Raisin Crunch Cookie Mix in a Jar image

A chewy coconut cookie mix in a jar. These make great gifts for just about everyone.

½ cup white sugar
½ cup raisins
1 ¼ cups flaked coconut
1 cup cornflakes cereal, crumbled
¾ cup packed brown sugar
½ cup quick-cooking oats
1 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • Layer the ingredients into a 1 quart canning jar in the order they are listed. Press each layer firmly in place before adding next ingredients. it will be a tight fit. Attach a label with the following instructions:
  • Preheat oven to 350 degrees F (175 degrees C). Empty the contents of the jar into a large bowl and use your hands to blend thoroughly.
  • Stir in 1/2 cup butter, 1 egg and 1 teaspoon of vanilla. Mix until completely blended. You may need to use your hands. Roll dough into walnut sized balls and place them 2 inches apart onto greased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

From Food & Family Spring 2007. I made these without the coconut by increasing both the oatmeal and cereal amounts. It changes the recipe, but it still made for a really good cookie that was crisp around the edges with a soft and chewy center.

Number Of Ingredients 12

1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup old fashioned oats or 1/2 cup quick-cooking oats
1/2 cup butter
3/4 cup firmly packed brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 cup Raisin Bran cereal
1 1/4 cups flaked coconut
1/2 cup raisins

Steps:

  • Preheat oven to 350ºF.
  • Mix flour, baking powder, baking soda and oats; set aside.
  • Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy.
  • Add egg and vanilla; mix well.
  • Gradually add flour mixture, beating until well blended after each addition.
  • Add cereal, coconut and raisins; stir until well blended.
  • Drop heaping teaspoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
  • Bake 14 to 16 minutes or until lighty browned.
  • Cool on baking sheets 3 to 4 minutes; remove to wire racks.
  • Cool completely.
  • Store in tightly covered container at room temperature.

I made these "healthier" cookies a lot when my kids were small. I am so glad I found it again in my recipe collection. It makes 16 LARGE cookies. This is an "original" Kellogg's recipe. I hope you enjoy it!.

2 cups Raisin Bran cereal (crushed to 1 1/2 cups)
1 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking soda
3/4 cup margarine, softened
2/3 cup granulated sugar
1/2 cup brown sugar, packed firm
2 eggs

Steps:

  • Preheat oven to 325*. Stir cereal, flours and baking soda together and set aside.
  • In a large bowl, beat margarine and both sugars together until light and fluffy.
  • Add eggs and beat well.
  • Stir in the dry ingredients (cereal-flour mixture), mixing thoroughly.
  • Drop by level 1/4 cup measure onto ungreased cookie sheet.
  • Bake at 325* for 12-14 minutes, until lightly brown.
  • Cool and wrap individaully (for on-the-go eating!).

1 cup packed brown sugar
1/2 cup sugar
2 large eggs, lightly beaten
2 tablespoons honey
2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups Raisin Bran cereal
3/4 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a bowl, cream shortening and sugars. Add eggs, honey and vanilla; mix well. Combine flour, baking soda and salt; add to creamed mixture. Stir in cereal. Fold in raisins and walnuts. Drop by teaspoonfuls onto greased baking sheets. Bake at 350° for 12-14 minutes or until done.
