GARLIC CAJUN RIBS
This is a tasty, treaty baby back ribs recipe, and it's real easy to prepare. Serve the remaining glaze with the ribs.

Steps:
- Preheat grill for medium heat.
- In a large pot, bring the water to a boil. Season boiling water with 2 tablespoons garlic, 4 tablespoons Cajun-style seasoning, and 4 tablespoons seasoned salt. Boil ribs in seasoned water for 15 to 20 minutes.
- In a mixing bowl, mix together barbeque sauce, 2 tablespoons garlic, 2 tablespoons Cajun-style seasoning, 2 tablespoons seasoned salt, and Worcestershire sauce.
- Place ribs in large baking dishes, and apply a generous amount of the barbeque sauce mixture to the ribs. Set aside for 10 to 15 minutes to marinate.
- Grill the ribs for 7 to 12 minutes per side, until nicely browned.

- Heat grill to medium heat.
- Place ribs in single layer on large sheet heavy-duty foil. Mix next 6 ingredients; rub evenly onto both sides of ribs. Bring up foil sides; double fold top and one end to seal packet. Add water to packet through open end. Double fold remaining end, leaving room for heat circulation inside.
- Grill 45 min. to 1 hour or until ribs are done. Remove ribs from foil; discard foil.
- Return ribs to grill; brush with half the barbecue sauce. Grill 15 min., turning and brushing occasionally with remaining barbecue sauce.

OVEN BAKED CAJUN STICKY RIBS
These full-flavored ribs are marinated with a Southern-inspired rub, then baked in the oven and slathered with a basting sauce until they are juicy and tender.

- In a small bowl mix together the paprika, salt, thyme, garlic powder, onion powder, black pepper and cayenne pepper. Remove the membranes from the bone side of all of the racks of ribs using a sharp knife and peeling the membrane off. Rub the seasoning all over the ribs. Place the ribs in a container or a bowl, loosely covered, and refrigerate for 4 to 24 hours.
- Before you're ready to cook the ribs, make the basting sauce. In a medium saucepan combine the garlic, scallions, ketchup, molasses, butter, vinegar, mustard, or hot sauce and stir over medium heat until the butter is melted. Let simmer for another 15 minutes or so. You can make this ahead of time and reheat.
- Preheat the oven to 350°F. Line two rimmed baking sheets with aluminum foil. Place the ribs bone side down in a roasting pan and pour 1 cup of water into each pan. Roast until the meat starts to pull away from the bones, about 1 1/2 hours.
- Remove the pans from the oven and drain off any remaining water. Baste the ribs generously with the sauce. Baste them on all sides with the sauce and bake for another 1/2 hour in the oven, bone side down. You can put them under the broiler for the last 2 minutes or so to give them a nicely caramelized top (watch them carefully so they don't burn!).
- Let the rib racks sit for 10 minutes before cutting them into individual ribs and serving.

- Salt and pepper the beef ribs. Then roll and coat the beef ribs in flour. Place the oil in a heavy roaster and brown the ribs. Add the onions, water, vinegar and Worcestershire sauce. As an option add 1 chopped bell pepper, 2 stalks chopped celery, red pepper and garlic. There should be enough water to cover the ribs. As the Cajuns would say at this point, “you let the meat cook down“; actually it is the water that will evaporate and the meat cooks in the process.
- Simmer, covered just at boiling for 2 to 3 hours or until ribs are tender. Watch it and stir and skim off the fat as needed. You may need to add a little water towards the end to prevent sticking or burning. Cover the pot at the beginning of the cooking cycle and then in the last half hour of cooking, remove the lid and get the ribs brown again. Add water as needed. Great Gravy!
- Method 2 - Baking the ribs - Preheat oven 350 degrees - In a Magnalite roaster brown ribs add onions, water, vinegar and Worcestershire sauce. Cover and bake until tender approximately 1 1/2 to 2 hours until fork tender adding water if needed.
- As another option, you could add 1 small can tomato paste, 1/2 cup ketchup, 1/2 cup light brown sugar, 1/2 cup white vinegar, and 2 tablespoons yellow mustard.

- Preheat oven to 250° F (160° C). With your fingers remove the thin fibrous membrane along the bony side of the ribs if your butcher did not already do so. Rub the ribs all over with cajun seasoning. Coat evenly, tightly wrap the ribs with foil (shiny side out) and place in a large roasting pan or baking sheet.
- Add the butter and the onions to a medium saucepan on medium heat. Saute onions until just about translucent. If the onions start to brown at any point lower the heat. Add the garlic, BBQ sauce, apple cider vinegar, honey, and black pepper. Whisk to combine and taste and season with salt if needed. Simmer for 5 minutes and then remove from heat. If making ahead of time, cool and then store in the refrigerator until you are ready to use.
- Baking Method: Preheat (or raise) the oven heat to 350° F. Baste the ribs on both sides with BBQ Sauce and place it on a baking sheet bone-side down with the foil open. Bake for 10 minutes and then baste the meaty side of the ribs with more BBQ sauce. Repeat every 10 minutes. After 50 minutes of total cooking time remove from the oven and serve.
- When finished cooking, slice the rib racks into 1 or 2 rib portions and serve with a side of warmed BBQ sauce. Enjoy!

- Remove sinew (silver skin) from back of ribs. Place rack of ribs, meat side up, onto a large sheet of heavy duty foil (2-3 times larger than the size of the ribs).

- Mix the dry rub ingredients in small bowl, and the barbecue sauce ingredients in a small bowl, set aside.
- Put the ribs on a large cutting board, flip them over so the curved side is up.
