Steps:
- Pour 1/2 a cup boiling water of the raisins, add the rind of 1 orange. Let cool.
- Mix together butter and sugar; cream until fluffy. Add egg, juice, and dry ingredients and blend.
- Stir in cooled raisin mixture. Pour into prepared bread pan and bake 1 hour at 350.

- In a bowl, combine 2 cups flour, sugar, orange zest, yeast, salt and ginger. In a saucepan, heat milk, butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Add eggs; beat on low speed for 30 seconds. Beat on high for 3 minutes. Stir in raisins. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours., Punch dough down. Turn onto a floured surface; knead for 1 minute. Cover and let rest 15 minutes. Divide in half. Roll each portion into a 9x7-in. oval; fold in half lengthwise. Pinch edges to seal. Place in two greased 8x4-in. loaf pans. With a sharp knife, make three 1/4-in.-deep diagonal slashes across top of each loaf. Cover and let rise until doubled, about 45 minutes., Bake at 375° for 45-50 minutes or until golden brown. Cover loosely with foil after 20 minutes to prevent over browning. Remove from pans to wire racks to cool. For glaze, combine the sugar, orange juice and butter until smooth. Stir in walnuts. Spread over loaves.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- In large bowl measure flour, sugar, baking powder, soda, salt, cinnamon, and raisins. Stir thoroughly. Make a well in center.
- In small bowl beat egg until frothy. Mix in melted butter and milk. Pour into well. Stir just enough to moisten. Scrape into greased 9x5x3 inch loaf pan.
- Bake in 350 degree F (175 degree C) oven for 1 hour. Serve plain or toasted with butter.

CRANBERRY RAISIN BREAD
Before making cranberry sauce for my turkey, I always remove 1 1/2 cups from the bag of cranberries so I can make this loaf. You can also substitute cranberries for the raisins for an all cranberry loaf. Keep an eye on the oven after the first hour of baking. Enjoy!!

- Sift flour, sugar, baking powder, salt& baking soda into large bowl.
- Cut in butter until mixture is crumbly.
- Add egg, orange peel& juice all at once.
- Stir just until mixture is evenly moist.
- Fold in raisins& cranberries.
- Spoon into a greased 9 x 5 x 3 inch loaf pan.
- Bake at 350F for 1 hour& 10 minutes.
- Cool on a wire rack.

- Grease an 8x4-in. loaf pan; sprinkle with cornmeal and set aside. , In a large bowl, combine 1-1/2 cups flour, yeast, sugar, salt and baking powder. Add orange juice; beat on low speed for 30 seconds. Gradually add remaining flour. Stir in raisins (batter will be stiff and sticky). Do not knead., Spoon into prepared pan; sprinkle with additional cornmeal. Cover and let rise in a warm place until doubled, about 40 minutes. , Bake at 375° for 30-35 minutes or until golden brown. - Day 1 (around midday), feed the levain. Before refreshing your mother starter, set aside 20-30 grams of the unfed starter and to it add equal amounts flour and water to end up with 80 grams of levain required in this recipe. For example, if you use 20 grams of unfed starter, add 30 grams each of flour and water to get 80 grams levain. Set aside until at peak rise (about 4 hours; longer on cold days. In winter I store the levain inside the oven, turned off with the light on.)

- In large bowl (You need to make sure the bowl is at least 2 times the size as this will easily double in volume) add the flour, yeast, sugar, cinnamon, orange zest, cranberries, dried raisins, almonds, fiori di scilia, and warm water. Using a wooden spoon, mix until a shaggy dough forms. Add in the salt and mix again.
- Mix it until it’s combined and forms a ‘shaggy’ dough. Just make sure that all the flour is incorporated. It will not be a smooth dough – that’s how it’s supposed to be.
- Cover with plastic wrap and set in a warm place overnight for at least 12 hours but no more than 24.
