RANCH STEW AKA COWBOY STEW
This is one of my family favorites that I have made for years. It is super easy to throw together and contains ingredients that I always have on hand. When I make this I have to double the recipe because it tastes even better the next day! Ranch Style beans are a western style pinto bean made with a flavorful sauce. They add a lot of the flavor to this recipe so try not to substitute them if possible.

Steps:
- Brown the meat with the onion, green pepper and garlic. Do not drain.
- Add undrained vegetables and and seasoning.
- Simmer a minimum of 20 minutes.
INSTANT POT COWBOY STEW WITH RANCH STYLE BEANS RECIPE
This Instant Pot cowboy stew with ranch style beans is a hearty meal that comes together in just about no time.

Steps:
- Turn on the Instant Pot to the sauté setting, then add the olive oil and diced onion.
- Cook until the onion is translucent, stirring often. Then, add the ground beef, and break up larger bits with a wooden spoon or silicone spatula.
- Add the salt and pepper, and cook until the beef is no longer pink.
- Slice the kielbasa sausage, and add it to the Instant Pot, stirring to combine.
- Add the fire roasted tomatoes, tomato soup, water, ranch style beans, green chiles, and chili powder, and stir to combine.
- Close lid, and turn the valve to sealing, then turn on the Pressure Cook setting for 15 minutes.
- When cooking is done, serve with shredded cheese and hot sauce, if desired.

RANCH STYLE STEW
This is a great chili like stew that is so easy to make and is wonderful served with tortilla chips or fritos. Spicy!

- 1. Cook pasta according to package directions. Drain and set aside.
- 2. In a large nonstick skillet, cook the beef, onion, green pepper and garlic over medium heat until the meat is no longer pink. Drain.
- 3. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered for 10 minutes, stirring occasionally.
- 4. Stir pasta into stew.
- 5. Enjoy! Best served with tortilla chips!

- Place meat in 1 quart baking dish.
- Brown in slow oven at 325F for 45 min, stirring occasionally.
- Add 1 cup of water to dish.
- Cover, bake for 1 hr or until meat is tender.
- Meanwhile, cook carrots in remaining 2 cups water.
- When partially cooked, add potatoes and cook until all tender.
- Add onions and peas.
- Put vegetables into beef dish.
- Thicken liquid from vegs. with flour if desired.
- Add worcestershire sauce, salt, and pepper to liquid.
- Pour over meat and vegs.
- Cover and return to oven for 20 minute.
