This is the best ranchero sauce recipe I have ever tasted, with a base of diced tomato, jalapeno and onion, seasoned with a mixture of chili powders and seasonings. Perfect on huevos rancheros or any Mexican or Tex Mex dish.

1 tablespoon olive oil
1 medium yellow onion (chopped)
2 jalapeno peppers (chopped)
4 cloves garlic (chopped)
16 ounce can diced tomatoes
1 cup chicken broth
¼ cup chopped cilantro (or more as desired)
1 tablespoon ancho powder
1 tablespoon guajillo powder
1 tablespoon chipotle powder
1 teaspoon cayenne
1 teaspoon Mexican oregano
1 teaspoon cumin
Salt and pepper to taste
Juice from 1 lime (optional)

Steps:

  • Heat a large pan to medium-high heat and add the olive oil.
  • Cook the onions and peppers down about 5 minutes to soften.
  • Add the garlic and cook another minute, stirring a bit.
  • Add the tomato and chicken broth. Stir.
  • Stir in the cilantro and seasonings.
  • Bring to a quick boil then reduce the heat and simmer for 20-25 minutes to let the flavors develop. The sauce will thicken up for you.
  • Transfer the mixture to a blender or food processor and pour in the lime juice. I used my stick blender.
  • Process until nice and smooth.
  • Use immediately or store in the refrigerator in a covered glass container.

This is my favorite salsa. I got the recipe from my mother who has been making it since she was a young girl living with her grandparents on their ranch in Mexico. You can adjust the hotness according to your preference. Serve it over scrambled eggs or on anything you like.

3 tablespoons corn oil
3 medium ripe tomatoes
5 medium jalapeno peppers, stemmed
1 medium onion, diced
1 cup water
salt to taste

Steps:

  • Heat a medium skillet over medium heat. Add oil to the hot skillet and place whole tomatoes and jalapenos in the pan. Cook, turning every 2 minutes, until all sides are scalded. Remove from the heat.
  • Transfer tomatoes and jalapenos carefully to a blender and process until pureed.
  • Cook and stir onion in the same skillet over medium heat until translucent, about 5 minutes. Add tomato-jalapeno puree and pour in water; bring to a simmer. Simmer until thickened, about 5 minutes. Season with salt and serve warm.

2 tablespoons vegetable oil
4 (6 inch) corn tortillas
1 cup refried beans with green chilies
1 teaspoon butter
4 eggs
1 cup shredded Cheddar cheese
8 slices bacon, cooked and crumbled
½ cup salsa

Steps:

  • Heat oil in a small skillet over medium-high heat. Fry tortillas one at a time until firm, but not crisp. Remove to paper towels to drain grease.
  • Meanwhile, combine the refried beans and butter in a microwave-safe dish. Cover, and cook in the microwave until heated through. When tortillas are done, fry eggs over easy in the skillet. Add more oil if the tortillas have absorbed it all.
  • Place tortillas onto plates, and spread a layer of beans on them. Top with cheese, a fried egg, crumbled bacon and if desired, salsa.

Steps:

  • Beat egg and water in small microwaveable bowl until blended.
  • Microwave on HIGH. 1 min. or until set.
  • Place Singles on tortilla on microwaveable plate. Microwave 20 sec. Top with egg, salsa and sour cream.

1/4 cup salsa, divided
2 eggs
2 tablespoons water
2 tablespoons shredded cheddar cheese

Steps:

  • In small saucepan over low heat, stir together beans and 2 tablespoons of the salsa. Heat and stir thoroughly.
  • In small bowl, beat together eggs and water. Coat a 7 to 10-inch skillet with cooking spray. Heat over medium-high heat. Pour in egg mixture.
  • With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface. Cook until top is thickened and no visible liquid egg remains.
  • Spread hot bean mixture down center of omelet. Sprinkle with cheese. With pancake turner, fold sides of omelet over beans and cheese. Slide onto plate and pour remaining salsa on top.

  • For a smooth sauce, transfer the contents of the saucepan to a blender or food processor. Remove the feed tube (to prevent a build-up of steam and pressure), cover with a dish towel and process until smooth. Serve and enjoy.
