RAMEN COLESLAW/CABBAGE SALAD



Ramen Coleslaw/Cabbage Salad image

I LOOOOVE this in the summer. One of my friend's moms gave this recipe to me about three years ago after I had it at his house. It's really great--especially if you just add the ramen RIGHT before serving it!

1/4 cup sesame seeds
1/3 cup sliced almonds
1 head cabbage, finely chopped (I've used bagged broccoli slaw you can find in some grocery stores in place of this ingredient)
6 green onions, sliced thin
2 (3 ounce) packages ramen noodles, original flavor
2/3 cup oil
2 tablespoons water
1/4 cup cider vinegar (I've used rice wine vinegar in place of this(just adjust sugar and salt to taste)
1 tablespoon sugar
salt and pepper

Steps:

  • Toast sesame seeds and almonds on a cookie sheet in oven until lightly toasted.
  • Watch carefully, they can burn quickly.
  • Mix cabbage and green onions in a large bowl.
  • Crush ramen noodles in the package.
  • Open and remove broth packets.
  • To make dressing, mix oil, water and vinegar in a jar with a tight lid.
  • Add sugar and 1 packet of broth.
  • Shake well.
  • Taste, and add more sugar, as well as salt and pepper.
  • Just before serving, add crushed noodles, almonds and sesame seeds to cabbage mixture.
  • Pour on dressing and toss well.
  • Serve immediately.

When I bring this to a party, I keep the oils, veggies, seeds, ramen, and sugar in separate bags until it's time to mix and serve. It tastes better to me when I don't mix the sugar with the oil right away.

½ cup peanut oil
½ cup olive oil
¼ cup red wine vinegar
½ teaspoon ground black pepper

  • Toss cabbage, ramen noodles and seasoning packets, red bell pepper, green onion, almonds, sunflower seeds, sesame seeds, sugar, peanut oil, olive oil, red wine vinegar, and black pepper together in a large resealable bag until evenly mixed.

Sweet, tangy, crunchy ramen noodle and cabbage salad is a great side dish for potlucks or a weeknight dinner any day of the week.

2 tablespoons butter
3 ounce package ramen noodles, seasoning packet removed
1/2 cup slivered almonds
3 tablespoons sesame seeds
1 1/2 lbs Napa cabbage, about 8-10 cups shredded
1 bunch green onions, sliced thin, about 1/2 cup
1/2 cup light flavored olive oil
1/4 cup plain white vinegar
1/2 cup white sugar
2 tablespoons low-sodium soy sauce

Steps:

  • To make the dressing: Combine the oil, vinegar, sugar, and soy sauce in a jar and shake until the sugar has dissolved.
  • Melt the butter in a large skillet over medium heat. While the butter is melting, crush the ramen noodles while still inside the package. Remove the seasoning packet and throw away (or set aside for later use). Add the noodles, almonds, and sesame seeds to the melted butter in the skillet.
  • Saute while stirring frequently, until the noodle mixture is golden brown. Remove to a plate and let cool.
  • Shred the cabbage and combine the cabbage and onions in a large mixing bowl. Add the noodle mixture. Pour the dressing over the salad and toss well to combine. Serve immediately.

1/2 Cup Roasted Shelled Sunflower Seeds
1/4 Cup Toasted Sesame Seeds
1-2 Tablespoons Avocado Oil
1 Cup Raw Slivered Almonds
1 (3oz) Package Ramen Noodles - broken into pieces (Maruchan - chicken flavor) - save seasoning for dressing
Dressing:
1/4 Cup Avocado Oil
1 Tablespoon Toasted Sesame Oil
2 teaspoons Soy Sauce
1 Tablespoon Rice Vinegar
Seasoning from Ramen Package
Small Pinch Sugar or Drizzle of Honey

Steps:

  • In large bowl combine cabbage, sunflower seeds and sesame seeds. Heat oil in pan over medium. Add ramen and almonds to pan. Toast while stirring for 5-10 minutes or until light golden brown. Transfer to cabbage. Mix dressing ingredients then pour over cabbage mixture. Toss until evenly coated. Salt to taste, if needed.

2 Tbsp sunflower seeds
1 package Ramen noodles, broken into pieces, seasoning packet reserved
1/2 cup slivered almonds, toasted
1 Tbsp soy sauce
1 Tbsp honey
3 Tbsp white vinegar
1/2 cup vegetable oil
1/4 tsp black pepper
1/8 tsp garlic powder
1 Ramen seasoning packet (use half)

Steps:

  • Combine cabbage, slivered almonds, sunflower seeds and crushed Ramen noodles in a large bowl. Stir to combine.
  • In a medium bowl or pint sized mason jar, combine dressing ingredients. Whisk well (or shake in a covered jar) until dressing comes together.
  • Refrigerate for at least an hour before serving.
