MOM'S SOFT RAISIN COOKIES

With four sons in service during World War II, my mother sent these favorite cookies as a taste from home to "her boys" in different parts of the world. These days, my 11 grandchildren are enjoying them as we did, along with my stories of long ago.- Pearl Cochenour, Williamsport, Ohio

Number Of Ingredients 13

1 cup water
2 cups raisins
1 cup shortening
1-3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts

Steps:

  • Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 12-14 minutes or until golden brown. Remove to wire racks to cool.

My newest love is vanilla yogurt covered raisins. This recipe was on the back of the bag I just bought.

1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, soft
1/3 cup brown sugar, packed
1/3 cup sugar
1 teaspoon vanilla
1 large egg
1 (8 ounce) package maria's yogurt-covered raisins (or Sun-maid)
1 cup pecans, chopped (optional)

Steps:

  • Heat oven to 350°F
  • Combine flour, baking soda and salt in small bowl.
  • Beat butter, brown sugar, sugar and vanilla in large bowl till creamy.
  • Add egg and beat well.
  • Gradually beat in flour mixture.
  • Stir in raisins and nuts.
  • Drop by tbsp on ungreased baking sheet.
  • Bake for 9-11 minutes till golden brown.
  • Cool on sheet 2 minutes.
  • Remove to wire rack.
  • Cool completely.
  • To make pan cookies: Spread dough in greased 9" square pan. Bake 350F 25-30 minutes.

RAISIN-SUNFLOWER SEED-VANILLA-COOKIES

This recipe makes for crunchy little morsels with a distinct vanilla taste. Originally the recipe called for hazelnuts, but I cant have those, so I changed it to roasted, caramelized sunflower seeds. Feel free to use nuts or seeds of your choice, though.

50 g raisins
225 g butter, softened
50 g sugar
1 egg, beaten
1 teaspoon ground vanilla (or 10 drops vanilla extract)
225 g flour
1 pinch salt
50 g oats
50 g roasted caramelized sunflower seeds or 50 g nuts, of your choice

Steps:

  • Preheat the oven to 190°C/375°F.
  • Place raisins in a bowl and pour hot water over them. Put aside.
  • Cream butter and sugar in a big bowl. Add egg and vanilla.
  • Mix in flour, salt, sunflower seeds/nuts and oats. Mix well. Drain raisins and fold into mixture.
  • Using your hands, take off portions of dough roughly the size of a ping-pong ball and roll into balls.
  • Place on a paper-lined baking sheet with a little space in between and bake for 12-15 minutes or until slightly browned.

1 cup packed brown sugar
1 cup sugar
1 cup butter, softened
3 large eggs
2 tablespoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
3 tablespoons buttermilk
FILLING:
1 tablespoon cornstarch
3 tablespoons all-purpose flour
1 cup packed brown sugar
2 cups boiling water
1-1/2 cup seedless raisins

Steps:

  • In a large bowl, cream sugars and butter. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture alternately with buttermilk. Cover and refrigerate until easy to handle. , For filling, in a saucepan, combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir and cook for 3 minutes or until thickened. Cool. , On a floured surface, roll out dough into 1/8-in. thickness. Cut with floured 3-in.-round cookie cutters. Spoon 2 teaspoons filling on top of half the circles and top each with another circle. Pinch edges together and cut slit in top. , Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-13 minutes or until lightly browned. Remove to wire racks to cool.

¾ cup brown sugar
¾ cup white sugar
½ cup egg substitute
1 teaspoon vanilla extract
1 teaspoon water
1 ½ cups all-purpose flour

2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
2 ½ cups rolled oats
¼ cup oat bran
¼ cup wheat germ
¾ cup raisins
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • In a large bowl, cream together the margarine, oil, brown sugar and white sugar until smooth. Beat in the egg substitute, vanilla and water. Combine the flour, baking soda, cinnamon and nutmeg; stir into the sugar mixture. Stir in the oats, oat bran, wheat germ, raisins and walnuts. Drop by teaspoonfuls onto the prepared cookie sheets.

I was using a recipe a friend had given me for chocolate chip cookies, but having a brother who is lactose intolerant, and having family members who have been told by doctors not to eat chocolate, I changed the recipe just enough to make it my own. It was a real crowd pleaser, too.

2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs (To lower cholesterol the 2 eggs could be replaced with 3 egg whites)
1 teaspoon vanilla
1 cup raisins

Steps:

  • In a mixing bowl, mix flour, salt, and baking soda.
  • Put shortening into medium sized bowl.
  • Using electric beater, beat in brown and white sugars.
  • Beat in eggs and vanilla.
  • Sift and beat in flour mixture.
  • Beat for 2-3 minutes or until dough is light and fluffy.
  • Stir in raisins.
  • Spoon onto ungreased baking pan, about two inches apart.
