CHICKEN CLUB RANCH ROLL

Fried chicken, bacon and homemade ranch dressing--is there a more winning combo? For a true time saver, bake off frozen breaded chicken tenders instead of making your own.

1 pound sliced bacon
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons chopped chives
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
A few dashes Worcestershire sauce
1/2 cup all-purpose flour
1 large egg, beaten with a splash of water
1 cup panko
1/2 pound chicken tenders
Kosher salt and freshly ground black pepper
4 tablespoons vegetable oil
2 square or rectangular flatbreads, such as lavash
2 leaves green-leaf lettuce, halved lengthwise

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil.
  • Lay the bacon slices in a single layer on the prepared baking sheet. (It's OK if they overlap a little.) Bake until browned but still pliable, 15 to 18 minutes. Transfer the bacon with tongs to a paper towel-lined plate.
  • Meanwhile, whisk together the mayonnaise, sour cream, chives, garlic powder, onion powder and Worcestershire sauce in a small bowl until combined; set aside.
  • Set up a breading station with the flour in 1 medium bowl, the beaten egg in another medium bowl and the panko in a third. Generously season the chicken tenders with 1/4 teaspoon each salt and pepper. Dredge the tenders in the flour a few pieces at a time. Tap off the excess flour before dipping the tenders into the egg. Allow the excess egg to drip off, then coat the tenders in the panko. Set the breaded chicken on a plate. Repeat until all the tenders have been coated.
  • Heat the oil in a large skillet over medium heat, then add the chicken in a single layer. Cook until browned on the bottom, about 3 minutes, then flip. Cook until the chicken is cooked through and browned on the other side, 3 minutes more. Transfer to a wire rack or paper towel-lined plate.
  • Lay out a flatbread with the shorter side facing you. (If your flatbread seems dry, moisten it slightly with a damp paper towel.) Spread half the ranch dressing on the bottom third. Line the wrap with half the bacon strips, then add half the chicken crosswise. Top the chicken with 2 pieces of lettuce, also crosswise. Starting from the bottom, roll everything up into as tight a spiral as possible without ripping the wrap, leaving the seam on the bottom. Place toothpicks into the roll at 1-inch intervals all the way through to the bottom to secure everything in place. Cut, in between the toothpicks, into even slices. Repeat with the remaining flatbread.

¾ cup water
½ cup white sugar
1 teaspoon salt
2 eggs
5 teaspoons active dry yeast
5 cups all-purpose flour
½ cup margarine, melted

Steps:

  • In a medium saucepan over medium heat, warm milk, water, sugar and salt. Remove from heat, and mix in the eggs and yeast.
  • Measure flour into a large bowl. Make a well in the flour, and pour milk mixture into it. Do not stir. Cover with a lid, and let stand for 20 to 30 minutes.
  • Pour melted margarine into flour, and mix well. Add more flour if too sticky. Knead lightly. Cover, and let rise for 20 to 30 minutes.
  • Shape the dough into rolls, and place on a baking sheet. Let rise again for 20 to 30 minutes.
  • Bake rolls in a preheated 400 degrees F (205 degrees C) oven for 15 minutes, or until done.

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°), divided
1 teaspoon honey
1/2 cup canola oil
1/3 cup sugar
2 eggs
2 envelopes ranch salad dressing mix
2 teaspoons salt
1 teaspoon dill weed
4-1/2 to 5-1/2 cups all-purpose flour
CHEESE TOPPING:
2 tablespoons sesame seeds
2 tablespoons grated Parmesan cheese
2 tablespoons finely chopped pecans
1/4 teaspoon dill weed

Steps:

  • In a large bowl, dissolve yeast in 1/4 cup warm water. Add honey; let stand 5 minutes. Add the oil, sugar, 1 egg, salad dressing mix, salt, dill, 1 cup flour and remaining water. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. 2 8-ounce cans refrigerated crescent roll dough
2 10.5 ounce cans cream of chicken soup
8 ounce package cream cheese
3 cups fully cooked shredded chicken
1 package ranch dressing mix
2 green onions chopped

Steps:

  • Preheat oven to 375F. Prepare a 9x13-inch baking dish by spraying with non-stick cooking spray.
  • Pour the canned soup and cream cheese into a medium pot and heat on the stove over medium heat, stirring often, until the cream cheese is melted and incorporated into the soup. Add the ranch dressing mix and remove the sauce from the heat.
  • Reserve 1 cup of the sauce, then add the rest to a medium mixing bowl. Add the shredded chicken and green onions; stir well to combine.
  • Separate the crescent roll dough and scoop a spoonful of the chicken mixture onto the wide end of each crescent roll and fold the long point of the dough over and around the chicken to create a little packet. Place each packet into the prepared baking dish.
  • Pour the reserved gravy around the chicken packets in the pan.
  • Bake for 20-25 minutes until golden brown. Serve warm.

  • In a small saucepan over a medium-low heat, melt the butter with the garlic and parsley, then set aside.
  • On a lightly floured surface, roll the pizza dough into a large rectangle, about 8 inches by 12 inches. Pour over two-thirds of the butter mixture and brush so the dough is coated all over.

  • To make the dipping sauce, whisk together all sauce ingredients and pour into desired serving dish. Sprinkle with blue cheese crumbles, if desired, and set in fridge until ready to serve.

Fry until the egg rolls are golden brown on all sides, approximately 2 minutes. Place on paper towels to drain and cool.
