MISO-GLAZED SALMON COLD NOODLE SALAD



Miso-Glazed Salmon Cold Noodle Salad image

Number Of Ingredients 11

2 packages instant ramen noodles
2 tablespoons peanut butter
Juice of 1 lime
1/3 cup plus 2 tablespoons store-bought Asian sesame dressing
One 8-ounce bag shredded cabbage mix (red and green cabbage plus carrots)
1/4 cup red miso
2 tablespoons honey
Kosher salt
Two 6-ounce skinless salmon fillets
Toasted sesame seeds, for garnish
Thinly sliced scallion greens, for garnish

Steps:

  • Cook the ramen noodles (minus the seasoning packs) to very al dente according to the package instructions. Let cool.
  • Mix together the peanut butter, lime juice and 1/3 cup Asian dressing. Toss with the cabbage mix and cold noodles. Let sit for at least 30 minutes, tossing a couple times in between.
  • Position a rack in the middle of the oven and preheat to broil. Line a baking sheet with parchment paper.
  • Mix the miso, honey and remaining 2 tablespoons Asian dressing in a small bowl. Season with salt if necessary. Liberally brush both sides of the salmon with the miso glaze. Place on the prepared baking sheet and broil on the middle rack until the fish is browned, the flesh is opaque and the interior is 145 degrees F, 8 to 10 minutes.
  • Place the cooked salmon on top of the cold noodle salad. Garnish with a liberal sprinkling of toasted sesame seeds and scallion greens.

This Crunchy Ramen Noodle Salad with salmon is a unique version of the potluck classic salad with toasted almonds and a sweet Asian style dressing.

16 ounces salmon
1/4 cup slivered almonds
1 tablespoon sesame seeds
2 packages uncooked Ramen noodles (seasoning discarded)
1 package coleslaw mix
3 green onions (diced)
2 tablespoons fresh parsley
3 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
1 tablespoons granulated sugar
1 tablespoon honey
3/4 cups vegetable oil

Steps:

  • Preheat oven to 400 degrees. Arrange salmon in a large baking dish and season with a pinch of salt. bake for 16-18 minutes, or until cooked through. Transfer to a plate; remove skin and discard. Gently flake salmon apart and set aside.
  • Break uncooked Ramen noodles into small pieces (discard seasoning packets). Spread noodles, sesame seeds and almonds on a rimmed baking sheet and bake in the 400 degree oven for about 5 minutes or until golden. Set aside to cool while you prepare the rest of the salad.
  • Pour coleslaw mix into a large bowl, Stir in green onions and parsley
  • In a tightly sealed container, shake together oil, rice vinegar, soy sauce, sugar, honey and Worcestershire sauce, until well combined. Set aside until ready to serve.
  • When ready to serve, gently stir in salmon, ramen noodles, almonds and sesame seeds. Pour dressing over coleslaw mix and gently toss to coat completely.

2 (3 ounce) packages chicken-flavored ramen noodles, broken into pieces, seasoning packets reserved
½ cup raw sunflower seeds
½ cup slivered almonds
1 (16 ounce) package coleslaw mix
3 green onions, chopped
½ cup olive oil
3 tablespoons white vinegar
1 tablespoon white sugar
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread ramen noodles, sunflower seeds, and almonds onto a baking sheet.
  • Bake noodles, sunflower seeds, and almonds in the preheated oven until fragrant and toasted, 10 to 15 minutes. Cool to room temperature.
  • Combine coleslaw mix and green onions in a large bowl. Pour cooled noodle mixture over the top.
  • Whisk olive oil, reserved ramen seasoning packets, vinegar, sugar, and black pepper together in a bowl until dressing is smooth. Pour dressing over coleslaw and toss to coat.

1/2 cup sugar
1/2 cup canola oil
1/4 cup cider vinegar
1-1/2 teaspoons soy sauce
1/4 teaspoon salt
2 packages (3 ounces each) ramen noodles
2 tablespoons butter
1 bunch romaine, torn (7 cups)
1 bunch broccoli, cut into florets (4 cups)
6 green onions, chopped
1/2 cup sunflower kernels

Steps:

  • Whisk together first 5 ingredients. Refrigerate, covered, until serving., Discard seasoning packet from noodles or save for another use. Break noodles into small pieces. In a large skillet, heat butter over medium-high heat. Add noodles; saute until golden brown., Combine romaine, broccoli, onions, sunflower kernels and noodles. Just before serving, whisk dressing and pour over salad; toss to coat.

8 ounces spaghetti, broken in half
1 tablespoon grated gingerroot
4 teaspoons sesame oil
3 tablespoons reduced sodium soy sauce
1/4 cup seasoned rice wine vinegar
2 teaspoons sugar
1/4 teaspoon cayenne pepper (or to taste)
1 cup shredded carrot
1 cup cucumber, cut into long matchsticks
10 ounces grilled salmon, cut into small chunks
2 tablespoons chopped fresh coriander (optional)
1 tablespoon toasted sesame seeds

Steps:

  • Cook spaghetti in boiling water until cooked al dente. Drain.
  • In a small bowl, mix together ginger, sesame oil, soy sauce, vinegar, sugar and cayenne pepper.
  • In a large bowl, toss together spaghetti, carrots, cucumber, salmon and coriander.
  • Pour in dressing and toss to coat salad.
  • Garnish with sesame seeds.
