These Taco Ranch Meatballs with a zesty taco ranch dipping sauce are packed full of flavor and so EASY to prepare!

1 (1-ounce) package taco seasoning (reserve 1-1/2 teaspoons for dipping sauce)
1 cup prepared ranch dressing
2 pounds lean ground beef (I used 93%)
3/4 cup plain bread crumbs
3/4 cup shredded Mexican cheese blend
2 large eggs
1 tablespoon ranch seasoning mix (from a packet)
Fresh chopped cilantro, for topping/garnish (optional)

Steps:

  • Preheat your oven to 400 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Prepare the dipping sauce by stirring ranch dressing and 1-1/2 teaspoons of the taco seasoning together in a small bowl until combined. Cover and refrigerate.
  • Combine the ground beef, bread crumbs, cheese, eggs, ranch seasoning and the remainder of the taco seasoning from the packet in a large bowl.
  • Form into 1-1/2 inch balls (about 2 tablespoons of mixture for each ball) and place on the prepared baking sheets.
  • Bake for 20-25 minutes, or until meatballs are browned, fully cooked and no longer pink in the center.
  • Sprinkle with fresh chopped cilantro, if desired and serve with dipping sauce.

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all of the ingredients in a mixing bowl; then form 18 meatballs and line them on a non stick baking sheet or a pan lined with parchment paper.
  • Bake for 30 minutes; then serve.

This is a very tender flavorful meatball that is made with Hidden Valley Ranch Dressing. It is my own recipe that I have played with and perfected. This is a very quick and easy recipe that can be made anytime. Ranch dressing is the main flavor in the meatballs and there is no need for onions or herbs.

Steps:

  • Combine ground beef and dressing mix. Shape mixture into 24 meatballs. Melt butter in a skillet; brown meatballs on all sides. Add broth; cover and simmer 10 to 15 minutes or until cooked through. Serve warm with toothpicks. *Recipe only gluten free when made with all gluten free ingredients. Read labels of all packaged ingredients to determine whether they contain gluten.

It's quick and easy, you can cook it on the stove top or in a crock pot; make and freeze ahead; and it feeds a crowd, i.e., my family! Even the little ones love it, spinach and all! I like to serve over buttered egg noodles with steamed broccoli on the side.

1 lb ground chicken breast
1 lb ground pork
2 shallots, peeled and diced fine or 1/3 cup shallot
1 garlic clove, minced
1 cup fresh spinach leaves, packed, chopped fine
1 (1 ounce) package Hidden Valley Original Ranch Dressing Mix
1 cup fresh breadcrumb (do NOT use seasoned dry breadcrumbs)
1/2 cup grated parmesan cheese
1/2 teaspoon fresh ground black pepper
1 teaspoon kosher salt
1/2 teaspoon mustard powder
1/8 teaspoon nutmeg
2 eggs, lightly beaten
1/3 cup sour cream
3 tablespoons vegetable oil (for frying)
2 tablespoons butter (melted if using crock pot)
4 tablespoons flour
1 1/2 cups Hidden Valley® Original Ranch® Dressing
2 cups whole milk
1/2 cup sour cream
1/2 teaspoon fresh ground black pepper
1 teaspoon salt
1/8 teaspoon nutmeg
1/3 cup finely chopped scallion, green tops only, plus more for garnish
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 350.
  • MEATBALLS:.
  • Combine all ingredients, except vegetable oil, in large bowl as listed. Mix well to ensure all ingredients are combined. (I use my hands, clean of course!) Using a small ice cream scoop or a tablespoon, scoop up mixture and form into balls. When all meatballs are all formed - Heat 3 tablespoons of vegetable oil in 12" skillet over medium hi heat. Add as many meatballs to skillet without crowding and fry till all sides are golden brown. (You may need to add more vegetable oil with each batch you fry) Set on rack placed over cookie sheet and continue to fry meatballs until all are done. Place meatballs in oven to finish cooking while you make the sauce.
  • GRAVY:.
  • In large measuring cup or bowl, whisk together Hidden Valley Ranch Dressing, milk and sour cream. Set aside.
  • In large saucepan over medium heat, melt butter. Whisk in flour, mixture will be crumbly and a little dry.
  • Gradually add dressing mixture to pan, whisking constantly. Mixture will begin to thicken almost immediately. Continue to whisk, adding in pepper, salt,nutmeg, scallions and parmesan cheese. Turn heat to lowest setting and cover.
  • Remove meatballs from oven and place on large platter or dish. Spoon gravy over top, sprinkle chopped scallions over top, and serve extra gravy on the side.
