RAMP PASTA WITH TOMATO AND BACON



Ramp Pasta with Tomato and Bacon image

Try this quick and easy pasta dish whenever you can get your hands on fresh ramps. Combined with tomatoes, capers, and bacon--this pasta is a winner.

3 medium tomatoes, chopped
1 cup ramp, wild leek
1 teaspoon capers
3 tablespoons extra-virgin olive oil, divided
salt and freshly ground black pepper to taste
1 pound penne pasta
4 slices bacon, finely chopped
1 pinch white sugar, or to taste

Steps:

  • Fill a large bowl with ice and cold water. Cut a small "x" into the bottom of each tomato.
  • Bring a large pot of lightly salted water to a boil. Add tomatoes to the boiling water. Cook for 30 seconds until skin starts to peel off. Remove with a slotted spoon and drain in a colander. Immediately immerse in the ice water for several minutes to stop the cooking process. Drain, peel, and chop.
  • Combine tomatoes, ramps, capers, and 2 tablespoons olive oil in a blender; blend until smooth. Season with salt and pepper.
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat remaining 1 tablespoon olive oil in a skillet. Add bacon and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Add tomato-ramp mixture and cook until hot, 1 to 2 minutes. Add 1 to 2 tablespoons of pasta water and mix to combine. Season with salt, pepper, and sugar.
  • Drain penne and mix with sauce.

In the springtime, I always look forward to making ramp potatoes. If you've never had a ramp, you are missing out! A member of the leek family, they have a taste like garlic, onion, and a little something special!

5 large potatoes, peeled and sliced
2 tablespoons bacon drippings
6 ramps, thinly sliced
5 slices cooked bacon, chopped
salt and ground black pepper to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until beginning to soften, about 10 minutes; drain.
  • Heat bacon drippings in a large skillet over medium-high heat; cook and stir potatoes in the hot drippings until golden brown, about 15 minutes. Stir ramps and bacon with the potatoes; season with salt and black pepper. Continue cooking until the ramps are soft, about 5 minutes.

2 lbs ramps, cleaned and trimmed
1/2 lb sliced bacon
salt, to taste
black pepper, to taste (freshly ground)

Steps:

  • Cut ramps bulbs from the leaves and reserve both.
  • Fry bacon in a large skillet over medium heat until crispy; drain on paper towels and set to the side.
  • Pour off all but two tablespoons of bacon grease from pan.
  • Add ramp bulbs and a half cup of water to same skillet and cook over medium heat, stirring frequently, until bulbs are soft, about 15 minutes.
  • Coarsely chop leaves, add to skillet.
  • and cook until wilted.
  • Crumble bacon, add to skillet and cook until ramps are soft and all liquid has been absorbed.
  • Season to taste with salt and pepper.
