RAMEN COLESLAW/CABBAGE SALAD

I LOOOOVE this in the summer. One of my friend's moms gave this recipe to me about three years ago after I had it at his house. It's really great--especially if you just add the ramen RIGHT before serving it!

1/4 cup sesame seeds
1/3 cup sliced almonds
1 head cabbage, finely chopped (I've used bagged broccoli slaw you can find in some grocery stores in place of this ingredient)
6 green onions, sliced thin
2 (3 ounce) packages ramen noodles, original flavor
2/3 cup oil
2 tablespoons water
1/4 cup cider vinegar (I've used rice wine vinegar in place of this(just adjust sugar and salt to taste)
1 tablespoon sugar
salt and pepper

Steps:

  • Toast sesame seeds and almonds on a cookie sheet in oven until lightly toasted.
  • Watch carefully, they can burn quickly.
  • Mix cabbage and green onions in a large bowl.
  • Crush ramen noodles in the package.
  • Open and remove broth packets.
  • To make dressing, mix oil, water and vinegar in a jar with a tight lid.
  • Add sugar and 1 packet of broth.
  • Shake well.
  • Taste, and add more sugar, as well as salt and pepper.
  • Just before serving, add crushed noodles, almonds and sesame seeds to cabbage mixture.
  • Pour on dressing and toss well.
  • Serve immediately.

  • Pour dressing over salad mixture.

1/3 cup white vinegar

Steps:

  • Crush the ramen coarsely and place the in a large bowl. Add the coleslaw mix but do not stir. Sprinkle the top of the coleslaw with the almonds, sunflower seeds, and green onions. In a small bowl, whisk together the seasonings from the ramen noodles, sugar, oil, and vinegar until well mixed. Pour over the salad evenly. 1/4 cup vegetable oil
1/2 cup sugar
2 (3 ounce) packages chicken-flavored ramen noodles, noodles crushed
1 (1 lb) bag coleslaw mix

  • For the dressing, combine vinegar, vegetable oil, sugar and the two flavor packets from the ramen noodles, set aside.

To make it a complete meal, just add chicken. While this does not have to be cooked, I added 30 minutes under "cooking time" because it does have to chill for 30 minutes.

1/4-1/2 cup chopped green onion
1 cup slivered almonds
1 cup sunflower seeds
2 (3 ounce) packages chicken-flavored ramen noodles (uncooked & crumbled)

1/3-1/2 cup cider vinegar (or something dark)
1/2 cup sugar
1 teaspoon soy sauce

Steps:

  • Put the cole slaw in a large bowl.
  • Open the Ramen noodles.
  • Crumble the noodles and add to the cole slaw.
  • Save the seasoning packets for the dressing.
  • Add the onions, almonds, and sunflower seeds to the slaw mixture.
  • Toss.
