To cut the fat in this makeover recipe, we reduced the amount of butter from 1/4 cup to 1 tablespoon, switched the cheese to a reduced-fate Mexican cheese blend and chose lean ham over regular. - Cook pasta according to package directions; drain. In a Dutch oven, melt butter; whisk in flour until smooth. Gradually add milk and seasonings. Bring to a boil; cook and stir for 2 minutes or until thickened. , Reduce heat; fold in sour cream until blended. Add ham and pasta; cook and stir until heated through. Remove from the heat; stir in Mexican cheese blend until melted. Sprinkle with Parmesan cheese.

RANCH-STYLE NOODLES WITH HAM
I found this on the back of a package of wide egg noodles I bought for Zelda's Amish Chicken Casserole. It sounded like something I'd be interested in and hope you might like to try also.

Steps:
- 1. Prepare noodles according to package directions; drain.
- 2. Melt butter in large skillet, over medium-high heat. Add veggies and cook, stirring frequently, until veggies are tender, about 6-8 minutes.
- 3. Add ham and cook, stirring frequently, until ham cubes are hot, about 2-3 minutes.
- 4. Stir in sour cream and ranch dressing.
- 5. Cook over low heat, stirring frequently, until sauce is melted, smooth and hot.
- 6. Pour hot noodles into a serving bowl.
- 7. Pour veggies and ham mixture over noodles. Toss to combine.

- Preheat oven to 350°. Cook pasta according to package directions. , In a large bowl, mix Italian cheese blend, 1 cup Parmesan cheese, sour cream and salad dressing.
