RALEY'S SOMETHING EXTRA TERIYAKI TOMATO RICE AND BEEF
This is a great little skillet meal for that need a meal quick night. I paired it with an asian salad with sesame dressing. Everyone loved it and the plates were cleaned. You can add a tablespoon or two of chili garlic sauce if you want it more spicy. Without it it fed my family who are picky eaters and a visiting relative. WW people it is 9 points. Steps:
- Cook rice according to package directions without butter or salt. While rice is cooking, brown beef in a large skillet, breaking it up with the back of a wooden spoon. Drain excess fat, then stir in teriyaki sauce, ketchup, ginger and hot cooked rice. Sprinkle with green onions.

- Place the first seven ingredients in a large saucepan, and bring to a boil.
- Stir in the rice.
- Cover and simmer for 20-25 minutes.

Steps:
- Rinse rice.
- Place in a pot with a tight fitting lid, along with 2 cups water, 2 bouillon cubes, and butter.
- Bring to a boil, reduce heat, cover, and simmer for 45 minutes. DO NOT REMOVE LID.
- Remove from heat and let sit covered for 10 minutes.
- Fluff with a fork.
- While rice is cooking, sauté onion, celery and carrots in butter and olive oil over medium heat until tender.
- Add garlic and mushrooms and cook just until mushrooms are tender.
- Add teriyaki and simmer until liquid is absorbed.
- Stir vegetables into rice and serve.
