Bake, uncovered, at 350° for 25-30 minutes or until potatoes are tender.

- Preheat to 350°F.
- In a sauce pan, on medium heat, melt butter, stir in flour, and add the mile gradually, stirring constantly, until thickened.
- Remove from heat, and stir in salt, pepper, onions, and barbecue sauce, stir in cheese until melted.
- Place a layer of half the potato slices in a 8x8 casserole dish. Pour half the sauce over the potatoes. Repeat.
- Bake for 25 minutes.

- Heat a large skillet over high heat for 2 minutes. Add the bacon and fry until crispy, about 6 minutes, stirring frequently. Transfer the bacon to a paper towel-lined plate to drain, discard all but 1 tablespoon of bacon fat. Add the bay leaves, oregano, cumin, onions, chile, tomatoes and beans to the skillet. Cook the beans on a low flame for about 20 to 30 minutes, stirring occasionally.

- Slice the potatoes in half, lengthwise, then slice each half lengthwise three times and across four times, to cube.
